Mofongo con Camarones is a traditional Puerto Rican dish, that is easy to make, and is filled with deliciousness flavor!

4 whole green plantains
1 pound medium shrimp (peeled & deveined )
10 pieces chicharrónes
2 tbsp sofrito
2 tsp garlic (minced)
1/3 cup onion (chopped)
8 oz tomato sauce
1/2 cup water
vegetable oil (for frying)
cilantro (for garnish)
salt (for taste)

Steps:

  • Begin by heating a medium frying pan of three teaspoons of oil. Add the sofrito, garlic, and onion into the pan over high heat. Sauté and stir the ingredients for three to five minutes.
  • Next, lower the heat to simmer and pour the tomato sauce into the frying pan. Also, stir in the medium shrimp and water. Set aside and stir occasionally. Once shrimp are pink, place heat to lowest setting.
  • Heat frying oil in a separate large pan. Place piece by piece of the chicharrónes and deep fry them. Set aside over a wire rack or bowl with a paper towel to cool and soak remaining oil.
  • Peel and chop the green plantains into 1-inch slices. Then, fry the green plantain slices until golden color. Set aside over wire rack. Place three to five fried plantain slices inside pilón while adding chopped up chicharrónes and salt. Mash the ingredients together. You may add a little bit of the cooked shrimp liquid while mashing if the mofongo is too dry. However, make sure mofongo is dry enough to shape.
  • Finally, continue until desired mofongo serving amount inside pilón. While serving, shape mofongo into a ball and place onto the plate and flatten the top. Place shrimp over mofongo and pour liquid over the shrimp. Garnish with cilantro and salt for taste.

2 cups vegetable oil (for frying)
3 plantains (green, unripe)
1 tablespoon garlic paste
6 ounces pork rinds or cracklings (crushed)

Steps:

  • Gather the ingredients.
  • Heat about 2 inches of oil over medium-high heat in a large skillet or deep fryer to 350 F.
  • While the oil is heating up, peel the plantains and cut into 1-inch rounds.
  • Fry the plantains until golden and tender, 4 to 6 minutes.
  • Remove cooked plantains from the pan or fryer to a paper-towel-lined plate.
  • Put the garlic paste in a large bowl or mortar and add the fried plantains, in batches, if necessary. Mash thoroughly.
  • Add the pork rinds. Continue to mash and mix until all of the ingredients are combined. Add salt to taste.
  • Shape the mofongo into 4 balls and serve.
  • Alternatively, you can make the mofongo into a half-dome shape using a small condiment bowl as a mold; push a portion of mofongo down to the bottom of the bowl.
  • With the back of a spoon, smooth over and level off the mix.
  • Then use the spoon to scrape around the bowl and remove the mash in a half-dome shape.

4 large green plantains (peeled and cut into chunks)
Vegetable oil for frying
1 chicken bouillon tablet
11/2 cups water
2 garlic cloves
2 tablespoons olive oil
24 large shrimp (peeled and deveined)
4 large tomatoes (chopped)
1/2 onion (finely chopped)
1 garlic clove (minced)
salt and pepper
1/4 cup red pepper
1/2 teaspoon ground cumin
1/4 cup fresh cilantro

Steps:

  • Fill a large skillet with oil and heat the oil over medium-high heat to 365F.
  • Place the crushed garlic, water, chicken bouillon in the microwave and heat for 1 minute. Set aside.
  • Carefully add the plantain chunks to the heated oil and fry them for 4 minutes on each side.
  • Remove the plantains from the oil and place them on a plate lined with paper towels to absorb oil.
  • Place the plantain chunks in a bowl or pilon (wood mortar) , add the water and garlic mixture and mash until smooth consistency. Mix well, cover and set aside.
  • To make the shrimp: Heat olive oil in a large saute pan. Add the onions and cook for about 2 minutes or until translucent. Add the red pepper, garlic, tomatoes and cumin. Cook for about 7 minutes more.
  • Season the shrimp with salt and pepper and add to the tomato mixture. Cook for about 7 minutes more. Add the cilantro and mix well.
  • To serve, divide the mashed plantains equally into 4 small bowls. Top each bowl with 6 shrimp and creole sauce. Serve immediately.

Mofongo might not look like much, but it sure is tasty. Mashed green plantains with garlic, olive oil and pork rinds (or bacon). Mofongo goes well with chicken or fish broth and can be stuffed with garlic shrimp, carne frita or octopus salad. It can also be formed into small balls and dropped in soups or served directly in a mortar. This is one of my many guilty pleasures!

3 cups canola oil for frying
3 cloves garlic, or to taste
3 tablespoons olive oil
⅛ cup crushed fried pork skins
2 green plantains, peeled and sliced into 1/2-inch rounds
salt to taste

Steps:

  • Heat canola oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Mash the garlic with the olive oil in a mortar and pestle. Combine garlic mixture with the pork rinds in a large bowl; set aside.
  • Fry the plantain chunks until golden and crispy, but not brown, about 15 minutes. Transfer the fried plantains into the bowl with the garlic mixture. Toss to coat. Mash the coated plantains with the mortar and pestle until smooth. Season with salt. Roll the plantain mixture into two large balls or several small balls before serving.

Puerto Rican Shrimp Mofongo is a delicious combo of fried mashed green plantains with fresh garlic, chicharron also known as pork rinds and sauteed shrimp in a tomato lemon sauce. Mofongo is a classic main entree.

3 large green plantains
1 pound of peeled shrimp
1 small bag of pork rinds or a handful of homemade chicharrones
1 small tomato (diced)
1 to 2 tablespoons of ketchup
1 tablespoon of Adobo All Purpose Seasoning
1 lemon (juiced)
1 head of garlic
Salted Butter
Olive oil
1 lemon juiced
1 garlic clove
1 tablespoon of diced yellow onions
Chopped cilantro
Dried oregano
Salt to taste

Steps:

  • Begin prepapring the green plantains by carefully remvoing the skin.
  • Cut the end tips of the plantains, then cut 1 inch slices.
  • Shallow fry the plantain slices in hot oil for 7 -10 minutes on each side.
  • Once tender and slightly golden, remove the plantains and rest on a paper towel lined plate.
  • Now start on the shrimp. Cook shrimp in olive oil and add diced tomatoes and garlic.
  • Season with Adobo All Purpose Seasoning and ketchup. Mix well and simmer for 3 minutes.
  • Finish the shrimp with a squeeze of fresh lemon juice.
  • Prepare the mofongo, by adding fried plantain pieces in a pilon/mortar. Mash with a splash of olive oil, butter and garlic.
  • Add pieces of chicharron for additional crunch.
  • Then add homemade mojo sauce for needed moisture.
  • Season with salt and mold a small bowl with the mofongo.
  • Remove mofongo from mold and serve shrimp over top.

1/2 packet all-purpose seasoning, such as Goya Sazon
Vegetable oil, for frying
3 green plantains
Vegetable oil, for frying

1/2 teaspoon granulated garlic

2 cups mayonnaise
1 cup tomato ketchup
1/4 cup granulated garlic
1/4 cup minced garlic
3 tablespoons Sofrito (recipe follows)
2 tablespoons adobo seasoning
2 tablespoons Cajun spice
2 tablespoons granulated onion
1/4 teaspoon cayenne
1/4 teaspoon black pepper
1/2 onion
1 whole onion
1 whole green bell pepper
2 cups sweet mini peppers
1 cup whole or minced garlic
8 bunches cilantro

Steps:

  • For the chicken: Cut the chicken thighs into 1-inch chunks. Combine the olive oil with the chicken base, granulated garlic, adobo seasoning, Cajun spice, granulated onion, black pepper and all-purpose seasoning in a large bowl. Add the chicken and marinate overnight in the refrigerator.
  • Deep-fry the chicken until cooked thoroughly. Drain on paper towels.
  • For the mofongo: Slice the plantains into 1-inch pieces. Lightly fry until golden brown with a slightly crisp outside, 3 to 5 minutes.
  • Combine the olive oil with the minced garlic, adobo seasoning, Cajun spice, granulated garlic and black pepper in a medium bowl. Add the fried plantains to the bowl and mash with a wooden pestle or potato mashing tool. Add half of the fried chicken to the mashed plantain mixture. Form a rounded mound of the mofongo mix in the center of a large plate. Arrange the remaining fried chicken pieces around the mofongo. Drizzle the Puerto Rican Remoulade over top.
  • Combine the mayonnaise, ketchup, granulated garlic, minced garlic, sofrito, adobo seasoning, Cajun spice, granulated onion, cayenne, black pepper and onion in a blender. Blend until an even consistency.
  • Peel and slice the onion. Remove the stem and seeds from the bell pepper. Remove the stems from the mini peppers. Combine the onion, peppers, garlic and cilantro in a blender and pulse for 30 seconds, or until an even consistency is achieved.
