Steps:
- Lay corned beef in stacks of two on a hard surface.
- Spread 1 ounce of cream cheese onto each stack. Place a pickle directly in the center of each. Roll corned beef around the pickles and cut each roll into four equal parts.

PICKLE ROLL UPS
Pickle Roll-Ups are slices of deli ham smothered in ranch-flavored cream cheese rolled around a dill pickle and cut into bite-sized pieces. Also known as "Minnesota Sushi"!

Steps:
- In a small bowl, combine the cream cheese and the ranch seasoning.
- Set the ham out in a single layer. Pat dry with a paper towel.
- Spread the cream cheese mixture evenly over the slices of ham. Make sure to spread the mixture all the way out to the edges of the ham slices.
- Cut the ends off each pickle. Pat the pickles dry with a paper towel and set them on top of the cream cheese mixture.
- Tightly roll each pickle up in the ham. Use toothpicks to hold them closed if needed.
- Cut the ham rolls into 3/4-inch pieces. Place the pieces on a large plate or platter.
- Cover with plastic wrap and refrigerate until ready to serve.

- Spread cream cheese evenly over tortilla. Sprinkle carrots and Cheddar cheese evenly over cream cheese.
- Place pickles, end to end, about 1 inch from one edge of tortilla. Starting at edge with pickles, roll up tortilla.
- Wrap tortilla in plastic wrap. Refrigerate 30 minutes. (Roll-ups can be made ahead and stored in refrigerator up to 2 days.)
- To serve, cut 1/2 inch off each end of tortilla; cut into 6 bite-size pieces.

- Spread thin layer of cream cheese on slice of meat.
- Wrap one pickle with cheese covered meat slice.
- Keep spreading the cheese on ham slices and wrapping the pickle spears up in them.
