QUICK POACHED SALMON WITH DILL MUSTARD SAUCE
This is an easy, elegant, wonderful salmon dish with a no-cook sauce. It really doesn't get much easier. I love it best on swelteringly hot summer days. Fresh steamed asparagus goes very well with this, and the sauce tastes good on it as well.

Steps:
- In a small bowl, blend the plain yogurt, Dijon mustard, honey, lemon juice, and dill. Cover, and refrigerate until serving.
- In a medium saucepan over medium heat, place the salmon in the white wine and water. Adjust the amount of water as necessary to just cover the fish. Sprinkle with shallots. Cover the saucepan, and cook 10 to 12 minutes, until salmon is easily flaked with a fork. Drain, and serve with the yogurt sauce.

POACHED SALMON WITH SHRIMP AND CRAB CHEESE SAUCE
This has been a hit with all family members! We enjoy it served with fresh green beans or broccoli and a large salad. This is a dish we used to pay dearly for in a restaurant but now that I figured out how to make it at home we save lots of money!

Steps:
- In a large skillet (I use my electric skillet), simmer chicken broth, celery pieces (about 3 inches long) and onion slices.
- I use the vegetable pieces to make sort of a"trivit" under the salmon, so make them chunky.
- Simmer for about 15 minutes.
- Lay the fillet over vegetables, tucking under the tail end and continue to simmer until done through, about 30 minutes.
- Make sure it is flaky and done all of the way through by seperating the fish with a fork.
- If it is still bright orange, simmer longer.
- Meanwhile make the sauce by melting the butter then adding the flour.
- Cook for about 1 minute, then gradually add the milk.
- Heat through but do not boil.
- Once hot, gradually add the cheese and stir until it is all melted.
- Add the crab and shrimp, heating gently until hot.
- Remove the fish from the skillet and discard the broth and vegetables.
- Serve the fish and sauce seperately as some like more sauce than others.

Steps:
- In a large saucepan or high-sided skillet, combine 5 cups water, vinegar, 3 sprigs rosemary and 1/2 teaspoon salt and bring to a boil. Reduce heat to medium and simmer 10 minutes. Season both sides of salmon with 1/4 teaspoon salt. Place salmon skin-side down in the pan of simmering liquid and cook, adjusting heat to maintain a light simmer. Cook 10 to 12 minutes or until salmon is just opaque in center. Carefully transfer salmon to a serving dish. (Discard the poaching liquid.)
- Meanwhile, in a medium saucepan, whisk together heavy cream, cinnamon, nutmeg, cloves, remaining rosemary sprig and remaining 1/8 teaspoon salt. Bring to a simmer over medium-high heat. Simmer until thickened, about 15 minutes, stirring frequently. Remove rosemary sprig and discard. Serve sauce over poached salmon and garnish with fresh rosemary.

POACHED FISH IN SHRIMP SAUCE
This is a variation of a recipe which I found in an old cookbook I purchased over 25 years ago titled, The Encyclopedia of Creative Cooking. I have changed it slightly to adapt to a less expensive version. It is really good with any kind of fish...but my favorite is with fresh salmon. If you read the entire recipe you will see that although it looks complicated at first glance it really is very easy and quick to make. Preparation time includes thickening time of cooking the sauce.

POACHED SALMON WITH DILL & TURMERIC
This is among my husband's favorites because it's always moist, tender, juicy and delicious. It's a quick, simple way to prepare salmon, and the robust turmeric doesn't overpower the taste of the fish. -Evelyn Banker, Elmhurst, New York
