This is absolutely my favorite and easiest appetizer for entertaining. It is simply delicious with its combination of balsamic vineger, pesto and Parmesan cheese. Use it to marinate cubes of cheese and mushrooms for another simple appetizer.-Alice Schucard, Carlsbad, California

1/2 cup olive oil
1/4 cup balsamic vinegar
1/4 cup prepared pesto
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup grated Parmesan cheese
1 French bread baguette (1 pound), thinly sliced

Steps:

  • In a small bowl, whisk the oil, vinegar, pesto, salt and pepper. Pour into a shallow serving bowl; sprinkle with Parmesan cheese. Serve with bread.

1 tablespoon dried basil
1 tablespoon dried parsley
1 tablespoon minced garlic
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon ground black pepper
½ teaspoon dried crushed rosemary
½ teaspoon salt
½ teaspoon crushed red pepper, or to taste
½ teaspoon lemon juice
2 tablespoons grated Parmesan cheese

Steps:

  • Stir together the olive oil, basil, parsley, garlic, thyme, oregano, black pepper, rosemary, salt, red pepper, and lemon juice in a bowl. Sprinkle the Parmesan cheese over the surface of the oil mixture.

1 tube (16.3 ounces) large refrigerated buttermilk biscuits
1/4 cup olive oil
2 tablespoons prepared pesto
1/4 cup sun-dried tomatoes (not packed in oil)
1/4 cup roasted sweet red peppers, drained and diced
1/4 cup sliced ripe olives
1 cup shredded mozzarella and provolone cheese blend
Additional prepared pesto, optional

Steps:

  • Preheat oven to 350°. Cut each biscuit into 4 pieces. Combine olive oil and pesto. Dip biscuit pieces into pesto mixture until coated; place in an 8-inch round baking pan. Top with sun-dried tomatoes, roasted red peppers and ripe olives., Bake until golden brown, about 25 minutes. Sprinkle with cheese; return to oven, and bake until melted, about 5 minutes longer. Cut into wedges or pull apart; serve warm, with additional pesto if desired.

5 cloves garlic
2 tablespoons balsamic vinegar
2 tablespoons Parmesan cheese
1 tablespoon crushed dried oregano

Steps:

  • Pour the olive oil onto a salad plate. Use a garlic press to press the garlic cloves onto five different spots on the plate. Drizzle the balsamic vinegar over the oil and garlic. Sprinkle with Parmesan cheese and oregano. Season with black pepper.
