- Sprinkle a pinch of baking soda into a 64-ounce, heat-proof, glass pitcher. Pour in boiling water, and add tea bags. Cover, and allow to steep for 15 minutes.
- Remove tea bags, and discard; stir in sugar until dissolved. Pour in cool water, then refrigerate until cold.

- Pour the sugar into a large pitcher. Bring water to a boil in a large pan. When the water begins to boil, remove from the heat, and place the teabags in. Let steep for 5 to 6 minutes.
- Remove tea bags, and return tea to the heat. Bring just to a boil, then pour into the pitcher, and stir until the sugar is dissolved. Fill the pitcher half way with ice, and stir until most of it melts. Then fill the pitcher the rest of the way with cold water, and stir until blended.

SIMPLE SWEET TEA
This is my (southern) wife's recipe, she introduced me to it when we first met, and I have been drinking it daily ever since. In the last few years due minor sugar reductions we have lowered the sugar level from 2/3 cup to 1/2. I really have not noticed much of a difference. I still sometimes like really sweet southern sweet tea, but this is a daily drinker.

- In a large pitcher add the sugar, and tea bags.
- Add the boiling water and let the tea steep for 10 minutes.
- Remove the tea bags, and stir the sugar and tea mixture together.
- (cold water): Add the 4 cups of cold water and stir, refrigerate until cold. (about 4 Hours).
- (ice): Add the ice and stir well. Serve over ice.

This is a recipe for "the wine of the south", otherwise known as sweetened iced tea or "Sweet tea." Forget about waiting for a pot of water to boil, and then waiting for the tea to steep. It doesn't get any easier than this.

- Fill you're 10-12 cup coffee maker's pitcher with water and pour it in the machine.
- Tear open 2 family size tea bags and put the tea in a coffee filter in your coffee machine's basket.
- Turn on the machine and let it do all the work!
- When all the tea has brewed, pour it into a 2-quart pitcher. Add the pinch of baking soda(to cut down on any bitterness) and the cup of sugar and stir until all the sugar is dissolved.
- Cover and chill in the fridge or serve immediately in glasses filled with ice. Make sure there's a little plate of lemon slices available for anyone who prefers lemon in their tea.
- You can make this with decaf tea, but it won't taste as good. Trust me, I've done it.
- The baking soda may sound strange, but don't leave it out. It cuts down on the bitterness of the tea, making it more smooth.
TIPSY TEA WITH HOMEMADE SWEET TEA
Sweet tea never tasted so good-especially for those bent on unwinding after a long workweek. Try it with a lunch of fried chicken and deviled eggs and see if you don't agree.
