SOUR PINEAPPLE TIKI COCKTAIL

2 cups fresh grapefruit juice
2 tablespoons maraschino cherry juice, plus maraschino cherries, for garnish, optional
1 pineapple (3 1/2 pounds), peeled, cored and cut into large chunks, plus pineapple wedges, for garnish, optional
1 tablespoon li hing powder, optional
24 ounces seltzer
16 ounces dark rum, optional

Steps:

  • Add the grapefruit juice, maraschino cherry juice, pineapple chunks and li hing powder, if using, to a blender. Blend on high until smooth.
  • Divide the juice among 8 to 10 large glasses and add ice. Divide the seltzer among the glasses. Float with 2 ounces of dark rum if desired. Top with a wedge of pineapple and a maraschino cherry if using.

I have tried a few different recipes for sweet and sour sauce from this site and from other cookbooks and none of them ever seemed to be quite right, so I experimented a few times and this is the one I liked the best. Now it's the only sauce I use for my sweet and sour pork or chicken.

2 cups pineapple juice, divided
3 tablespoons cornstarch
1 cup white sugar
¾ cup ketchup, or more to taste
⅔ cup apple cider vinegar
2 tablespoons soy sauce, or more to taste
2 tablespoons crushed pineapple, or more to taste
1 teaspoon garlic powder

Steps:

  • Whisk 1/4 cup pineapple juice and cornstarch together in a small bowl until smooth.
  • Combine cornstarch mixture, remaining 1 3/4 cup pineapple juice, sugar, ketchup, vinegar, soy sauce, crushed pineapple, and garlic powder in a large pot over high heat. Cook, stirring frequently, until sauce comes to a gentle boil. Reduce heat and continue to simmer until sauce is clear and reaches desired consistency, 15 to 25 minutes.

Steps:

  • Peel and chop the pineapple,including the core.Split vanilla beans lengthwise.Place all ingredients in a sterile wide mouthed glass or ceramic jar and seal.
  • Set aside for 1 week in a cool dark place,shaking the jar daily to agitate ingredients and release their flavors.
  • Strain,transfer to a decorative bottle and serve as desired.

I grew up with a father who is 'allergic' to the smell of butter (his other 'allergies' include cilantro and lamb). As such, our French toast, along with any other sauteing endeavors, were prepared using oil. I've had French toast numerous times and wanted try a different approach today. And that is when pineapple sage-scented challah French toast was born. Welcome to the world! I hope you have a long, successful life.

½ cup 1% milk, divided
¼ cup fresh pineapple sage leaves
1 egg, beaten
2 teaspoons brown sugar
1 splash vanilla extract
2 thick slices raisin challah bread
1 tablespoon vegetable oil, or as needed

Steps:

  • Stir 1/4 milk and sage leaves together in a microwave-safe bowl. Microwave for 1 minute; cool. Strain and discard leaves and reserve 'scented' milk.
  • Whisk remaining milk, egg, brown sugar, and vanilla extract together in a bowl. Add sage-scented milk to egg mixture and whisk.
  • Soak challah bread slices in the egg mixture until saturated, about 2 minutes per side.
  • Heat vegetable oil in a large skillet over medium-high heat. Cook soaked bread slices in hot oil until golden and crispy, 2 to 3 minutes per side.
