PICKLED GARLIC
These pickled garlic cloves take a long time, but they're easy to make and are a real treat.

Steps:
- Place garlic cloves in a medium bowl, first cutting the large cloves in half. Mix in the red bell pepper.
- In a large saucepan over medium high heat, place the distilled white vinegar and white sugar. Wrap ground dry mustard and celery seed in a spice bag, and place in the liquid mixture. Bring to a boil. Boil 5 minutes. Stir in garlic and pepper. Continue boiling 5 minutes. Remove from heat and discard spice bag.
- Place garlic and peppers in sterile containers to within 1 inch of the top. Fill with remaining liquid to within 1/4 inch from the top. Seal and store in the refrigerator approximately three weeks before serving.

- Place the potatoes in a steamer basket, and set in a pan over an inch of boiling water. Cover, and steam for about 10 minutes, until potatoes are tender but not mushy.
- In a small bowl, stir together the butter, dill, garlic, and salt. Transfer the potatoes to a serving bowl, and pour the seasoned butter over them. Toss gently until they are well-coated.

- In a large saucepan, bring water to a boil. Add garlic and boil 1 minute. , Meanwhile, divide coriander, peppercorns, chiles, allspice and bay leaf among three hot half-pint jars. Drain garlic and pack into jars to within 1/2 in. of the top., In a small saucepan, combine vinegar, sugar and salt. Bring to a boil, stirring constantly. Carefully ladle hot liquid over garlic, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. - Fill sterile containers with garlic, chopped fresh dill and cayenne pepper to within an inch of the top.
- Mix the distilled white vinegar and salt in a medium saucepan. Bring to a boil.
- Pour the hot distilled white vinegar and salt mixture into the containers with the garlic mixture. Fill to approximately 1/4 inch from the top. Seal and store in the refrigerator.

DILLED GREEN BEANS AND GARLIC PICKLE
This outstanding condiment was inspired by my son, who at 4 years old asked for a pickle that didn't taste pickly. As he was a charter member of my "Guinea Pig Club", I figured owe him at least that much. After several attempts resulting in truly frightening facial expressions, I eventually got a huge smile. So, for all you 'non-pickle' pickle lovers out there, here's one your going to love.

Steps:
- Wash and trim beans to fit vertically in pickle jar.
- In a medium pot add water, salt and beans and bring to a boil. Boil for 3 minutes.
- Remove beans, and immerse beans into ice water bath.
- Reserve blanching liquid.
- In the pot of water used to blanch beans, add vinegar, dried dill, 2 cloves of garlic and cayenne pepper.
- Return to a boil, reduce heat and simmer covered for 5 minutes.
- Into hot sterilized pickle jars, place 1 clove of garlic and 1 sprig of dill then pack with beans stacked vertically leaving 1/4 inch headspace.
- Ladle hot pickling liquid into packed jars, leaving 1/4 inch headspace and seal.
- Process in boiling water bath for 10 minutes.
- Store in cool dark place.
- Ready in 2 weeks and keeps 12 months.
- Serve chilled, refrigerate after opening.
