- Preheat oven to 400°. In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in pizza sauce and mushrooms; set aside. , Cut bread in half lengthwise, then into eight pieces. Spread meat sauce on bread; place on a greased baking sheet. Sprinkle with mozzarella. Bake, uncovered, 10 minutes or until cheese melted and bubbly.

PISSALADIèRE (FRENCH-STYLE PIZZA)

- Preheat the oven according to the pie crust package directions. Spay a 9-inch tart pan with the cooking spray and place on a baking sheet. Gently place the dough into the pan, smoothing the edges up the sides of the pan. Remove any excess dough.
- Prick the center of the dough several times with a fork. Bake according to the package directions until lightly golden.
- Remove from the oven and set aside. Turn off the oven.
- Add the olive oil to a large skillet over medium heat. When hot, reduce the heat to medium-low, add the onions, salt and black pepper, and cook, stirring occasionally for about 15 minutes.
- Preheat the oven to 350 degrees F.
- After cooking the onions for about 10 minutes, add the garlic and the thyme. Continue cooking for another 5 minutes or so. When the onions are golden, add the tomatoes in juice, anchovy paste, and the red pepper flakes. Stir to combine, and cook for another 5-8 minutes, or until the liquid from the tomatoes has been absorbed and the mixture thickens.
- Transfer the mixture to the tart pan, spreading it out evenly. Top with the black olives.
- Place the pan back in the oven for about 5 minutes.
- Remove from the oven and garnish with fresh thyme.

FRENCH BREAD PIZZAS

- For the pizza base: Preheat the oven to 375 degrees F.
- Lay the rolls cut-side up on a large baking sheet. Top each half with marinara sauce (or pesto for the tomato basil pizzas), followed by the mozzarella. Then add your toppings of choice. See below for directions for assembling specific pizzas.
- Once the pizzas are assembled, put the baking sheet on the lowest rack for 8 to 10 minutes. Then turn up the heat to 425 degrees F and put the sheet on the highest rack until the cheese starts to bubble a bit and turns golden. Remove and serve immediately! Cut the pizzas in half right across the middle so there are mini French bread pizzas for everyone.
- Pizza Varieties:
- For the Canadian bacon and pineapple pizzas: Top with the Canadian bacon slices and pineapple and bake according to the directions above.
- For the Greek salad pizzas: Leave off the sauce and brush the sliced rolls with 2 tablespoons of the olive oil; sprinkle with salt and pepper. Top with the mozzarella and bake according to the directions above.
- While the pizzas are baking, toss together the olives, feta, tomatoes, cucumbers, parsley, the remaining 3 tablespoons olive oil and salt and pepper to taste in a medium bowl. Top the cooked pizzas with the chopped Greek salad.
- For the pepperoni and jalapeno pizzas: Top with the pepperoni and jalapeno slices and bake according to the directions above.
- For the tomato basil pizzas: Use pesto instead of the marinara sauce, and top with the tomato slices. Drizzle with the olive oil and sprinkle with salt and pepper. Bake according to the directions above. Top the cooked pizzas with basil leaves.
- For the hamburger pizzas: Heat the olive oil in a skillet over medium-high heat. Add the ground beef, red pepper flakes and salt and pepper and saute until the beef is no longer pink. Top the rolls with the sauteed ground beef and bake according to the directions above.
- For the hamburger taco pizzas: Top with the Cheddar and ground beef and bake according to the directions above. Top the cooked pizzas with the chopped lettuce and tomatoes.

- In a large mixing bowl, combine flour, salt, and sugar. Mix well, then cut in shortening until mixture resembles coarse meal.
- In a small bowl, combine egg, vinegar, and 4 tablespoons of water. Whisk together, then add gradually to flour mixture, stirring with a fork. Mix until dough forms a ball. Add one more tablespoon of water if necessary.
- Allow dough to rest in refrigerator 10 minutes before rolling out.

- Add sugar to water. Dissolve yeast in water.
- Add 4 cups flour and salt.
- Beat well with wooden spoon.
- Add the rest of the flour one cup at a time.
- When dough starts to pull away from the side of the bowl, turn out on floured board and knead until smooth.
- Place dough in a bowl that has been oiled w/ olive oil.
- Cover and let rise until doubled in bulk.
- Cut into two portions and let rest for 15 minutes.
- Pat or roll out in pans.
- I use 15 1/2 by 10 1/2 jelly roll pans.
- Sprinkle edges of crust with cornmeal if you like.
- Spread with your favorite sauce, cheeses and topping.
- Most pizza is cooked on high heat 500°F+ for 15-20 minutes until cheese in the middle is bubbly and the bottom of the crust is browned.
- A hint-- Pizza cooks from the outside in so don't overload the middle of the pizza too much-- and have the cheese,sauce and toppings go right to the edge.

- Saute garlic and onion in oil until onion is transparent and set aside. Cut tomatoes into chunks and combine with olives, parsley, basil, and peppercorn and set aside.

- Preheat oven to 425°. Prepare pizza dough according to package directions. With floured hands, press dough onto a greased 12-in. pizza pan. , Drizzle 1 tablespoon olive oil over dough and sprinkle with sliced garlic. Bake until crust is lightly browned, 10-12 minutes. FAMOUS CALIFORNIA PIZZA DOUGH
One product of my online interview with Wolfgang Puck was being given his pizza dough recipe to publish. I don't think this recipe is any kind of secret, and I'm sure it's been published many times, but I had never personally tried it, so I decided to do this recipe check out this iconic dough for myself.

- Combine yeast, honey, and 1/4 cup warm water in a large bowl with a whisk. Let stand to dissolve, about 10 minutes.
- Add salt, 1 tablespoon olive oil, remaining 3/4 cup warm water, and 1 cup flour to the mixture and stir until a batter forms. Add another 1 cup flour; stir to combine. Add 1/2 cup more flour and combine.
- Turn dough out onto a surface dusted with 1/4 cup flour. Knead until a smooth, fairly firm, slightly sticky dough is achieved, adding more flour as needed.
- Transfer dough to a lightly oiled bowl and cover with a damp towel. Let sit in a warm place until doubled in size, 30 to 40 minutes.
- Turn dough out onto a lightly floured cutting board and pat down with your hand. Divide dough into 4 equal pieces. Stretch and fold each piece down and under, tucking as you go, to form pizza dough rounds.
- Cover with a towel and let sit in a warm place until doubled in size, 20 to 30 minutes.
- Preheat the oven to 450 degrees F (230 degrees C). Dust a baking sheet with cornmeal.
- Transfer dough rounds to a lightly floured board and press each piece out to desired thickness, starting in the center, until 8 to 10 inches wide. Form a crust shape around the outer edges with your fingertips.
- Transfer one round of pizza dough to the prepared baking sheet and brush with 1 tablespoon olive oil. Top with any sauce and toppings you like.
- Bake in the lower rack of the preheated oven for 5 minutes. Move to the center of the oven and continue to bake until golden, about 10 minutes more. Repeat to bake remaining pizzas.

- Preheat the oven to 425°F (220°C).
- Spread the McCain® Quick Cook Crinkle Fries in an even layer on a nonstick baking sheet and bake until cooked through, about 10 minutes. Remove the fries from the oven and let cool slightly, about 5 minutes.
- Spread a single layer of fries in a 10-inch cast iron skillet. Sprinkle with about 2 ounces of the shredded mozzarella. Top with another layer of fries and another 2 ounces of mozzarella. Use any smaller remaining fries to create a raised crust around the edge of the pan.
- Transfer the skillet to the oven and bake until the cheese has melted, about 5 minutes.
