PINEAPPLE PECAN CAKE

Steps:

• Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
• Sift together the flour, sugar and baking soda. Stir in the eggs, pineapple and vanilla, mixing until blended. Fold in pecans. Pour batter into prepared pan.
• Bake in the preheated oven for 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

Steps:

• In large bowl, pour boiling water over gelatin; stir about 2 minutes or until gelatin is completely dissolved. Stir in pineapple juice. Refrigerate about 30 minutes or until mixture is syrupy and just beginning to thicken.
• Meanwhile, in 13x9-inch (3-quart) glass baking dish, toss cracker crumbs, 1/4 cup sugar, the coconut, pecans and melted butter until well mixed. Reserve 1/2 cup crumb mixture for topping. Press remaining mixture in bottom of dish.
• In medium bowl, beat cream cheese, sour cream and 1/4 cup sugar with electric mixer on medium speed until smooth; set aside.
• Beat gelatin mixture with electric mixer on low speed until foamy; beat on high speed until light and fluffy (mixture will look like beaten egg whites). Beat in cream cheese mixture just until mixed. Gently stir in pineapple (with juice). Pour into crust-lined dish; smooth top. Sprinkle reserved 1/2 cup crumb mixture over top. Refrigerate about 4 hours or until set. For 18 servings, cut into 6 rows by 3 rows.

• CAKE: Mix flour, sugar, and baking soda in a large bowl. Add in the eggs, pineapple along with its juice, and the pecans, if using. Stir just until moistened. Pour into a buttered 9x13-inch baking pan. Bake in a preheated 350°F oven for about 35 minutes or until toothpick comes out clean. Cool completely. • Preheat oven to 350 degrees. Place parchment paper on baking pan.
• In a large bowl mix together cake mix, pineapple, brown sugar and eggs.
• Using a 1 inch cookie scoop, place cookie dough on baking pan. Place 1 cherry in center of cookie dough and push down half way.
• Bake in preheated oven for 10-12 minutes until golden brown. Allow cookies to sit on baking pan for 10 minutes. Use a metal spatula to pull cookies off pan and allow to cool on a cooling rack.

• In a large bowl, combine the sugar, flour and baking soda. Combine eggs and pineapple; stir into dry ingredients just until moistened. Fold in nuts. , Transfer to a greased 13x9-in. baking pan. Bake at 350° for 32-38 minutes or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack., For frosting, in a large bowl, beat cream cheese and butter until fluffy. Add confectioners' sugar and vanilla; beat until smooth. Frost cake. Store in the refrigerator.

Steps:

• Preheat oven to 350°F Grease and flour a 9-inch by 13-inch cake pan.
• In a bowl, combine the cake mix, milk, eggs, oil and pecans. Stir until just moistened, then beat at medium speed for 2 minutes.
• Pour batter into prepared pan. Bake for 30-35 minutes or until tester inserted in center comes out clean.
• When the cake is done, prick the top all over with a fork. Pour the pineapple and juice over the hot cake. Let cool.
• While the cake is baking, prepare the toppings by stirring together the pudding mix and milk then beating in the cream cheese, a few small pieces at a time.
• Whip the cream with the sugar until stiff peaks form. Refrigerate while cake cools.
• Spread cream cheese mixture over the crushed pineapple then cover the cake with whipped cream. Garnish with pecans and coconut.

Steps:

• Preheat oven to 325°F.
• Mix eggs, oil and one box of cake mix. once combined mix in the other cake mix. fold in the pineapple and the cherries. the batter will be very thick.
• Mix together the brown sugar and butter.
• Drop about a tablespoon full on a cookie sheet, then sprinkle a little bit of the sugar and butter mixture on top.
• Bake for 8-11 minutes cool on a cookie rack.

PECAN SANDIES - CAKE MIX COOKIES

Steps:

• Pour cake mix into a large bowl. Whisk dry mix to remove lumps or sift it into the bowl.
• Add pecans to the dry cake mix and stir well.
• In a liquid measuring cup, add the egg. Add enough oil to the egg to bring the mixture to 1/2 cup. Add enough water to bring the mixture to 2/3 cup. Beat mixture together with a fork.
• Add egg mixture to cake mix in large bowl. Mix well.
• Using a teaspoon or small ice cream scoop, gather balls of dough, rolling them into perfect circles. Place 12 on a cookie sheet and bake 8-12 minutes at 350 degrees F. If they get golden brown, they are too done. Pulling them out around 10 minutes should be perfect.
• Let the cookies cool 5 minutes before transfering them to a plate or container.
