FRUIT SKILLET CAKE
This versatile batter takes kindly to stone fruits like plums (shown here), peaches, and even cherries. Try it in fall with apples or pears, in spring with berries -- you get the idea. The recipe comes from Martha's book "One Pot: 120+ Easy Meals from Your Skillet, Slow Cooker, Stockpot, and More."

Steps:
- Preheat oven to 375 degrees F. Butter an 8-inch ovenproof skillet (preferably cast iron), and dust with flour. Whisk together flour, baking powder, baking soda, and salt. With an electric mixer on medium, beat butter and 3/4 cup sugar until pale and fluffy, 3 to 5 minutes. Beat in egg. Add flour mixture in 3 batches, alternating with buttermilk; beat until combined.
- Transfer batter to the prepared skillet; smooth top. Arrange plums on top, fanning the slices; sprinkle with the remaining 2 tablespoons sugar.
- Bake until golden brown and a cake tester into center comes out clean, 35 to 40 minutes. Transfer to a wire rack to cool slightly before serving.
PLUM SKILLET CAKE
Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Butter an 8-inch cast iron or oven-proof skillet. Dust with flour, tapping out any excess.
- Whisk together 1 cup flour, salt, baking powder, and baking soda in a medium bowl.
- Combine 4 tablespoons butter and 3/4 cup sugar in a large bowl; beat with an electric mixer on medium speed until pale and fluffy. Beat in egg. Add flour mixture in 3 batches, alternating with buttermilk, beating batter briefly after each addition. Pour batter into the prepared skillet and smooth the top with an offset spatula. Fan plum slices on top of batter, and sprinkle with remaining 2 tablespoons sugar.
- Bake in the preheated oven until golden brown and a toothpick inserted into the center comes out clean, 35 to 40 minutes. Let cool slightly before serving.

- Preheat oven to 400ºF.
- Beat the eggs well, then add the flour and salt and beat again.
- Slowly add the milk, then the oil, beating constantly.
- Butter an 8-inch cast iron skillet generously and pour in the batter.
- Bake for about 20 min, or until the cake is puffed and brown at the edges.
- Cut the cake in wedges and serve it with warm applesauce and brown sugar.

PLANTATION SKILLET CAKE
Another recipe from my favorite Reader's Digest cookbook (called Down Home Cooking). It's a breakfast dish that resembles a giant puffy pancake. The recipe originated in South Carolina in the 18th century, and this version is topped off with assorted fresh berries (and any berries can be used, such as raspberries, strawberries, blueberries).

- Preheat oven to 425°F
- In a heavy, oven-proof skillet, melt butter in the oven.
- In a large bowl, with electric mixer, beat eggs, egg white, milk, flour, sugar, orange rind, orange juice, 1/4 reaspoon of the cinnamon, and nutmeg for 2 minutes or just until smooth.
- Remove the skillet from the oven, tilt to coat the sides with the melted butter. Pour mixture over the butter, and return to oven to bake (at 425°) for 20 minutes or until puffed and golden.
- In a small bowl, mix the confectioner's sugar with the remaining 1 teaspoon of cinnamon, and sprinkle over the cake.
- Serve with fresh berries or syrup if you wish.

- Grease and flour a 9 or 10 inch iron skillet.
- Mix 2 T sugar and 2 t cinnamon together and set aside.
- Put flour, 1 1/2 cup sugar, baking powder, vanilla, salt, eggs, and whipping cream together in large bowl. Beat with mixer till well blended.
- Pour in prepared skillet and bake 35 to 45 minutes.
- When done turn our on wire rack, then over on cake plate.

ALMOND SKILLET CAKE
This quick, one-mixing-bowl cake is baked in a black cast iron skillet. I am asked for the recipe every time I serve it.

- Preheat the oven to 350 degrees F (175 degrees C). Line a 10-inch cast iron skillet with aluminum foil with the ends hanging over. Spray lightly with cooking spray.
- Combine flour, sugar, butter, egg, almond flavoring, and salt in a bowl. Mix well. Pour batter into the prepared cast iron pan and smooth it level. Sprinkle top with almonds and sugar.
- Bake in the preheated oven until lightly browned, about 40 minutes.
- Cool cake in the pan for 20 minutes. Carefully lift the cake out of the pan and cool completely on a rack, about 30 minutes more. Top cooled cake with a second rack and flip over. Carefully remove foil and flip onto a serving plate. Cut and serve.

BASIC SKILLET CAKE
This recipe was given to me by a friend years ago and she told me she used it for her strawberry shortcake. It is absolutely heavenly and my niece loves to eat it plain. It is just a good basic recipe--only your imagination limits what you can do with it. It is just a good ole southern recipe and super simple. Awesome with fresh strawberries.

- Preheat the oven to 350 degrees F (175 degrees C).
- Melt butter in a 9-inch cast iron skillet over low heat. Transfer 1/2 of the melted butter to a mixing bowl, leaving remaining butter in the skillet.
