1 cup corn flake crumbs
1/3 cup parsley
2 eggs
2 tablespoons soy sauce
1/4 teaspoon pepper
1/2 teaspoon garlic powder
1/3 cup ketchup
2 tablespoons onions, minced
1 (1 lb) can jellied cranberry sauce
12 ounces chili sauce
2 tablespoons brown sugar
1 tablespoon lemon juice

Steps:

  • Preheat oven to 350°F.
  • In a large bowl combine, beef, cornflake crumbs, parsley, eggs, soy sauce, pepper, garlic powder, ketchup, and minced onion.
  • Blend well.
  • Form mixture into meatballs.
  • Arrange on a 15 x 10 pan.
  • In a medium saucepan combine cranberry sauce, chili sauce, brown sugar, and lemon juice.
  • Cook over medium head stirring constantly until mixture is smooth and cranberry sauce is melted.
  • Pour over meatballs.
  • Bake uncovered 30 minutes.

These zippy ground beef meatballs are my favorites, and the recipe is so easy. Cranberry, chili and picante sauce sound like an unusual combination, but the flavors blend deliciously. Our nine grandchildren request these meatballs often.

2 eggs, lightly beaten
1/3 cup ketchup
1/3 cup minced fresh parsley
2 tablespoons soy sauce
2 tablespoons dried minced onion
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1 cup crushed saltines (about 30 crackers)
2 pounds lean ground beef (90% lean)
SAUCE:
1 can (14 ounces) jellied cranberry sauce
1 cup chili sauce
1/4 cup picante sauce
2 tablespoons brown sugar
1 tablespoon lemon juice
Hot cooked noodles, optional

Steps:

  • In a large bowl, combine the eggs, ketchup, parsley, soy sauce, onion, garlic powder and pepper. Add cracker crumbs. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. , In a skillet, brown meatballs over medium heat. 1 pound finely ground lean veal
1 tablespoon butter
1/3 cup finely minced onions
1/4 cup fine fresh bread crumbs
2 tablespoons milk
1 small egg, lightly beaten
Salt to taste, if desired
Freshly ground pepper to taste
1 teaspoon dried marjoram, crushed
2 tablespoons finely chopped parsley
1/4 cup drained capers
1/4 cup flour
1 tablespoon corn, peanut or vegetable oil
1/4 cup dry white wine

Steps:

  • Put the meat in a mixing bowl.
  • Heat the butter in a saucepan and add the onions. Cook, stirring, until the onions are wilted. Set aside and let cool briefly.
  • Soak the bread crumbs in the milk and add this to the meat. Add the egg, cooked onions, salt and pepper. Add the marjoram and parsley and blend well.
  • Divide the mixture into 14 portions and flatten each. Make a slight depression in the center of each meatball. Add an equal portion of the capers in the center of each. Bring up the edges and shape into balls, enclosing the capers in the center.
  • Dredge each ball in flour and shake off excess.
  • Heat the oil in a heavy, nonstick skillet and add the meatballs without crowding. Cook, turning carefully, until the meatballs are browned on all sides, about 8 to 10 minutes. Add the wine and cover closely. Let simmer 12 minutes. Serve with a little of the hot pan liquid spooned over.
