This recipe was given to us from a neighbor. He got it from his fave Thai restaurant. I have made it a few times. In a word, it is AWESOME! It is time consuming but well worth it. This make a great appetizer when serving Thai or any Asian cuisine

1 fresh pineapple, slices, cored and cut into large flat triangle shaped pieces
1/3 lb ground pork
2 tablespoons canola oil
1 teaspoon cilantro, minced
1 tablespoon onion, minced
1 teaspoon garlic, minced
1 1/2 tablespoons fish sauce
1 1/2 tablespoons lime juice
1 1/2 tablespoons tamarind juice
1 3/4 tablespoons palm sugar
1 tablespoon crushed peanuts
1/2 bunch cilantro leaf
1 -2 whole red chili pepper, shredded, for garnish

Steps:

  • Heat 2 T oil then stir fry all ingredients in STEP 1, until fragrant.
  • Add pork and stir fry until color changes and pork it cooked through.
  • Add STEP 2 ingredients to above and crushed peanuts; stir to mix.
  • Remove from heat, drain on paper towels, allow to cool completely.
  • Place meat mixture over pineapple pieces; top with whole cilantro leaf and sprinkle with shredded red pepper.

This was a holiday tradition for many many years in my family. My dad's mother; Mammy first made this that I ever knew of as a kid. My mother fancied it up over the years adding maraschino cherries, coconut and at times mandarin oranges together to the base recipe. I give you the original recipe in it's original version. This is light yet rich and yummy at the same time! The marshmallows just begin to melt slightly and mix with the cream. I can remember huge bowls of this consumed after Thanksgiving dinners as a child and then always having it at holiday time year after year including now.

1 pint heavy cream or 1 pint whipping cream
1 (20 ounce) can crushed pineapple, drain and reserve juice
6 cups mini marshmallows

Steps:

  • Combine pineapple, a bit of it's juice; approximately 1/4 cup and marshmallows in a large bowl.
  • Refrigerate overnight or at least 8 hours. Overnight is the best.
  • About 2-6 hours prior to serving, drain any excessive liquid though some should remain. Whip the cream and fold into marshmallow mixture.
  • Refrigerate before serving. This holds up very well in the fridge for days without the cream separating. The cook time is the refrigeration time.

1 cup reduced-fat graham cracker crumbs (about 5 whole crackers)
3 tablespoons butter, melted
1 package (.3 ounce) sugar-free lemon gelatin
1 cup boiling water
3 cups 1% cottage cheese
Sugar substitute equivalent to 7 teaspoons sugar
2 teaspoons cornstarch
1 tablespoon water
1 can (8 ounces) unsweetened crushed pineapple, undrained

Steps:

  • In a bowl, combine cracker crumbs and butter. Press into an ungreased 9-in. square dish. Refrigerate until firm. , In a bowl, combine gelatin and water; stir until dissolved. Cool to room temperature. In a blender, combine the cottage cheese and sugar substitute; cover and process until smooth. Slowly add gelatin mixture and blend until smooth. Pour into crust. Refrigerate until firm. , Meanwhile, in a saucepan, combine cornstarch and water until smooth. Add pineapple. Bring to a boil. Cook and stir for 2 minutes or until thickened. Cool to room temperature. Spread over gelatin layer. Refrigerate for at least 1 hours before serving.

1 teaspoon whole white peppercorns
2 tablespoons peeled and chopped cilantro root
2 tablespoons garlic, peeled and coarsely chopped
1 tablespoon vegetable oil
½ pound ground pork
2 tablespoons fish sauce
2 tablespoons palm sugar
2 tablespoons ground peanuts
1 fresh pineapple
10 sprigs fresh cilantro
2 Thai red chile peppers (prik chee fah), cut into tiny slivers

Steps:

  • Place peppercorns in a mortar and pound with a pestle until finely ground. Add cilantro root and garlic; pound until everything is mashed together well. Set aside.
  • Heat oil in a skillet over medium heat and cook garlic paste until fragrant, about 2 minutes. Add pork and cook, stirring often, until pork is cooked through and mixed well with garlic paste, about 5 minutes. Season with fish sauce and palm sugar and stir until well combined. Mix in peanuts. Taste pork; it should taste savory with a hint of sweetness. Adjust seasonings if necessary.
  • Peel, core, and slice pineapple into 1-inch slices. Cut slices into bite-sized pieces and lay onto a serving dish. Top pineapple pieces with pork mixture. Garnish each pineapple piece with a cilantro leaf and a sliver of red chile pepper.
