FRUIT PIZZA I
A cookie dough crust, cream cheese filling, and fruit topping. Tip: For a quick crust, use one package of ready made sugar cookie dough rolled out to fit a pizza pan. Use an assortment of fresh fruit such as bananas, peaches, blueberries, kiwi, pineapple, and strawberries.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, cream together the butter and 3/4 cup sugar until smooth. Mix in egg. combine the flour, cream of tartar, baking soda and salt; stir into the creamed mixture until just blended. Press dough into an ungreased pizza pan.
- Bake in preheated oven for 8 to 10 minutes, or until lightly browned. Cool.
- In a large bowl, beat cream cheese with 1/2 cup sugar and vanilla until light. Spread on cooled crust.
- Arrange desired fruit on top of filling, and chill.

SUGAR COOKIE CRUST FRUIT PIZZA
Steps:
- For the crust: Preheat the oven to 350 degrees F. Spray a 10- to 12-inch tart pan or pizza pan with nonstick cooking spray.
- In a medium bowl, whisk together the flour, baking powder and salt. In a large mixing bowl, cream together the butter and sugars until smooth using a handheld mixer. Add in the egg and vanilla and mix until incorporated. Slowly incorporate the flour mixture into the creamed butter, and mix until blended. Remove the dough from the bowl and press it into the prepared pan. (You may need to dust your hands with some flour to prevent the dough from sticking to them; it is a wet dough when it comes together.) Bake until the edges just start to brown, 10 to 12 minutes. Remove from the oven and let cool.
- For the spread: In a large mixing bowl, beat the cream cheese, confectioners' sugar, vanilla, lemon zest and salt until smooth. Spread evenly on the cooled crust.
- For the glaze: Add the marmalade, 2 tablespoons water and the herbes de Provence to a small skillet and cook over medium heat until loosened and warm.
- To assemble: Arrange the fresh fruit in the desired pattern on top of the pizza. Brush the fruit with the glaze. Slice and serve.

- Pat cookie dough into an ungreased 14-in. pizza pan. Bake at 350° for 15-18 minutes or until deep golden brown; cool. , In a bowl, beat the cream cheese and confectioners' sugar until smooth. Fold in whipped topping. Spread over crust. Arrange fruit on top. , In a saucepan, bring the sugar, orange juice, water, lemon juice, cornstarch and salt to a boil, stirring constantly for 2 minutes or until thickened. Cool; brush over fruit. - Heat oven to 375°F. Lightly spray 14-inch pizza pan or 15x10-inch baking pan with cooking spray.

- In a large bowl, combine flour and confectioners' sugar. Cut in butter until crumbly. Press onto an ungreased 12-in. pizza pan. Bake at 350° for 12-15 minutes or until very lightly browned. - Preheat oven to 350*F.
- Spray 12 inch pizza pan with cooking spray.
- Place crust on pan and bake for 8-10 minutes.

OAT CRUST FRUIT PIZZA
I got this recipe from a co-worker. It's not so overly sweet like some fruit pizza's are that use the pre-made sugar cookie dough for the crust. Very good tasting. I usually make the crust the day before and keep it covered with saran wrap;

- For crust, combine butter, brown sugar, flour and oatmeal.
- Press into ungreased cookie sheet.
- Bake at 375 for 15 minute.

- First, prepare the cinnamon sugar butter by placing all ingredients into a small bowl and whipping to combine. Set aside.
- Next, follow the direction on the back of your pizza crust and preheat the oven. Spread cinnamon sugar butter on the top of your pizza crust and then bake following the instructions or until the pizza crust is crispy. We baked our pizza crust directly on the racks of the oven at 400ºF for around 6-8 minutes. Just make sure to watch that it does not burn! Once the pizza is done, set aside to let cool for 5 minutes.
- Meanwhile, create the cream cheese filling. Place cream cheese and honey in a medium bowl. Use a hand mixer to whip on high for around 30 seconds. Set aside. Next, place heavy cream and vanilla in a medium bowl. Use a hand mixer and whip on medium/high for 4-6 minutes or until stiff peaks begin to form. Transfer the whipped cream into the same bowl as the cream cheese and use a spatula to gently fold them together until combined. Make sure not to over mix or the whipped cream will lose its airiness.
- Once the pizza crust has cooled, assemble the fruit pizza. Spread the cream cheese filling onto the crust and evenly spread it out with a spatula. Then, top it with sliced fresh fruit and mini chocolate chips.
