- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x9-inch square baking pan.
- Put pineapple, flour, sugar, eggs, baking soda, and vanilla extract into a large bowl. Mix with an electric mixer at medium speed until well blended, about 1 minute. Pour into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 40 minutes. Remove from the oven and let cool slightly while you make the icing, about 20 minutes.
- Mix cream cheese and butter for icing together in a bowl. Add powdered sugar, pecans, and vanilla extract; mix until combined. Spread over warm cake. Refrigerate if not serving immediately.

TUSCAN PINE NUT CAKE
The Tuscan pine nut cake is a soft, buttery cake with a thick, melt-in-your-mouth pastry cream heart dotted with raisins. The top is sprinkled with toasted pine nuts

- Make it as the first thing, as you'll need it to be cold when you will add it to the cake. Heat the milk in a saucepan until it starts to simmer, then set aside.
- Whisk the egg yolks with the sugar and the flour, then pour in the hot milk in a thin stream, stirring continuously with a whisk.
- Transfer the pastry cream to the saucepan and move it on a low flame. Stir it constantly until it begins to thicken, about 3 minutes. Remove it from the heat, add the raisins and let it cool down.
- Preheat oven to 175°C/350 degrees F.
- Wisk butter and sugar for a few minutes, until creamy and light.
- Add the eggs gradually, one after the other, waiting for the first to be completely incorporated before adding the next one.
- Stir in the flour sifted with the baking powder.
- Grease and dust with flour a 22cm/9in round cake pan.
- Separate the batter equally into two pastry bags. Pipe the batter of the first pastry bag onto the cake pan, then spread it evenly with a spatula.
- Spoon the cold pastry cream over the first layer of cake, leaving 2 cm all around the edges. Smooth the surface of the pastry cream.
- Pipe the batter of the second pastry bag on top of the pastry cream in concentric circles, trying not to mix it with the custard, then spread it evenly with a spatula. Sprinkle the surface with pine nuts.
- Transfer to the oven and bake for 45 to 50 minutes, until golden brown.
- Remove the cake from the oven, let it cool down completely, then gently unmould it onto a plate. Keep in the fridge for a few hours before slicing in.
PINE NUT COOKIES

- Using an electric mixer, beat the butter, sugar, vanilla, fennel seed, and salt in a large bowl until light and fluffy. Beat in the egg. Add the flour and mix just until blended.
- Transfer the dough to a sheet of plastic wrap. Shape the dough into an 8-inch-long log. Wrap the dough in plastic and refrigerate for 2 hours.
- Preheat the oven to 350 degrees F. Line heavy large baking sheets with a silpat or parchment paper. Cut the dough log crosswise into 1/8 to 1/4-inch thick slices. Transfer the cookies to the prepared baking sheets, spacing evenly apart. Press the pine nuts decoratively atop the cookies. Bake until the cookies are golden around the edges, about 15 minutes.
ALMOND, PINE NUT, APRICOT CRUMB CAKE

- Preheat the oven to 350 degrees F. Butter and flour a 9-inch cake pan.
- Combine the whole almonds and 1/4 cup pine nuts in a food processor. Pulse the machine until the nuts are finely ground. Transfer the nuts to a medium bowl. Add the flour, baking powder, and salt. Stir to combine and set aside.
- In a medium bowl, using an electric mixer beat the eggs and the sugar until the mixture becomes thick and pale yellow. Add the butter, and milk. Stir in the almond extract and apricots. Gently stir in the dry ingredients. Pour the batter into the prepared cake pan. Sprinkle the top of the cake with sliced almonds and remaining 1/4 cup pine nuts. Bake until the cake is cooked and a toothpick comes out clean, about 50 to 55 minutes. Let the cake cool on a wire rack. Use a knife to loosen the edges. Turn the cake out, slice, and serve.
ITALIAN PINE NUT CAKE
This cake is dense, sweet and moist, almost like a blondie, but far more elegant and rich due to the pine nuts.Makes 1 9-inch cake.

- Preheat the oven to 350 F. Grease a 9-inch springform pan and line the bottom with parchment paper.
- Whip the granulated sugar, brown sugar, eggs and egg white by hand or in a mixer fitted with the whip attachment until pale and doubled in volume. Whisk in the oil, lemon zest and vanilla.
- In a separate bowl, sift the flour and salt. Add this to the egg mixture and stir just until blended. Stir in the toasted pine nuts and scrape the batter into the prepared pam. - Heat oven to 350°F. Spread pine nuts in ungreased shallow pan. Bake uncovered 6 to 10 minutes, stirring occasionally, until light brown. Cool.
- Spray 9-inch round cake pan with cooking spray. In large bowl, mix flour, sugar and salt. HONEY & PINE NUT COFFEE CAKE

- Preheat oven to 180°C/350°F/Gas 4.
- Grease a 8 inch round cake tin or spring form, if using cake tin it helps to line it with baking paper as well.
- In a small sauce pan, melt the sugar, honey and butter together over a medium heat, boil for 1 minute and remove from heat.
- Set aside and allow to cool until just warm.
- Place the pine nuts onto a baking tray and roast for approx 8 minutes, alternatively roast in a dry non stick frying pan on top of the hob, stirring regularly.
- Add the pine nuts to the honey mixture.
- Stir in the eggs and flour.
- Pour the batter into the baking tin and bake for approx 50 minutes.
- The cake is done when the top springs back when pressed lightly.
- Allow to cool for 10 minutes before removing from pan.
- When cold dust with confectioners suger and serve.

CARROT-PINE NUT CAKE FROM PARMA
I just saw Giada de Laurentis make this carrot cake/bread on the Food Network and didn't want to lose the recipe; it's SOOOO unusual with the addition of pine nuts, mascarpone cheese and fennel seeds. I can't wait to try it!

- Preheat the oven to 375°F.
- In a medium bowl sift together the flour, baking powder, cinnamon, and salt. Set aside.
- Place the pine nuts, 1/2 cup sugar, and fennel seeds in a food processor and pulse to mince the nuts. Add the lemon zest, lemon juice, and the carrots (easily shredded with the food processor attachment). Pulse to mince the carrots. Add the mascarpone cheese and pulse until the cheese is incorporated. If you can't find mascarpone, cream cheese is a good substitute.
- In a large bowl, using a hand mixer, cream together the butter and remaining 1/2 cup sugar. Add the eggs one at a time, beating well between adding each additional egg.
- Add the carrot mixture to the butter mixture and stir until combined. Add in 1/3 of the reserved dry ingredients and stir until just incorporated. Add the rest in thirds the same way.
- Place the mixture in a lightly greased and floured 8 by 10 by-2-inch baking dish. Bake for 55 to 60 minutes. Giada filled a cupcake-paper-lined muffin tin 3/4 full each, and baked for 18-20 minutes for individual portions.
- Let the bread/cake cool for 1 hour, then dust with powdered sugar. Cut into squares and serve.
