How to Make Homemade Pizza Sauce image

This is my new and improved version. And by 'new and improved,' I mean 'old and secret.' Here is my top-secret formula. The next time you're making homemade pizza, you might as well make some sauce too.

2 tablespoons olive oil
2 anchovy fillets
3 cloves garlic, minced
2 tablespoons finely chopped fresh oregano leaves
½ teaspoon red pepper flakes
½ teaspoon dried oregano
1 (28 ounce) can whole peeled tomatoes (preferably San Marzano), crushed
salt to taste
½ teaspoon white sugar
1 pinch freshly ground black pepper
1 small pinch baking soda

Steps:

  • Heat olive oil over medium-low heat in a saucepan; stir anchovy fillets into olive oil and cook, stirring often, until the fillets begin to sizzle, about 1 minute. Mix garlic into oil and cook just until fragrant, 1 minute more. Add fresh oregano and reduce heat to low; cook until oregano is wilted, 2 or 3 more minutes.
  • Mix red pepper flakes, dried oregano, and tomatoes into olive oil mixture. Bring sauce to a simmer and season with salt, sugar, and black pepper. Turn heat to low; simmer sauce until thickened and oil rises to the top, 35 to 40 minutes, stirring occasionally.
  • Stir baking soda into pizza sauce, mixing until thoroughly combined.

2 slices bacon, cut into 1/2-inch pieces
1/2 pound beef boneless round steak, cut into 1/2-inch pieces
2 cups Progresso™ beef broth (from 32 oz carton)
1 can (14 1/2 ounces) Muir Glen™ diced tomatoes, undrained
2 cups water
1/4 cup chili sauce
1/2 teaspoon caraway seed
2 cups coarsely chopped cabbage
1 cup julienne strips carrots
1/4 cup quick-cooking barley

Steps:

  • Cook bacon in 3-quart saucepan over medium heat until crisp. Add beef; cook and stir about 5 minutes or until brown.
  • Stir in broth, tomatoes, water, chili sauce and caraway seed. Heat to boiling; reduce heat. Simmer uncovered 10 minutes.
  • Stir in remaining ingredients. Simmer 15 to 20 minutes or until beef and barley are tender.

My friend, Dan, gave me this recipe more than 30 years ago. It is delicious and so easy to make, and it freezes really well. The caraway seeds are the secret. When I make this sauce, I usually double it. This way, I can use about one-quarter of the mixture on the pizzas for that night. Then I freeze the rest-in three separate containers-for later use. A quarter of the mixture will cover about two large pizzas, but it depends on your preferences.

1 (8 ounce) can tomato sauce (puree)
1 (8 ounce) can tomato paste
1/4 teaspoon ground thyme (or crush leaf well)
1/4 teaspoon ground oregano (or crush leaf well)
1/4 teaspoon ground rosemary (or crush leaf well)
1/4-1/2 teaspoon caraway seed (do not crush)
1 garlic clove, crushed (or more)
1 bay leaf, broken into small pieces

Steps:

  • Combine all ingredients in a saucepan.
  • Bring to a boil and simmer for 10-15 minutes. Stir occasionally.
  • Cool slightly before using.
  • Cool completely before freezing.

SAUTEED CHICKEN WITH CARAWAY AND CREAM



Sauteed Chicken with Caraway and Cream image

6 skinless, boneless whole chicken breasts
Salt and freshly ground black pepper
1/2 cup vegetable oil
10 white mushrooms, sliced
6 shallots, minced
2 tablespoons caraway seeds, chopped
2 cups Madeira
1-ounce morel or other dried mushrooms, soaked in 3/4 cup hot water for 30 minutes, and chopped roughly
4 cups chicken stock
2 cups heavy cream
1/2 teaspoon salt
1/4 teaspoon black pepper
3 dashes hot sauce

Steps:

  • Cut chicken into 1/2-inch wide strips and season with salt and pepper. Combine in a medium mixing bowl with 2 tablespoons vegetable oil. Toss to coat.
  • Heat remaining oil in a large skillet over high heat. Fry chicken strips until golden all over but pink inside, about 1 minute per side. Remove from pan and reserve.
  • In same pan, add white mushrooms and shallots and cook over moderate heat until soft, about 2 minutes. Add caraway seeds and carefully cook just until aroma is released, about 1 minute. (It's easy to burn the seeds.) Remove from heat. Add Madeira and cook over high heat until reduced by half, and stir in drained soaked mushrooms, stock and cream. Reduce by about half, or until cream has thickened sauce to suit your taste.
  • Reduce heat, stir in remaining seasonings, and return chicken and juices to pan to reheat. When sauce returns to a boil, remove from heat, and serve. Spoon chicken over a bed of Wide Egg Noodles. Ladle on sauce and serve immediately.

1 (15 ounce) can tomato sauce
1 (4 ounce) can tomato paste
2 tablespoons onions (minced)
2 tablespoons parmesan cheese
2 tablespoons olive oil
1 teaspoon lemon juice
1 teaspoon oregano
1 teaspoon dried leaf basil (dried or chopped fresh)
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon garlic (minced)
1/2 teaspoon fennel seed
1/4 teaspoon salt

Steps:

  • Combine all ingredients except tomato paste.
  • Cover and simmer over low heat for 20-30 minutes, stirring occasionally.
  • Remove heat.
  • Stir in tomato paste to thicken.
