PHILLY-STYLE GARLICKY GREENS AND EGG SANDWICH
Eggs fried in hot sauce and blanched-then-sauteed broccoli rabe combine in a hero that's the perfect balance of spicy, garlicky, rich, and green.

- SET UP: Preheat the broiler to high with a rack set 4 inches from the heat source. Bring a large pot of salted water to a boil.
- COOK THE GREENS: Add the broccoli rabe to the water and cook until crisp tender, 3 to 4 minutes, then drain. Heat the oil in a large skillet over medium-high heat until hot. Add the garlic and cook, stirring, until golden, 1 to 2 minutes. Stir in the broccoli rabe, season with salt and pepper, remove from the heat, and keep warm.
- TOAST THE ROLLS: Melt 4 tablespoons of the butter in a large skillet. Brush the cut sides of the rolls with some of the melted butter. Broil the rolls, cut-side up, until brown, about 3 minutes. Divide the provolone among the rolls and broil until the cheese melts, about 1 minute. Fill the rolls with broccoli rabe.
- FRY THE EGGS AND ASSEMBLE: Heat one more tablespoon butter in the same skillet over medium-high heat until hot. Stir in the Sriracha and simmer for 20 seconds. Working in batches and adding more butter if needed, crack the eggs into the skillet and fry until the whites just begin to set, about 1 minute. Cover the skillet and cook over low heat until the egg whites are set but the yolks are still runny, 1 to 2 minutes. Put 1 to 2 eggs on each sandwich, sprinkle with Parmesan, and serve.
CHICAGO-STYLE BREAKFAST BISCUIT EGG SANDWICH
As a midwestern gal, the Chicago-style hot dog is a very important dish to me. When I learned fellow Windy City native, star of Saturday Night Live and biscuit-lover Chris Redd was coming on the show, I made it my mission to transform this iconic dish into a breakfast sandwich. The biscuits are delicate and buttery with a hint of heat and the soft-scrambled eggs are creamy with an earthy note from the celery salt. This dish does the job of channeling a Chicago hot dog into breakfast. It is a mashup worth getting messy for!

- For the biscuits: Preheat the oven to 425 degrees F.
- In a large bowl, combine the flour, butter, poppy seeds, salt and baking powder. Toss together to coat the butter in flour. Using clean hands, break up the butter into pea-size pieces.
- Add the sport peppers and onion. Slowly add the buttermilk and mix together with a wooden spoon or spatula until a shaggy dough forms.
- Turn out the dough onto a floured surface and gently knead just until it comes together. Pat down the dough until it is about 1 inch thick, fold in half, pat down the dough again and fold in half the other way. Cut out with a floured biscuit cutter (3- to 4-inch) or floured rim of a water glass (you should have 4 large biscuits) and place on a cast-iron skillet or parchment-lined baking sheet. Cook until golden brown on the tops, 20 to 22 minutes.
- For the special sauce: In a medium bowl, combine the relish and mustard. Set aside.
- For the sandwiches: In a medium skillet over high heat, add the hot dogs, cut-sides down, and cook until crispy and golden, 2 to 3 minutes per side. Set aside.
- In a large bowl, crack and scramble the eggs. Add 2 tablespoons water and whisk together. In a large nonstick skillet over medium heat, add the eggs. Using a rubber spatula or wooden spoon, move the eggs back and forth until you reach a desired scramble. Sprinkle with the celery salt. Set aside.
- Slice open the biscuits, top with the eggs, hot dogs, special sauce, tomatoes and dill pickle chips.
FRIED EGG SANDWICH

- Heat the drippings in a wide flat-bottomed skillet until they spit and smoke. Break in the eggs. They will immediately bubble around the edges, making then crisp. Break their yolks with a fork and swirl them around, so that they are scattered fairly evenly through the whites. This will cook very quickly and the eggs should be tough. Either push them to one side of the pan or remove them, and fry bread in the drippings for each sandwich, two slices an egg. Fry on one side only. Sandwich egg between bread slices. Wrap them in waxed paper.
STRETCH PHILLY SANDWICH

- Preheat the oven to 375 degrees.
- Toss the onions, peppers and mushrooms in a bowl with 1 tablespoon of the oil and some salt and pepper.
- Heat a large cast-iron griddle over medium heat. Spread the butter onto the griddle and place the rolls cut side down. Lightly toast the buns on the griddle, about 2 minutes. Put the buns on a baking sheet until ready to fill.
- Add 1 to 2 tablespoons more oil to the griddle. Using long metal tongs, spread the onions, peppers and mushrooms across the hot griddle. Cook the vegetables until they start to blister and soften, about 4 minutes. Push the vegetables to one side of the griddle and put the steak down in a single layer on the other side. Sprinkle the steak with a large pinch of salt and pepper. Add a little more oil if needed. Cook the steak until it is no longer pink, about 4 minutes. Then put the pastrami on top. Cook all together until the steak edges are crispy and caramelized and the pastrami is warmed through.
- Turn off the heat and pile the cooked vegetables onto the bottom of the rolls. Separate the meat into two piles and place on top of the vegetables. Top each sandwich with 3 slices of cheese per bun. Put the baking sheet in the oven until the cheese is melted and bubbling, about 2 minutes. Serve immediately.
