FRENCH CANADIAN (NOT BOSTON) BAKED BEANS

Ingredients

1 pound small white pea beans
1 onion, coarsely chopped
1 teaspoon dry mustard
2 teaspoons ground black pepper
1 to 2 cup pure maple syrup, plus more if desired
1/3 pound salt pork
Salt

Steps:

Pour the beans onto a plate, and pick-over looking for bad beans, or stones. Place beans in bowl, cover with water by at least 2 inches, and soak overnight.
Preheat oven to 250 degrees F.
Drain beans and place in 4-quart bean pot. Add onion, dry mustard, pepper, salt, and maple syrup. Add water to cover. Cut salt pork into 1-inch pieces and place on top of beans. Bake covered, approximately 8 hours. Check each hour to see if water needs to be added. You can add more maple syrup in place of water for flavor, if desired.
Serve the beans with brown bread, franks, or ham. For breakfast, serve with eggs, bacon, and home-fries.

I have been making this for almost 40 years. The original recipe calls for all ketchup; it was my idea to make that half ketchup and half barbeque sauce. I do love spicy. I have never had a baked bean recipe that was this good and also this easy. Nobody will know you didn't spend all day on it.

cooking spray
2 (16 ounce) cans pork and beans
¾ cup brown sugar
¼ cup ketchup
¼ cup barbeque sauce
4 slices bacon, cut into 1/2-inch pieces
1 teaspoon dry mustard

Steps:

Preheat oven to 325 degrees F (165 degrees C). Prepare a 9-inch baking dish with cooking spray.
Stir pork and beans, brown sugar, ketchup, barbeque sauce, bacon, and dry mustard together in the prepared baking dish.
Bake in preheated oven, stirring every 20 minutes or so, until bacon fat is rendered throughout the beans mixture, 2 1/4 to 2 1/2 hours.

1 cup chopped parsley
1 cup chopped celery
2 large cans Pork and Beans
1 can Rotel Tomatoes
1 can pimento chopped
1 tablespoon mustard
1 teaspoon chili powder
2 cups barbeque sauce

Steps:

Fry bacon until crisp; remove from drippings and set aside. Saute all the vegies in the bacon drippings until tender Add bean, tomaotes, pimento and seasonings, BB Sauce and crumbled bacon. Cook in a slow cooker for 5-8 hours.
