RIBBON FINGER SANDWICHES (AKA TEA SANDWICHES)



Ribbon Finger Sandwiches (AKA Tea Sandwiches) image

These are so dainty and are perfect for little tea parties (or showers, birthdays.. etc..) plus, they are SUPER easy to make.

2 loaves white bread (I like to find the largest size I can find, or 36 large slices)
1 pound sliced deli ham
1/2 cup mayonnaise
12 ounces Cheez Whiz ((the spreadable kind in the glass jar))

Steps:

  • Lay out 3 rows of 12 slices of bread.
  • In a food processor, process ham (in batches if needed) until ham is well chopped. Place ham in a medium-sized bowl and stir in mayonnaise until smooth and well combined.
  • On 12 slices of bread, spread about 2 Tbsp. of Cheez Whiz (like you would peanut butter).
  • On another 12 slices, spread the ham mixture.
  • Top the cheese slice of bread with the ham spread slice, then top with the plain slice of bread. Repeat with all bread slices.
  • Using a sharp knife, gently cut away the crust from each "sandwich". Cut each square in half and then half once again in the same direction (making long rectangles as seen in the picture).
  • Place finger sandwiches (trying not to overlap) in large Ziploc bags and refrigerate until ready to serve (up to a day ahead of time-- *see above note).

1 8 oz. package cream cheese, softened
1 8 oz. can crushed pineapple, drained
1 Tablespoon pineapple juice
Whole Grain Bread (or bread of your choice)

Steps:

  • Combine all the ingredients together and mix well. Blend until smooth.
  • Spread pineapple filling on bread slices to make sandwiches.
  • Use a cookie cutter to cut out the sandwiches or slice off the crusts with a knife.
  • Cover with plastic wrap and refrigerate.

2 cups crushed pineapple, drained
1 cup sugar
1 cup chopped nuts
1 (8 ounce) package cream cheese
milk (optional) or mayonnaise (optional)
bread, slices

Steps:

  • In saucepan combine pineapple and sugar. Bring to boil. Cook until thick, stirring constantly.
  • Cool. Stir in nuts.
  • Soften and mash cheese with enough milk or mayonnaise to make a good spreading consistency.
  • Combine with pineapple mixture.
  • Spread on thin bread, top as sandwich.
  • Trim and cut into squares.

3/4 cup soft butter
1 teaspoon cinnamon or 1 teaspoon nutmeg
20 slices bread, of your choice
1 1/2 cups soft cream cheese
1/2 cup pineapple, finely chopped
1/2 cup finely chopped nuts (for this recipe, I prefer walnuts)

Steps:

  • Combine the butter with cinnamon or nutmeg and spread the mixture over 1 side of each slice of bread.
  • In a small bowl, cream the cream cheese, if necessary, and stir in the pineapple and nuts.
  • Spread the cream cheese mixture evenly over 10 slices of bread and top with the other 10 slices.
  • Remove the crusts and cut.

4 ounces cream cheese, at room temperature
2 tablespoons apricot preserves
sliced ham
4 ounces cream cheese, at room temperature
3/4 cup crushed pineapple, drained
1/3 cup chopped pecans, toasted
1 1/2 cups shredded or chopped chicken
3/4 cup mayonnaise (or more if needed)
1/2 teaspoon curry powder
1/4 cup dried cranberries
1/3 cup celery, diced
1/3 cup slivered almonds, lightly toasted

Steps:

  • For the chicken sandwiches, Chop chicken very finely (I put it in a food processor and pulsed 3-4 times until minced). In a bowl, combine chicken and mayonnaise, and mix well. Add curry and continue to mix. Fold in remaining ingredients. Spread on bread, top with another slice, remove crusts, and cut into shapes.
  • For the pineapple sandwiches, Combine cream cheese and crushed pineapple until well blended. Add pecans and fold into mixture. Spread on one slice of bread and top with other. Remove crusts and cut into shapes as desired.
  • For ham sandwiches, Combine cream cheese and preserves until well blended. Spread a layer on both slices of bread, place a slice of ham on one side, and top with the other side. Cut off crusts and cut in to shapes as desired.

4 cups water
7 tea bags
2 tablespoons sugar
1 cup unsweetened pineapple juice
1/3 cup lemon juice
Optional: Pineapple wedges, lemon slices and fresh mint leaves

Steps:

  • In a large saucepan, bring water to a boil; remove from heat. Add tea bags; steep, covered, 3-5 minutes according to taste. Discard tea bags. Stir in sugar until dissolved. Transfer to a pitcher; cool slightly. Stir in fruit juices., Refrigerate, covered, overnight. Serve over ice. Garnish as desired.

I found a recipe for Pineapple Sandwiches on white bread that was far too sweet. I put some ham on it, and put it on whole grain bread for a slightly healthier alternative that is not nearly so sweet!

1 (15 ounce) can crushed pineapple, drained
1 cup white sugar
1 cup chopped walnuts
1 (8 ounce) package cream cheese, softened
2 tablespoons milk
24 slices whole-grain bread
60 thin slices deli ham

Steps:

  • In a saucepan, combine the pineapple and sugar. Bring to a boil, then cook over medium heat, stirring constantly, until thickened, 5 to 10 minutes. Remove from the heat and cool. When cool, stir in the walnuts.
  • In a medium bowl, stir cream cheese to soften, then stir in enough milk to make it easy to spread. Blend in the pineapple mixture. This part can be made the day before if you like.
  • Spread about 2 tablespoons of the pineapple mixture onto one side of 12 slices of bread. Top each one of these with 5 thin slices of ham. Top with remaining bread slices.

1 (8) oz can crushed pineapple,drained
1/2 c sugar
1 c chopped pecans
1 loaf white sandwich bread

Steps:

  • 1. Combine the softened cream cheese and pineapple. Add the sugar and the pecans to this mixture. Trim the crust from the bread slices. Spread the cheese mixture on the bread slices and make into sandwiches. Place the sandwiches on a tray and cover with plastic wrap. Chill
  • 2. When you are ready to serve, cut the sandwiches into thin slices about 1 inch in width and place on a decorative tray.
