2 Tbsp. olive oil
2 cloves garlic, minced
1 tsp. dried Italian seasoning
2 lb. Yukon gold potatoes (about 8), thinly sliced
1 cup KRAFT Shredded Mozzarella Cheese
12 slices OSCAR MAYER Pepperoni

Steps:

  • Heat oil in large skillet on medium heat. Add garlic and seasoning; cook and stir 30 sec.
  • Stir in potatoes; cover. Cook on medium-low heat 20 to 25 min. or until tender, stirring occasionally.
  • Top with cheese and pepperoni; cook, covered, 1 to 2 min. or until cheese is melted.

CAST-IRON PIZZA

1 pound frozen store-bought pizza dough, thawed and risen
1/4 cup olive oil
1/2 cup store-bought pizza sauce
1/2 cup pepperoni
4 ounces fresh mozzarella pearls
1/4 cup torn fresh basil

Steps:

  • Place a 12-inch cast-iron skillet in the oven and preheat to 500 degrees F.
  • Meanwhile, roll or stretch the dough into a 14-inch circle. Carefully remove the skillet from the oven. Drizzle two thirds of the olive oil into the skillet, then carefully transfer the dough to the skillet, pressing the dough up the edges. Spread the sauce over the dough, making sure to get all the way to the edges. Shingle the pepperoni over the sauce and top with the mozzarella pearls. Brush the exposed dough with the remaining olive oil. Bake on the bottom rack until golden brown, 12 to 14 minutes.
  • Transfer to a cutting board, top with torn basil, cut into slices and serve.

ROASTED PIZZA POTATOES

2 1/2 pounds Yukon gold potatoes, cut into 1/2- to 3/4-inch bites (I used Klondike Goldust for these)
2 teaspoons dried oregano (or dried pizza seasoning)
Coarse salt
1 to 2 tablespoons extra-virgin olive oil
One 8-ounce block mozzarella cheese, grated
About 15 pepperoni slices
Pizza sauce, for serving
1 tablespoon chopped fresh parsley or chives, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Arrange the potatoes in a 9-by-13-inch baking dish and season with the dried oregano and a good pinch of salt. Drizzle with the oil and toss to coat with your fingers. Roast for about 1 hour. (I went 1 hour and 10 minutes, just for extra browning.)
  • Remove the potatoes from the oven and switch the oven to broil.
  • Sprinkle the grated cheese over the potatoes and arrange the pepperoni in a single layer over the cheese. Broil for 2 to 3 minutes; don't take your eyes off it (see Cook's Note)! This happens fast, and all we want is browning and bubbling, and for the pepperonis to crisp and curl. Serve immediately with pizza sauce and a sprinkle of parsley or chives!

1/2 pound bulk Italian sausage
1 package (4.9 ounces) Betty Crocker™ au gratin potatoes
2 1/4 cups hot water
2/3 cup milk
1 package (10 ounces) frozen Italian green beans
1 can (4 ounces) mushroom pieces and stems, drained
1/3 cup pizza or spaghetti sauce
1/2 cup shredded mozzarella cheese (2 ounces)
Grated Parmesan cheese, if desired

Steps:

  • Cook sausage in 10-inch skillet until no longer pink; drain. Stir in Potatoes, Sauce Mix, hot water and milk; stir in green beans and mushrooms. Heat to boiling; reduce heat.
  • Cover and simmer 16 to 17 minutes, stirring occasionally, until potatoes are tender Sprinkle with mozzarella cheese; pour pizza sauce over cheese.
  • Sprinkle lightly with Parmesan cheese. Cover and heat, without stirring, 1 to 3 minutes or until cheese is melted.

8 ounces fingerling potatoes (8 to 12)
2 lemons, juiced
Coarse salt
1/3 cup extra-virgin olive oil, divided
1 pound cipollini onions, halved and sliced lengthwise (about 4 cups)
1 tablespoon coarsely chopped fresh rosemary leaves
1 pound store-bought pizza dough, thawed if frozen, or your favorite homemade dough
All-purpose flour, for rolling
Coarse yellow cornmeal, for pizza peel
4 ounces soft plain goat cheese, divided
Flaky sea salt, such as Maldon

Steps:

  • Slice potatoes very thin with a mandoline, and place in a bowl. Pour lemon juice over potatoes, and add a pinch of coarse salt. Let sit at least 1 hour 30 minutes.
  • Heat a large skillet over medium heat, and add 1 tablespoon oil. Add onions, and stir to coat. Reduce heat to low, and cook 10 minutes. Season onions with coarse salt, and cook, stirring frequently, until rich brown in color, 45 minutes to 1 hour (add a little water to skillet if onions begin to stick). Remove from heat, and let cool.
  • Heat remaining oil and the rosemary in a small saucepan over low heat 15 minutes (do not let boil). Let cool, then pour through a fine sieve into a bowl.
  • Meanwhile, place a pizza stone on middle rack of oven, and preheat oven to 500 degrees, at least 30 minutes. Divide dough into 2 pieces, and form each into a ball. Loosely cover with a kitchen towel or plastic wrap, and let stand 15 minutes. Roll each ball of dough into a 12-inch round or an oval about 1/8-inch thick on a lightly floured work surface with a lightly floured rolling pin (or stretch it with your hands). Lightly dust a wooden pizza peel with cornmeal, and place 1 round of dough on peel. Generously brush dough with rosemary oil. Place half the onions on dough, leaving a 1/2-inch border. Drain potatoes, discarding lemon juice, and cover onions with half the potatoes. Crumble half the goat cheese over potatoes.
  • Slide pizza from peel to pizza stone, and bake until crust is golden brown and potatoes are cooked, 10 to 12 minutes. Transfer pizza to a cutting board, and sprinkle with sea salt. Repeat with second pizza.

1 package (6-1/2 ounces) pizza crust mix
1 can (8 ounces) tomato sauce
1 teaspoon oregano
1/2 cup pepperoni slices
1/4 cup chopped onion
1/4 cup chopped green pepper
1/4 cup sliced ripe olives
2 cups shredded mozzarella cheese

Steps:

  • Grease a 12-in. electric or stove-top skillet. Prepare pizza crust according to package directions. , Line bottom and 1/2 in. up the sides of the skillet with dough. Combine tomato sauce, Italian seasoning and oregano; spread over dough. Layer pepperoni, onion, green pepper and olives over sauce; sprinkle with cheese. , Cover and cook over medium heat (set electric skillet to 375°) for 15 minutes or until crust is brown on bottom and cheese is melted. Slide out onto a cutting board and cut into wedges or squares. Serve immediately.

1/2 cup 2% milk
1 teaspoon Italian seasoning
1/2 teaspoon garlic salt
1/4 teaspoon crushed red pepper flakes
1 package (32 ounces) frozen cubed hash brown potatoes, thawed
15 slices pepperoni, chopped
2 cups shredded Italian cheese blend

Steps:

  • In a large skillet, cook the beef, mushrooms, green pepper and onion until meat is no longer pink; drain. , Meanwhile, in a large bowl, combine the pizza sauce, soup, milk, Italian seasoning, garlic salt and pepper flakes. 1 tablespoon vegetable oil
1 (14 ounce) jar pizza sauce
1 green bell pepper, chopped
1 onion, chopped
2 fresh mushrooms, chopped
1 (3 ounce) package sliced pepperoni
1 (16 ounce) package shredded mozzarella cheese

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Cover a baking sheet with aluminum foil. Lightly grease the foil.
  • Arrange the potato slices on the prepared baking sheet, and drizzle with oil. Bake 20 minutes in the preheated oven.
  • Remove potatoes from heat, and turn. Drizzle with sauce, and top with green pepper, onion, mushrooms, and pepperoni. Top with mozzarella cheese.
  • Return topped potatoes to the oven, and continue baking 10 minutes, or until cheese is melted.

1 pound bacon strips, chopped
1 large onion, chopped
1/2 cup chopped sweet red pepper
2 pounds potatoes (about 3 large), peeled and cut into 1-inch cubes
1 tube (13.8 ounces) refrigerated pizza crust
1/4 cup 2% milk
1/4 teaspoon salt
1-1/2 cups shredded cheddar cheese
1-1/2 cups shredded part-skim mozzarella cheese
Optional: Minced fresh chives and sour cream

Steps:

  • Preheat oven to 350°. In a large skillet, cook bacon over medium heat until partially cooked but not crisp, stirring occasionally. Add onion and pepper; cook and stir until bacon is crisp. Drain well., Place potatoes and water to cover in a large saucepan; bring to a boil. Reduce heat; cook, uncovered, until tender, 10-15 minutes., Meanwhile, unroll and press pizza crust onto an ungreased 14-in. pizza pan; prick several times with a fork. Bake until lightly browned, about 15 minutes. Increase oven setting to 375°., Drain potatoes; return to pan. Mash potatoes, gradually adding milk and salt. Spread over crust.
