Best Pizza Sauce Recipe (No Cook, Authentic Italian Style) image

The best and easiest Italian pizza sauce recipe.

14 oz (400g) can of European tomatoes (preferably pomodoro pelato S.Marzano dell'Agro Sarnese-Nocerino D.O.P) THIS IS THE MOST IMPORTANT INGREDIENT-do not use inferior quality tomatoes
3 Tbsp good quality extra virgin olive oil
1/2 tsp sea salt
a few pinches of dried oregano
2 or 3 leaves of fresh Italian basil, torn into small pieces
(optional: a clove of fresh garlic, minced) my Italian family uses garlic, but it's only used on one type of pizza in Naples

Steps:

  • Pour the can of tomatoes into a bowl. If it is pomodorini or whole tomatoes, crush them with your hands, or you can roughly cut them with kitchen shears.
  • Add the rest of the ingredients and mix well. Taste for salt and add if needed. (Don't add a lot of sauce to the pizza dough; you don't want to drown it.)

An American Italian pizza with caramelized apples and Gorgonzola

10 oz pizza dough (280 g)
3 tbsp sour cream
½ tsp extra virgin olive oil
1 pinch salt
½ tsp fresh rosemary (chopped)
4 ½ fresh mozzarella cheese (125 g)
1 green apple (Granny Smith, Honey Crisp)
2 ¼ oz Gorgonzola cheese (65 g or about 4 tbsp)

Steps:

  • Preheat your oven to the highest heat possible.
  • Form a ball from the pizza dough. Start by making a circular motion with the palm of your hand, with some pressure. Then release the pressure gradually until you get a nice ball shape. Put your pizza dough balls on a lightly floured work surface. Dust them with some more flour, and let them proof covered with a kitchen towel for another 15 minutes.
  • In a small bowl mix 3 tbsp of sour cream and 1/2 tsp extra virgin olive oil. This will serve as your pizza sauce for your Trieste pizza.
  • Cut the apple in quarters and remove the core. Slice it thinly, you need about 1/10 inch or 2-3 mm thick slices.
  • Shape your dough to form a large, thin disk and place it in a pizza pan.
  • Spread the sour cream sauce over the pizza dough. Starting from the middle with a back of a spoon or a ladle, using circular motions towards the edges, make sure the sour cream covers your pizza dough. Leave an edge about 1 inch (2-3 cm) thick.
  • Chop the rosemary and sprinkle some salt and rosemary over the sauce.
  • Add the mozzarella cheese. Just tear it in bite size pieces, and place them over the sauce.
  • Put your apple slices on top of your pizza Trieste.
  • Finally crumble the Gorgonzola over the pizza.
  • Transfer your pizza Trieste into the oven. Bake for 10 minutes, or until the edges are slightly browned.

  • Dissolve the yeast in 1/4 cup of warm water, then combine with 1/3 cup of flour and 1 teaspoon of sugar to form a batter. Set aside to rest for about 1 hour, until it has doubled in volume. Add 1 cup of flour, 1/4 cup of sugar, 2 tablespoons of melted butter and 2 lightly beaten egg yolks to the batter and mix until you have a smooth, compact dough. Form it into a ball and set aside in a warm place to rise for 2 hours, until it has doubled in volume.
  • Knead the dough with 2 cups of flour, 1/4 cup of sugar, 4 tablespoons of melted butter, 2 egg yolks and 1 whole egg, lightly beaten, 1 1/2 teaspoons of salt, grated zest of 1/2 an orange and 1 tablespoon of Marsala wine. Knead the dough for 10-15 minutes, until it is smooth and compact; form into a ball and place on a baking sheet lined with parchment paper. Beat 1 egg yolk, mix with 1 tablespoon of milk and brush this on the ball of dough; set it aside in a safe place to rise for another hour. Finally, brush it again and make 3 cuts in the top in a sunburst pattern. Bake at 340°F in a static oven for 40-45 minutes. Remove the pinza from the oven and let it cool. Serve with your favorite topping of fruit compote, whipped cream or with cheese and cold cuts.
