Steps:

  • Preheat oven to 425°F (220°C).
  • In a medium-size bowl mix together the beef, pork, bread crumbs, onion, parsley, garlic, eggs, salt, and pepper until just combined.
  • Take a walnut size of the meat mixture and roll into a ball. Repeat with remaining meat and transfer to an oiled rack on a sheet tray.
  • Bake meatballs for 15 minutes, until golden brown. Set aside.
  • Add a little oil to a pan on medium-high heat and cook the onions and garlic until they are deeply caramelized.
  • Add in the oregano, parsley, basil, red pepper flakes, tomato paste, and tomato sauce.
  • Stir the mixture and bring to a simmer for 5 minutes.
  • Add the meatballs and coat them with the sauce.
  • Sprinkle with Parmesan cheese, poke with toothpicks, and serve!

8 ounces ground pork
4 ounces ground veal
1/2 cup finely grated Pecorino Romano or Parmesan cheese (1 ounce)
3 tablespoons coarsely chopped fresh flat-leaf parsley
1 garlic clove, minced
1 large egg
Coarse salt
Homemade Marinara Sauce
2 dozen brioche rolls, split
1 1/2 cups coarsely grated mozzarella cheese (5 ounces)
1/2 cup finely grated Pecorino Romano or Parmesan cheese (1 ounce)
Small basil leaves

Steps:

  • Make the meatballs: Soak bread in milk for 5 minutes. Gently mix bread and milk with meats, Pecorino Romano, parsley, garlic, egg, and 1 teaspoon salt. Refrigerate for at least 30 minutes.
  • Roll mixture into twenty-four 1-ounce balls (each about the size of a golf ball).
  • Heat sauce in a large heavy pot over medium heat. Drop meatballs into sauce, and bring to a gentle simmer. Cook, partially covered, until meatballs are cooked through, 20 to 25 minutes.
  • Make the sandwiches: Preheat oven to 400 degrees. Working in batches, arrange rolls, cut side up, on a baking sheet. Place 1 meatball, a spoonful of sauce, 1 tablespoon mozzarella, and 1 teaspoon Pecorino Romano on bottom halves. Bake until cheese melts, about 3 minutes. Sandwich with basil.

1 teaspoon lemon zest

1/2 pound mortadella, diced small
3 tablespoons olive oil
1 cup raw shelled pistachios
1/2 cup fresh basil leaves
1/2 cup fresh Italian parsley leaves
1/2 teaspoon kosher salt
1/2 cup olive oil
1 cup freshly grated Parmesan
12 slider potato buns
1 cup baby arugula

Steps:

  • For the meatballs: Preheat the oven to 450 degrees F.
  • Combine the cheese, breadcrumbs, milk, oregano, lemon zest, salt and egg in a medium bowl. Add the pork and mortadella and gently fold the mixture until fully and evenly combined.
  • Drizzle 2 tablespoons olive oil on a small rimmed baking sheet. Scoop the mixture into 12 golf-ball sized balls and roll until smooth. Place on the baking sheet. Drizzle with the remaining tablespoon olive oil and bake, 15 minutes.
  • For the sauce: Meanwhile, pulse the pistachios in a food processor until coarsely chopped. Add the basil, parsley and salt and pulse to combine. And the olive oil and 1/4 cup cold water and puree until it's a relatively smooth paste. Add the cheese and pulse to combine.
  • Remove the meatballs from the oven and spread a teaspoon of pesto on each meatball. Bake for an additional 5 minutes.
  • For the sliders: Spread a little pesto on the top and bottom of each bun. Place a pinch of arugula on the bottom and a meatball on the arugula. Top with the top half of the buns and serve.

1 cup marinara sauce
1 pack dinner roll, 12 rolls left intact, not pulled apart
6 slices mozzarella cheese
4 tablespoons unsalted butter, melted
2 tablespoons garlic, chopped

Steps:

  • Preheat the oven to 350° F (180°C).
  • In a large bowl, combine the ground beef, egg, salt, pepper, garlic powder, parmesan, and chopped basil until thoroughly mixed.
  • Take a golf ball-sized amount of the beef mixture and roll it into a ball. Repeat with the rest of the beef mixture, setting the meatballs aside on a plate.
  • Heat oil in a pan over high heat. Sear meatballs on one side for about one to two minutes, then flip. Cook for another one to two minutes, then remove the meatballs from the pan and drain any excess fat.

Steps:

  • In medium bowl, place beef; sprinkle well with salt and pepper. Add eggs, bread crumbs, Parmesan cheese, garlic and parsley; mix lightly until combined. Shape mixture into 12 (2-inch) balls.
