PIQUANT MEATBALLS
These meatballs, baked in a well-seasoned sauce, are always on the menu for our family's informal Christmas Eve get-togethers. Leftovers-- if there are any-- are a cinch to reheat in a slow cooker.

PICANTE CRANBERRY MEATBALLS
These zippy ground beef meatballs are my favorites, and the recipe is so easy. Cranberry, chili and picante sauce sound like an unusual combination, but the flavors blend deliciously. Our nine grandchildren request these meatballs often.

Steps:
- Put the meat in a mixing bowl.
- Heat the butter in a saucepan and add the onions. Cook, stirring, until the onions are wilted. Set aside and let cool briefly.
- Soak the bread crumbs in the milk and add this to the meat. Add the egg, cooked onions, salt and pepper. Add the marjoram and parsley and blend well.
- Divide the mixture into 14 portions and flatten each. Make a slight depression in the center of each meatball. Add an equal portion of the capers in the center of each. Bring up the edges and shape into balls, enclosing the capers in the center.
- Dredge each ball in flour and shake off excess.
- Heat the oil in a heavy, nonstick skillet and add the meatballs without crowding. Cook, turning carefully, until the meatballs are browned on all sides, about 8 to 10 minutes. Add the wine and cover closely. Let simmer 12 minutes. Serve with a little of the hot pan liquid spooned over.

- In a large mixing bowl, combine ground beef and pork and stir. Add in onion, salt & pepper, Swedish Savory Sweet spice and thoroughly mix. Using your hands, make ~16-18 meatballs.
- Pre heat oven on 350 deg. Heat a large cast iron skillet or another oven safe pan on Med-High and add 2 tbsp of butter. As soon as butter melts, cook half the meatballs for ~2 mins per side, turning as you go to brown all sides. Adding the other 2 tbsp of butter, repeat the process with the second batch of meatballs. Remove from heat to a paper towel lined plate.
- Add all meatballs back to pan and then place in oven. Cook for ~10 mins to finish the meatballs. Serve with or without gravy. Garnish with fresh herbs. [See our digital recipe to make a quick gravy from the pan drippings]
