  • In a large bowl, combine the pineapple and pudding mix until thickened; fold in the whipped topping. Spoon into crust. Refrigerate until serving.

1 (15 ounce) can crushed pineapple
1 cup white sugar
2 eggs, beaten
½ cup milk
5 slices bread, cut into cubes
1 teaspoon vanilla extract
½ cup butter, melted
ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix pineapple, sugar, eggs, milk, bread, and vanilla extract together in a casserole dish. Pour melted butter over the pineapple mixture. Sprinkle cinnamon over the top.
  • Bake in preheated oven until set in the middle, about 30 minutes.

1 cup coarsely crushed pretzels
1/2 cup butter, melted
1 cup sugar, divided
1 package (8 ounces) cream cheese, softened
1 can (20 ounces) unsweetened crushed pineapple, drained
1 carton (12 ounces) frozen whipped topping, thawed

Steps:

  • Preheat oven to 400°. Mix pretzels, melted butter and 1/2 cup sugar. Press into a 13x9-in. pan. Bake 7 minutes. Cool completely on a wire rack., Meanwhile, in a large bowl, beat cream cheese and remaining sugar until creamy. Fold in pineapple and whipped topping; refrigerate, covered, until serving., To serve, break pretzel mixture into small pieces. Stir into pineapple mixture.

This fluff tastes more like a dessert than a boring old side dish. Cream cheese gives it a rich taste and your guests will be kept guessing the secret ingredient that gives it a candy like crunch. I am always getting compliments on this!

8 ounces cream cheese
1/2 cup powdered sugar
1 (20 ounce) can crushed pineapple, drained
1 (12 ounce) container Cool Whip
1 cup crushed pretzel
1/2 cup sugar
1/2 cup butter

Steps:

  • Mix crushed pretzels and sugar in a square cake pan.
  • Slice butter into patties and place on top of mixture.
  • Bake at 450 for 7 minutes, stirring once.
  • While that is baking, combine cream cheese and sugar until blended.
  • Add pineapple and cool whip (you may not want use all of the cool whip-it's just your personal preference).
  • Add pretzel mix JUST before serving.

I was looking for a dessert recipe that wouldn't be too heavy for our spring time Easter supper. I couldn't find one that had all the ingredients I was thinking of, so I threw some from my pantry together, and voila! The pineapple and oranges are refreshing after a big meal. If it seems a tad sweet, I have cut down a bit on the Cool Whip, and subbed plain yogurt. Mmm good!

2 (14 ounce) cans crushed pineapple, drained
1 (10 ounce) can mandarin orange sections, drained
1 (3 1/2 ounce) box vanilla pudding mix, cooked
1 liter Cool Whip Topping, thawed
1 cup shredded coconut
2 cups colored miniature marshmallows
2 cups graham wafer crumbs
2 tablespoons sugar
1/4 cup butter, melted

Steps:

  • Preheat oven to 350°F.
  • Mix crust ingredients together, and press into a 9x13" baking pan. Bake for 10 minutes. Cool.
  • Cook pudding as per directions on box. Cool.
  • Drain pineapple and oranges. Mix together Cool Whip, cooled pudding, coconut, drained fruit and mini marshmallows.
  • Spread on cooled crust, and refrigerate for an hour before serving.
