RACHAEL'S CHICKEN PHILLY CHEESESTEAKS
An easy Italian spice blend and giardiniera toppings add a flavorful twist to Rach's version of a Philly Cheesesteak.

Steps:
- Roast peppers over an open flame or under a preheated broiler to blacken skins
- Place in a bowl and cover to cool, then peel and seed
- Thinly slice peppers lengthwise
- Dress with some EVOO, salt, pepper and fresh thyme
- To a skillet over medium-low to medium heat, add olive oil, 2 turns of the pan
- Add onions, season with salt and pepper, and cook to soften, about 15 minutes
- Add garlic, cook 10 minutes more, then add ½ cup water and cook until absorbed
- Place chicken in freezer for 10 minutes
- Using a chef's knife, thinly slice the chicken on an angle going against the grain
- Pat the meat dry
- Season with salt and pepper
- Heat a large cast-iron griddle or skillet over high heat
- Combine the dried oregano and thyme, the granulated garlic and onion, and chili flakes
- Add a fat drizzle of olive oil to the hot griddle or skillet
- Add the chicken in batches in a single layer, season with the spice blend, and cook, tossing, until crisp at the edges and cooked through
- Line the rolls with cheese and fill with the chicken
- Top with onions, peppers and giardiniera or hot peppers, and serve
BEST CHICKEN PANINI
I have a local eatery who makes an amazing flatbread sandwich. This panini is based on their chicken pesto sandwich. I recommend pane turano, or you may use a sturdy sourdough.

- Heat a panini grill on the highest setting. Brush 2 pieces of bread with butter. Assemble panini with chicken, bacon, and mozzarella. Lower panini press. Cook until bread is golden and cheese is melted, about 5 minutes.
- Carefully separate bread and add in some sliced avocado, tomato, and pesto. Repeat above steps for additional panini sandwiches.
- Reassemble sandwiches and cut in half. Serve immediately.

- In a large skillet, saute chicken in oil until no longer pink; sprinkle with salt and pepper. Remove and set aside. In the same skillet, saute onion and sweet peppers until crisp-tender., Return chicken to the pan. Reduce heat to medium. Add cheese. Cook and stir for 1-2 minutes or until cheese is melted. CHEESESTEAK PANINI

- Heat 2 tablespoons of butter in a large skillet over medium heat. Add the peppers and onion, season with the salt and cook, stirring occasionally, until soft and golden, 8 to 10 minutes.
- Throw the roast beef into the same skillet, breaking it up a little as you go. Add a few dashes of Worcestershire and warm for about a minute or so. Remove from the heat.
- To build: Heat a panini maker (or set a grill pan or skillet over medium-low heat).
- Spread half of the mustard onto a slice of bread and top with 2 slices of provolone. Add half of the beef and veggie mix. Top with half of the Homemade Cheese Sauce and another slice of bread. Spread the top side of the bread with 1 tablespoon of butter. Repeat and build the second sandwich.
- Invert the sandwiches butter-side down on the hot panini maker (or grill pan or skillet). Spread another tablespoon of butter on each of the tops.
- Close the panini maker and grill until the bread is crusty and golden and the cheese is melted, 4 to 5 minutes. (If using a grill pan or skillet, carefully flip the sandwiches halfway through.) Slice in half and enjoy!
- Place a double boiler over medium heat. Add the cubed cheese and milk and heat, stirring, until the cheese is melted and the mixture is combined, about 5 minutes. Stir in the mustard, vinegar and salt. Grate the garlic into the mixture using a rasp grater; stir to combine. Cook until the flavors meld, an additional 3 to 5 minutes.
CHICKEN AND PHILLY
A simple chicken breast stuffed with Philadelphia, parcely, wrapped in pancetta.

- Mix the Philadelphia and parsley in to a small bowl( and chopped garlic), and preheat oven to gas mark 5 or 160 c or 375 f.
- Slice the chicken in the side so you have pockets.
- Put about a table spoon of the Philadelphia mix into each pocket.
- Wrap each breast in about 2-3 pieces on pancetta or just enough to cover
- Then fry the breasts to seal the pancetta.
- Once they have all been sealed, wrap them loosely in to foil and put in a preheated oven for 30 mins.
- If at 30 minutes largest breast is not white all the way through put back for 5-10 mins. Once they are white and cooked, remove the juice and put them back in to brown off. How long for is your choice!
