1/4 cup dill pickle juice
1 teaspoon salt
1/2 teaspoon seasoned salt
2 salmon steaks (1 inch thick)
SAUCE:
1/4 cup mayonnaise
2 teaspoons dill or sweet pickle relish
1 teaspoon dill pickle juice
1 teaspoon Catalina salad dressing
Chopped sweet red and green pepper, optional

Steps:

  • In a large skillet, combine the water, pickle juice, salt and seasoned salt. Bring to a boil. Add salmon; return to a boil. Reduce heat; cover and simmer for 12-16 minutes or until fish flakes easily with a fork., In a small bowl, combine the mayonnaise, relish, pickle juice and salad dressing. Serve over salmon. Garnish with red and green pepper if desired.

Four 4- to 6-ounce fillets salmon
Sea salt and white pepper
2 lemons, 1 halved and 1 cut into wedges
1 bottle dry white wine, such as pinot grigio
Fresh parsley, for garnish

Steps:

  • Drizzle the olive oil over the salmon fillets and season with some sea salt and white pepper. Set aside.
  • Fill a high-sided large skillet one-third of the way up with water. Add the wine and lemon halves. Bring to a low simmer, add the salmon and let cook until firm to the touch, 5 to 7 minutes for medium. For well-done salmon, cook for 10 minutes.
  • Serve garnished with the lemon wedges and parsley.

2 1/2 lbs skinless boneless salmon fillets
1 tablespoon salt
2 cups distilled white vinegar
2 cups water
1/4 cup canola oil
1 1/2 tablespoons mixed pickling spices
1 teaspoon salt
5 small white boiling onions, thinly sliced

Steps:

  • Rinse salmon, pat dry, and cut into 3/4 inch pieces.
  • Spread fish in a single layer on a piece of wax or in a shallow glass baking dish.
  • Sprinkle with the 1 tablespoon salt and let stand, uncovered for 30 minutes.
  • Rinse fish well and pat dry.
  • While salmon is standing, combine vinegar, water, oil, spices and 1 teaspoon salt in a 2-3 quart pan.
  • Bring to a boil over high heat; then reduce heat, partially cover and simmer for 30 minutes.
  • Layer fish chunks and onions in a 2 quart wide-mouth jar or bowl.
  • Pour the simmering pickling liquid over the fish and onions, cover loosely, and let cool.
  • When cool, cover tightly and refrigerate for at least 24 hours or up to a week.
  • Transfer fish and onions with some of the liquid to a serving bowl and provide picks for spearing.

This is adapted from my father in law's recipe for poached salmon- it is absolutely simple, very low cal, and tastes great cold or warm. We like it cold with an aioli or a creamy dill sauce.

  • Place lemon slices, dill and ginger in a foil pan that has been sprayed with cooking spray.
  • Place salmon on top.
  • Add wine and then fill pan with water until the fish is completely covered.
  • Cover with foil and poke knife holes all over the foil to allow steam to escape.

1 cup butter, cubed
1 cup peach preserves
1 tablespoon lime juice
1 garlic clove, minced
1/2 teaspoon prepared mustard
2 salmon fillets (1 pound each)
1/2 cup chopped peeled fresh peaches or frozen unsweetened sliced peaches, thawed

Steps:

  • In a microwave-safe bowl, combine butter and preserves. Cover and microwave on high for 45-60 seconds. Stir in the lime juice, garlic and mustard until blended. Cool. Set aside 1 cup for basting and serving., Place salmon fillets in a large resealable plastic bag; add remaining peach mixture. Seal bag and turn to coat. Marinate for 20 minutes., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Place salmon skin side down on grill rack. , Grill, covered, over medium heat for 5 minutes. Spoon half of reserved peach mixture over salmon. POACHED WHOLE SALMON

When poaching a large whole fish, place it in cool liquid first and then slowly bring the liquid to the proper temperature to result in an even texture inside and out. Adding the raw fish to hot liquid would cause the outside to overcook before the inside is cooked. Court Bouillon (page 231) is the traditional poaching liquid for seafood, imparting gentle flavors to the fish without being the least bit overpowering. For the prettiest presentation, remove the skin from the fish while it is still warm, as it will slip off more easily than when cold. A whole fish is always an impressive sight at the table, but even more so when poached and then wrapped in thin ribbons of cucumber, the plump pink fish in stark contrast to the bright-green ribbons.

2 recipes Court Bouillon (page 231, cooking for 30 minutes), unstrained and cooled to room temperature
1 whole salmon (about 7 pounds and 2 1/2 to 3 inches thick), cleaned, fins and gills trimmed, rinsed well (have the fishmonger do this)
1 English cucumber
1 bunch each watercress and upland cress, for garnish
Cucumber, cress, and caper sauce, for serving (page 231)
Lemon wedges, for serving

Steps:

  • Prepare poacher Pour the Court Bouillon into a fish poacher and set the poacher over two burners on the stove. Lower the rack so it rests on the vegetables (in the court bouillon), then lay salmon on rack (trim the tail if necessary to fit inside). Add enough cool water to cover the fish completely; or, if only a small bit of fish is showing, you can cover it with a piece of parchment paper (cut to fit inside poacher).
  • Poach fish Bring the liquid to a simmer over medium-high heat, then immediately reduce heat to medium-low. Check temperature with a candy thermometer and adjust heat so it is between 165° and 180°F (very few bubbles will break the surface but there should be steam coming from the surface). Poach salmon, adjusting heat as necessary to maintain the proper temperature, until an instant-read thermometer inserted into the thickest section registers 130°F (fish will continue cooking off heat). You can also test by inserting a knife into the flesh along the backbone; the flesh should still be slightly translucent and offer little resistance. The cooking time should be about 5 minutes per inch of thickness (once liquid has reached a simmer). Remove poacher from heat and allow it to cool until you no longer see any steam, about 1 hour. Lift the rack with the salmon from the poacher and set it over a large pan (or the sink) to allow the salmon to drain until just cool enough to handle, about 30 minutes.
  • Prepare fish for serving Transfer salmon to a clean work surface. Use your fingers and a paring knife to pull and scrape off the skin from the top side of the fish. Use the back of the knife to scrape off any brown areas from the surface. Using two large spatulas, carefully slide the salmon onto a serving platter. At this point, the salmon can be covered with plastic wrap and refrigerated for up to 4 hours.
  • Serve Slice the cucumber lengthwise into very thin strips. Arrange the strips diagonally across salmon, spacing them about 1 inch apart, and tuck the ends underneath so they appear to wrap around the fish. Garnish with watercress. Separate into pieces and serve sauce and lemon wedges on the side.
  • The salmon is garnished with a mixture of watercress and Upland cress (a member of the mustard family with a sharp, spicy flavor), which are also used in the accompanying sauce. You can find Upland cress (also called English cress or garden cress) at farmers' markets, or use all watercress instead.
  • A poacher is just the right size and shape for cooking a large whole fish, such as the salmon in this recipe. For smaller whole fish, a roasting pan fitted with a wire rack can be used instead.
  • To make the paper-thin strips of cucumber that appear to wrap around the fish, a mandoline is the best tool. A Japanese-style mandoline, such as Benriner, is inexpensive and sold at most kitchen supply shops. A vegetable peeler can be used instead, but it will not be able to produce the same uniform thickness as the mandoline.
  • Peel and finely chop 1 English cucumber, then toss with 1 1/2 teaspoons coarse salt and 1 tablespoon each Champagne vinegar and small (nonpareil) capers that have been rinsed and drained. Set aside for 5 minutes, then stir in 1 cup sour cream and 1/2 cup finely chopped cress (use half watercress and half Upland cress, if you can find it). Season with freshly ground pepper and more salt. Serve immediately, or cover and refrigerate up to 4 hours before serving. Makes about 2 1/4 cups.

BAKED SALMON FILLET WITH PICKLED CRANBERRIES, PARSLEY & PISTACHIOS

300ml cider vinegar
300g caster sugar
340g fresh cranberries
½ tsp whole cloves
½ tsp juniper berries
75g panko breadcrumbs
½ tbsp dried thyme
2 tbsp sumac
1 lemon , zested
5 tbsp olive oil , plus extra for drizzling
1kg salmon fillet, pin-boned (you can ask your fishmonger to do this for you)
60g pistachios , crushed
½ small bunch of parsley , chopped, to serve

Steps:

  • Make the pickled cranberries a week or two ahead. Put the vinegar and sugar in a pan over a medium heat and bring to the boil. Stir in the remaining ingredients and continue to boil for 4 mins. Pour the mixture into a 1-litre sterilised jar, or two smaller ones, and seal well, then leave to cool. Chill in the fridge for at least a week.
  • Heat the oven to 200C/180C fan/gas 6. Toast the breadcrumbs in a dry frying pan for 2-3 mins until golden and toasted, then tip onto a plate and leave to cool.
  • Combine the breadcrumbs, thyme, sumac, lemon zest and some seasoning in a mixing bowl. Drizzle with the 5 tbsp olive oil and mix in thoroughly.
  • Lay a piece of baking parchment on a baking tray large enough to fit the salmon fillet. Put the salmon fillet skin-side down on top, and carefully spread the crust mixture over the top of the salmon. Don't press the mixture down too much. Drizzle with a little extra olive oil.
  • Bake the salmon for 20-25 mins ideally until it is just cooked and the crust has turned a golden colour. Once cooked, transfer to a serving platter and garnish with the pistachios, some drained pickled cranberries and the parsley. Try serving with buttered greens and roast new potatoes.
