CHICKEN FRIED PHEASANT
Family favorite around bird hunting season. Chicken fried pheasant is so simple and good, and unless you tell them, they don't have a clue it's wild game. Uses few ingredients, prep and cooking time are minimal. The first problem is getting the bird in the first place, if you're a hunter! The second problem is there are NEVER any leftovers, no matter how much you cook. Makes wonderful cold sandwiches IF there is anything leftover!

Steps:
- In a shallow bowl, mix the milk and vinegar. Dip the pheasant slices in the milk and vinegar mixture, then press both side in the cracker crumbs to coat.
- Heat the oil in a skillet over medium-high heat. Cook the pheasant in the hot oil about 5 minutes on each side, or until golden brown. Drain on paper towels.

FRIED PHEASANT
When a co-worker plopped a cooler full of Pheasant & Quail in my lap I was at a loss as to how to prepare them. He said to just fry them up! I searched here for a fried pheasant recipe but came up empty handed. I can't wait to try some of the other recipes I saw here ( because my freezer is now not only full of pheasant and quail but goose too!) but for now I will just write this one up and it it to the rest! Prep Time includes Marinade!

Steps:
- Cut Pheasant Meat from Carcass (I just used the Breast and Thigh Meat Tossing all those little feet far away).
- Rinse Throughly and place in Bowl.
- Salt, Pepper and Season Pheasant turning the meat over to make sure all gets covered.
- Cover bowl and place in fridge for at least 4 hours.
- In Large Heavy Skillet (I used Grandma's Cast Iron) put oil and heat on high until ready to fry.
- Retrieve Pheasant from Fridge.
- In a shallow bowl scramble eggs.
- In another shallow bowl (or plate) put flour in an even layer.
- Dip Pheasant pieces in egg first then coat with flour.
- Place in hot oil and brown on either side (lower heat to medium here so as not to burn the oil).
- The pheasant cooks REALLY fast and is SO tender and moist.
- Carrots and a green salad was an excellent addition to this meal!
HOW TO MAKE JUICY AIR FRYER CHICKEN BREASTS
Steps:
- Pound the thicker end of the chicken to make both sides leveled out so they cook evenly.
- Fill a large bowl with 6 cups of lukewarm water and add 1/4 cup Diamond Crystal kosher salt, stir to dissolve.
- Add the chicken breasts to the water and let them sit, refrigerated 1 to 1 1/2 hours to brine. Remove from water, pat dry with paper towels and discard the water.
- In a small bowl combine 3/4 teaspoon salt, with the remaining spices. Spritz the chicken with oil and rub all over, then rub the spice mix over the chicken.
- Add the chicken to the air fryer basket and air fry in batches 380F 5 minutes on each side, 10 minutes total until browned on the outside and cooked through on the inside. See notes below for larger breasts.

- Stir the salt in the water to dissolve. Remove the skins from the pheasant breasts and put in a container in the fridge. Submerge the pheasant breasts in the brine and put in a container in the fridge overnight. Note that you can skip the brine, but it leaves you with less wiggle room in cooking the pheasant.
- The next day, briefly rinse off the pheasant and pay it dry. Salt the skins. Heat a comal or frying pan over medium-high heat and set the skins down on it, fat side first. It's helpful to put a weight over skins so they don't curl up; I use a bacon press. Fry, turning occasionally, until nice and crispy, about 8 minutes. Set aside.
- In the same pan you cooked the skin in, add the pheasant fat or lard or whatever; there should be a little fat in the pan already that came off the skins. When this is hot, sear the pheasant breast hard over high heat for about 4 minutes. Again, it's helpful to put a weight on it while cooking. Flip and repeat, this time keeping an eye on how done it is. I find this second side only needs about 2 to 3 minutes.
