2 teaspoons extra-virgin olive oil
1 teaspoon minced garlic
1 (14 ounce) package par-baked flatbread pizza crust
1 cup shredded mozzarella cheese
8 grape tomatoes, cut in half
¼ cup fresh basil leaves
2 teaspoons balsamic glaze

Steps:

  • Preheat oven to 425 degrees F.
  • Cook bacon pieces in a medium nonstick skillet over medium heat until cooked through and browned, 8 to 10 minutes. Transfer to a plate lined with a paper towel and let cool.
  • In a small bowl, combine olive oil and garlic.
  • Place flatbread on a baking sheet and brush with garlic oil. Sprinkle cheese evenly over flatbread. Top with cooked bacon and tomato halves.
  • Bake pizza for 10 minutes or until cheese is melted. Remove from oven.
  • Place basil leaves on pizza. Drizzle balsamic glaze on top. Cut pizza into slices and serve.

1 teaspoon olive oil
3 slices bacon (about 2 ounces), cut into 1/2-inch pieces
1 small onion, peeled, thinly sliced
2 tablespoons mascarpone cheese
1/4 cup farmer's cheese
Freshly grated nutmeg
Freshly ground black pepper
6 ounces Pizza Dough, recipe follows
1/2 cup grated mozzarella
2 tablespoons grated Parmesan
2 tablespoons fresh thyme leaves
1 package active dry or fresh yeast
1 teaspoon honey
1 cup warm water, 105 to 115 degrees F
3 cups all-purpose flour
1 teaspoon kosher salt
1 tablespoon extra-virgin olive oil, plus additional for brushing

Steps:

  • Place a pizza stone on the middle rack of the oven and preheat the oven to 500 degrees F.
  • In a medium size saute pan, add olive oil and heat over medium heat. When the oil is hot, add the bacon and cook until the bacon is very crispy and all of the fat is rendered. Remove the bacon with a slotted spoon and drain on a paper towel-lined plate. Remove all but 2 tablespoons of the bacon fat from the pan and discard. Place the pan over high heat. Add the onions to the hot bacon fat and cook until the onions are well browned, about 8 to 10 minutes, stirring often. Remove to a paper towel lined plate.
  • In a small bowl, combine the mascarpone and farmer's cheeses. Season with nutmeg and black pepper. Reserve.
  • On a lightly floured surface, stretch or roll the dough as thinly as possible, about 14 to 15-inch circle. Evenly spread the mascarpone mixture over the dough. Sprinkle with the mozzarella and Parmesan cheeses, bacon, thyme, and sauteed onion. Bake until the pizza crust is nicely browned, about 8 to 10 minutes.
  • Remove pizza from the oven, transfer to a cutting board, cut into slices and serve immediately.
  • In a small bowl, dissolve the yeast and honey in 1/4 cup warm water.
  • In a food processor, combine the flour and the salt. Add the oil, the yeast mixture, and the remaining 3/4 cup of water and process until the mixture forms a ball. (The pizza dough can also be made in a mixer fitted with a dough hook. Mix on low speed until the mixture comes cleanly away from the sides of the bowl and starts to climb up the dough hook).
  • Turn the dough out onto a clean work surface and knead by hand 2 or 3 minutes longer. The dough should be smooth and firm. Cover the dough with a clean, damp towel and let it rise in a cool spot for about 2 hours. (When ready, the dough will stretch as it is lightly pulled).
  • Divide the dough into 4 balls, about 6 ounces each. Work each ball by pulling down the sides and tucking under the bottom of the ball. Repeat 4 or 5 times. Then on a smooth, unfloured surface, roll the ball under the palm of your hand until the top of the dough is smooth and firm, about 1 minute. Cover the dough with a damp towel and let rest 1 hour. At this point, the balls can be wrapped in plastic and refrigerated for up to 2 days.

  • Preheat oven to 450 degrees F. Lightly spray 1 baking sheet with olive oil cooking spray; set aside.

4 medium Roma tomatoes, sliced 1/4-inch thick
3 ounces cremini mushrooms, sliced
3 ounces oyster mushrooms, sliced
3 ounces portobello mushrooms, sliced
1 ½ tablespoons balsamic vinegar, or more to taste
salt and ground black pepper to taste
1 ½ tablespoons extra-virgin olive oil, or more as needed
2 large sweet onions
2 slices thick-cut, applewood-smoked bacon
1 (12 inch) thin pre-baked pizza crust
2 tablespoons Alfredo sauce, or more to taste
4 ounces Fontina cheese, grated
2 ounces crumbled Gorgonzola cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a nonstick baking sheet with foil.
  • Place tomatoes and mushrooms on the prepared baking sheet; drizzle with 1 tablespoon balsamic vinegar and sprinkle with salt and pepper.
  • Roast in the preheated oven for 20 to 25 minutes, turning halfway through. Remove from the oven and allow to cool to room temperature, about 25 minutes. Leave oven on.
  • Meanwhile, heat 1 1/2 tablespoons olive oil in a large, nonstick skillet over medium-high heat. Add onions, reduce heat to medium, and caramelize until golden brown and soft, turning occasionally, 15 to 20 minutes. Season with salt and pepper and a light drizzle of balsamic vinegar; set aside to cool.
  • Cook bacon on a paper towel-lined, microwave-safe plate on high heat at 1 to 2 minutes intervals until almost crisp. Coarsely chop.
  • Brush sides of the pizza crust with a thin layer of olive oil and place on a pizza pan. Spread Alfredo sauce evenly in a thin layer around the crust, leaving about 1/2 inch crust showing around the edge. Sprinkle with Fontina cheese. Spoon tomato-mushroom mixture over top, then caramelized onions. Sprinkle bacon and Gorgonzola crumbles over the vegetables.
  • Return to the oven and bake until the top is bubbly and starting to turn golden and the edges are golden brown, 15 to 18 minutes.

For the dough:
1 cup lukewarm water
1 teaspoon bread yeast
2 to 2-1/2 cups flour
1/2 teaspoon sea salt
For the topping:
12 ounces white onions, peeled and sliced paper thin
1/2 cup crème fraîche
6 ounces slab bacon, rind removed, cut in matchsticks
Freshly ground black pepper

Steps:

  • 1. To make the dough, pour the water into a large bowl or the bowl of an electric mixer. Mix in the yeast and 1 cup of the flour, mix, then let sit at room temperature until the mixture begins to bubble, about 30 minutes. Add the salt, stir, then add an additional cup of flour. The dough should be quite soft. Cover and let sit at room temperature until the dough has doubled in bulk, about 1-1/2 hours.
  • 2. Preheat the oven to 450 degrees F.
  • 3. Divide the dough in half. Heavily flour a work surface, and roll out the dough to a 15 x 11-inch rectangle (the dough should be paper-thin except at the edges, where it will be slightly thicker.) Carefully transfer the dough to a well-floured baking sheet.
  • 4. Mix the onions and the cream together in a medium-sized bowl and spread half on the dough. Sprinkle half the bacon evenly over the onions and cream. Repeat with the remaining dough, onions, cream, and bacon.
  • 5. Bake the pizzas in the center of the preheated oven until the crust is golden and the onions soften and begin to turn golden, about 20 to 25 minutes. If you can't fit both pizzas on the center rack of the oven, switch them halfway through baking.
  • 6. Remove the pizzas from the oven and slip them onto a work surface. Season with freshly ground black pepper, then cut into serving pieces.

We were watching the baseball game and decided on pizza. This is what I came up with and DH thought it was very good and I should share. So here it is. Please feel free to add more or less of the ingredients to suit your tastes.

1 (11 ounce) thin crust pizza dough (I used Pillsbury but use homemade if desired)
1 (6 1/2 ounce) jar marinated artichoke hearts, coarsely chopped
2 teaspoons jarred minced garlic
1 cup shredded mozzarella cheese (or more, fontina would be good also)
1/4 cup sun-dried tomato alfredo sauce (can use more, we do not like saucy)
4 ounces Canadian bacon, cut into strips
1 (10 ounce) can Rotel tomatoes & chilies, drained
feta cheese
2 slices red onions, coarsely chopped
1/4 teaspoon dried basil
salt and pepper

Steps:

  • Preheat oven to 400 degrees.
  • Spread dough on large greased cookie sheet.
  • Drain artichoke hearts reserving some of the marinade. Set hearts aside.
  • Brush crust with some of the reserved marinade.
  • Brush on garlic.
  • Sprinkle mozzarella cheese over crust.
  • Bake 5 minutes.
  • Remove crust and spoon on sauce to your desire of thickness.
  • Add artichokes, bacon, tomatoes, and onion.
  • Sprinkle as much feta cheese over pizza as desired.
  • Sprinkle basil over crust.
  • Bake 10 to 12 minutes longer or until crust is baked to your choosing.
  • Cut into squares.

12 cups onions, thinly sliced
2 teaspoons fresh rosemary, chopped & divided
1/2 teaspoon salt

1 (12 inch) Boboli pizza crusts
1/2 cup gorgonzola, crumbled
2 tablespoons walnuts, coarsely chopped
1 cup arugula, trimmed

Steps:

  • Cook bacon in a large nonstick skillet over medium heat until crisp. Remove bacon from pan, reserving 2 teaspoons drippings. Set bacon aside.
  • Add oil to bacon drippings in skillet over medium-high heat. Add onion, and sauté 5 minutes, stirring frequently.
  • Stir in 1 teaspoon rosemary, salt, and pepper. Continue cooking 15 to 20 minutes or until onion is a deep golden brown, stirring frequently.
  • Preheat oven to 400°.
  • Place pizza crust on 12-inch pizza pan. Top with onion. Add cheese and walnuts; bake 7-10 minutes or until cheese melts.
  • Remove from oven; top with 1 teaspoon rosemary, reserved bacon and arugula.
