Pickled Garlic image

These pickled garlic cloves take a long time, but they're easy to make and are a real treat.

Number Of Ingredients 6

½ pound garlic, peeled
1 large red bell pepper, chopped
2 cups distilled white vinegar
.66 cup white sugar
½ teaspoon ground dry mustard
½ teaspoon celery seed

Steps:

  • Place garlic cloves in a medium bowl, first cutting the large cloves in half. Mix in the red bell pepper.
  • In a large saucepan over medium high heat, place the distilled white vinegar and white sugar. Wrap ground dry mustard and celery seed in a spice bag, and place in the liquid mixture. Bring to a boil. Boil 5 minutes. Stir in garlic and pepper. Continue boiling 5 minutes. Remove from heat and discard spice bag.
  • Place garlic and peppers in sterile containers to within 1 inch of the top. Fill with remaining liquid to within 1/4 inch from the top. Seal and store in the refrigerator approximately three weeks before serving.

8 medium red potatoes, cubed
3 tablespoons butter, melted
1 tablespoon chopped fresh dill
2 teaspoons minced garlic
¼ teaspoon salt

Steps:

  • Place the potatoes in a steamer basket, and set in a pan over an inch of boiling water. Cover, and steam for about 10 minutes, until potatoes are tender but not mushy.
  • In a small bowl, stir together the butter, dill, garlic, and salt. Transfer the potatoes to a serving bowl, and pour the seasoned butter over them. Toss gently until they are well-coated.

2 quarts water
3 cups peeled garlic cloves
12 coriander seeds
6 whole peppercorns
3 dried hot chiles, split
3 whole allspice
1 bay leaf, torn into three pieces
1-1/2 cups white wine vinegar or distilled white vinegar
1 tablespoon sugar
1-1/2 teaspoons canning salt

Steps:

  • In a large saucepan, bring water to a boil. Add garlic and boil 1 minute. , Meanwhile, divide coriander, peppercorns, chiles, allspice and bay leaf among three hot half-pint jars. Drain garlic and pack into jars to within 1/2 in. of the top., In a small saucepan, combine vinegar, sugar and salt. Bring to a boil, stirring constantly. Carefully ladle hot liquid over garlic, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.

  • Fill sterile containers with garlic, chopped fresh dill and cayenne pepper to within an inch of the top.
  • Mix the distilled white vinegar and salt in a medium saucepan. Bring to a boil.
  • Pour the hot distilled white vinegar and salt mixture into the containers with the garlic mixture. Fill to approximately 1/4 inch from the top. Seal and store in the refrigerator.

15 fresh dill heads
4 pounds small cucumbers (3 to 4 inches long)

4-1/2 cups white vinegar

  • Place five garlic clove halves and five dill heads in each of three hot 1-quart jars. This outstanding condiment was inspired by my son, who at 4 years old asked for a pickle that didn't taste pickly. As he was a charter member of my "Guinea Pig Club", I figured owe him at least that much. After several attempts resulting in truly frightening facial expressions, I eventually got a huge smile. So, for all you 'non-pickle' pickle lovers out there, here's one your going to love.

2 lbs fresh green beans
1 cup white vinegar
3 cups water
2 tablespoons pickling salt
4 sprigs fresh dill
2 teaspoons dried dill
6 garlic cloves
1 dash cayenne pepper (optional)

Steps:

  • Wash and trim beans to fit vertically in pickle jar.
  • In a medium pot add water, salt and beans and bring to a boil. Boil for 3 minutes.
  • Remove beans, and immerse beans into ice water bath.
  • Reserve blanching liquid.
  • In the pot of water used to blanch beans, add vinegar, dried dill, 2 cloves of garlic and cayenne pepper.
  • Return to a boil, reduce heat and simmer covered for 5 minutes.
  • Into hot sterilized pickle jars, place 1 clove of garlic and 1 sprig of dill then pack with beans stacked vertically leaving 1/4 inch headspace.
  • Ladle hot pickling liquid into packed jars, leaving 1/4 inch headspace and seal.
  • Process in boiling water bath for 10 minutes.
  • Store in cool dark place.
  • Ready in 2 weeks and keeps 12 months.
  • Serve chilled, refrigerate after opening.
