3 cups pineapple juice
1/2 cup white wine vinegar
1 tablespoon fresh ginger, finely chopped
3 tablespoons soy sauce
1/4 cup light brown sugar, firmly packed
2 tablespoons Dijon mustard
3 tablespoons lime juice
1 teaspoon freshly ground white pepper
2 pounds fresh tuna steaks, finely chopped
2 teaspoons chipotle pepper puree
1 tablespoon honey
2 tablespoons canola oil
2 green onions, thinly sliced
Salt and freshly ground pepper
8 rolls
Watercress
Green Chile-Pickle Relish, recipe follows
3 poblano chiles, grilled, peeled, seeded and finely diced
3 dill pickles, finely diced
1/4 cup finely chopped red onion
3 tablespoons fresh lime juice
2 tablespoons honey
3 tablespoons finely chopped cilantro leaves
3 tablespoons olive oil
Salt and freshly ground pepper

Steps:

  • Combine the pineapple juice, vinegar, ginger, soy sauce and brown sugar in a small saucepan and bring to a boil. Reduce the heat to low and simmer until the volume is reduced by half, about 30 minutes. Whisk in 2 tablespoons mustard, remove from the heat, and add the lime juice and white pepper. Let cool.
  • Combine the tuna, 2 tablespoons Dijon, chipotle pepper puree, honey, oil, and green onions in a large bowl, and season with salt and pepper. Shape the ground tuna firmly into 8 round uniform patties about 1 1/2-inches thick. Refrigerate for 30 minutes; the burgers must be very cold to hold their shape when cooking. Grill burgers for 3 minutes on each side for medium doneness, basting often with the glaze. Serve the burgers on buns with the watercress and the Green Chile-Pickle Relish.
  • Combine all ingredients in a medium bowl and season, to taste, with salt and pepper. Let sit at room temperature for 30 minutes before serving so that flavors meld.

1/4 cup GREY POUPON Savory Honey Mustard
2 Tbsp. pineapple juice
1 Tbsp. soy sauce
1/4 tsp. ground ginger
1 pork loin center rib roast (3 lb.), backbone loosened (6 ribs)

Steps:

  • Preheat oven to 325°F. Mix preserves, mustard, pineapple juice, soy sauce and ginger until well blended; set aside. Place roast, rib side down, in shallow roasting pan. Insert meat thermometer into roast without touching the bone.
  • Bake 1-1/2 to 2 hours or until meat thermometer registers 155°F, brushing with the mustard mixture during the last 20 min. of the baking time.
  • Cover roast with foil; let stand 10 min. before carving roast to serve. (Meat temperature will rise about 5°F during the standing time.) Garnish with orange wedges, if desired.

1 (4.5 pound) butt-end smoked ham
1 (15.25 ounce) can pineapple rings, drained
1 (4 ounce) jar maraschino cherries, drained

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Whisk pineapple juice, brown sugar, and dry mustard in a bowl until brown sugar has dissolved.

  • Preheat oven to 350°. Place roast on a rack in a shallow roasting pan, fat side up. Sprinkle with salt and pepper. 2 medium pineapples, peeled lengthwise, cored, and cut crosswise into 1/4-inch-thick slices
3 cups sugar
2 cups water
1/4 cup cup country-style mustard
1 smoked, bone-in ham (10 pounds), trimmed of excess skin and all but a 1/4-inch layer of fat
40 whole cloves
1 cup cup dry white wine
Mustard greens, for garnish (optional)

Steps:

  • Bring pineapples, sugar, and waterto a boil in a large saucepan. Reduceheat; simmer, skimming foam. Cook until pineapples are translucent and mixture has reduced to 4 cups, 60 to 80minutes. Transfer to a large bowl; letcool. Stir in mustard. (Glaze will keep,covered and refrigerated, for 3 days.)
  • Preheat oven to 350 degrees with rack in lowest position. Score ham with a sharp knife in a pattern of 1 1/4-inch diamonds. Press a clove into the center of each diamond. Place ham, cut side down, in a roasting pan; drizzle wine over top. Coat ham with half the glaze. Cover with parchment, then foil, and bake for 1 hour. Remove from oven.
  • Increase oven temperature to 425 degrees. Uncover ham, and coat with remaining glaze (some will fall to the bottom of the pan). Bake, uncovered, bastingoccasionally, until browned, 40 to 45 minutes. (Tent bone with foil if it becomes too dark.) Transfer ham to a cutting board; let rest for at least 30 minutes before carving. Serve with pan drippings and pineapple. Garnish with mustard greens if desired.

  • Grind the mustard seeds in a mortar and pestle or a spice mill. Place the ground mustard seeds in a bowl with enough water to moisten and allow them to sit for 10 minutes. Replace the soaked seeds in the mortar or the bowl of a food processor and process with the remaining ingredients until the desired consistency is reached. Spoon the mustard into a small jar and cover tightly. The mustard should sit for at least 2 weeks before use.

2 tblsp Dijon mustard
1/8 tsp salt
1/4 tsp pepper
1 tsp cooking oil
1/2 lb beef tenderloin, cut into 1 inch cubes
12 pieces pineapple, 1 inch
4 soaked bamboo skewers, soaked in water 10 minutes

Steps:

  • Combine pineapple juice and sugar in saucepan. Boil gently on medium for about 30 minutes or until reduced to about 1/2 cup. Stir in mustard, salt and pepper. Reserve half of mustard mixture. Combine oil, seasoned salt and pepper. Add beef and toss. Thread beef and pineapple onto skewers. Cook on a greased grill on medium-high for about 6 minutes, turning once and brushing with remaining mustard mixture, until they reached desired doneness. Serve with reserved mustard mixture.

1-1/2 cups milk or half and half
2 egg yolks
1/2 cup sugar
2 teaspoon dry mustard
2 teaspoon flour
1/2 teaspoon salt
3/4 cup vinegar
1 cup crushed pineapple (undrained)

Steps:

  • Heat milk in double boiler. Beat yolks lightly. Combine sugar, flour, mustard powder ad salt and add to yolks. Add vinegar and pineapple. Slowly add to hot milk (will curdle). Add pinch of baking soda (less than 1/4 teaspoon) half way through to reduce curdling. Remove from double boiler and transfer to pot. Cook and stir until thickened (will thicken more as it cools).
