CHEESY POLENTA FRIES WITH RED PEPPER TOMATO MARINARA "KETCHUP"
These cheesy polenta fries are already packed with flavor. Pair them with the intensely tomato-y, red pepper-y dipping sauce or "ketchup," and you have a treat it's hard to stop eating!

Steps:
- Heat a medium pot over medium heat. Add the oil and heat until shimmering.
- Add the garlic paste, a heavy pinch of salt and several grinds of black pepper, and stir until fragrant.
- Pour in the stock, heavy cream, and Italian seasoning. Increase heat to high and bring to a boil.
- Gradually add the polenta while whisking constantly to keep lumps from forming. When it comes back to a boil, reduce heat to a high simmer, and stir occasionally with a long-handled spoon until the polenta is very thick and creamy, about 20-25 minutes.
- Remove the pan from the heat and stir in the Parmesan cheese. Taste and adjust seasonings as necessary.
- Spread the very thick polenta evenly in a 9x13-inch pan. It will make a layer about an inch thick. Spread it in a larger pan, and you'll end up with a thinner layer, so put it in whatever size pan you have that will give you the look you want. Allow to cool, then cover and refrigerate for several hours or overnight.
- In a large, shallow dish, whisk together the cornstarch, salt and smoked paprika.
- Slice or cut the polenta into whatever shapes you want. In order to make steak fries like I did, slice the "slab" of polenta into 1/3" slices. Turn each slice on its side, and then make a diagonal cut to make 2 steak fries. Continue until you've sliced all the polenta.
- Dust each piece thoroughly with the seasoned cornstarch. Set aside.
- Heat the oil to 350F. Carefully slide no more than 6-7 fries into the pot at one time, and fry until they float and the outsides are a crispy, golden brown. Use a spider to remove the fries to several thicknesses of paper towels. Sprinkle with a bit of fine salt. Continue frying in batches until you've fried and seasoned all the fries, making sure to maintain the oil temperature right around 350F. Serve hot with red pepper tomato marinara.
- Heat the oil in a medium sauce pan.
- Add the garlic paste or minced garlic, a heavy pinch of salt and several grindings of black pepper, and cook until fragrant.
- Add the tomatoes with their juice, the drained peppers, the Italian seasoning, and balsamic vinegar.
- Using an immersion blender (or in batches in a counter top blender), blend until smooth. Don't strain the sauce--you still want it to have texture, just no big chunks.
- Simmer until thick and reduced as much as you like, stirring occasionally and keeping the heat low so the sauce doesn't scorch. I let mine reduce for about an hour.
- Taste and adjust seasonings if necessary. If the sauce seems a bit sharp, stir in a bit of sugar. Serve warm with the cheesy polenta fries.

- Prepare the Polenta Fries: Cook according to the package directions "Basic" polenta less 1/2 cup water. While the polenta is cooking, add the oil, salt, and pepper.
- When almost done, stir in the cheese. Immediately after it is done, pour into a 13 x 9-inch baking pan that has been lightly coated with olive oil and smooth the top with a spatula that has been dipped in olive oil. The polenta should be about 1/2 inch thick). Cover the top with plastic wrap, pressing it on the top of the polenta. Refrigerate for a couple of hours, or until very firm. (Can be made a day ahead.)
- Turn the polenta onto a cutting board, cut in half laterally, then cut each half into 1/2 inch "fries".
- Heat about 1/2 inch of oil in a skillet or frying pan to 375° F. Add the fries, in batches, cook until browned, then turn to evenly brown each side. Remove to a wire rack to drain. Keep fries warm in a 300°F oven until all the fries have been made, adding additional oil as needed. Serve with warm Roasted Red Pepper Ketchup.
- Prepare the Roasted Red Pepper "Ketchup": Place all the ingredients into a blender, blend until smooth.
- Pour blended sauce into a heavy saucepan, bring to a simmer; simmer about 30 - 45 minutes, or until very thick. Taste and adjust salt and pepper.
- Serve warm or at room temperature.

Reduce heat to low and cook till polenta is very thick and starts to pull away from sides of pan, stirring often, about 8 min. Remove from heat. Stir in cheese, basil and thyme. Season to taste with salt and pepper. Immediately transfer polenta to prepared baking pan, spreading proportionately to cover. Chill till cold and hard, about 1 hour. (Can be prepared 1 day ahead. Cover and keep refrigerated.) Cut polenta lengthwise in pan into three 3-inch-wide rectangles. Cut each rectangle crosswise into 3/4-inch-wide strips. Set polenta strips aside. Preheat oven to 300 degrees. Heat 1/2 c. oil in heavy large skillet over medium-high heat. Place flour in pie plate. Lightly coat polenta strips with flour; shake off excess. Working in batches, fry polenta strips till golden on all sides, adding more oil if necessary, about 5 min. Using slotted spoon, transfer fries to paper towels and drain. Place fries on baking sheet and keep hot in oven while cooking remaining batches. Transfer fries to large platter and serve with Roasted Red Pepper Ketchup. This recipe yields 10 to 12 servings.

SOFT POLENTA WITH ROASTED RED PEPPERS
Steps:
- In a large heavy saucepan, heat the olive oil over medium heat. Add the onions and saute, stirring occasionally, for 5 to 6 minutes, or until softened. Add the garlic and cook for 2 minutes more, until its aroma is released.
- Add the chicken stock, water, and salt to the pan and increase the heat to medium high. When the liquid is simmering, gradually sprinkle the polenta over in a very slow, thin stream, whisking constantly in the same direction until all the grains are incorporated and no lumps remain. Reduce the heat to very low. Switch to a wooden paddle and stir thoroughly every few minutes for 25 to 30 minutes, or until the mixture pulls away from the sides of the pan and the grains of polenta have softened. Stir in the butter, thyme, pepper, and grated Manchego and remove from the heat. Spoon some polenta into each of 6 warmed shallow soup bowls and top with some of the roasted peppers and chopped cilantro.
ROASTED RED PEPPER POLENTA
Steps:
- To fire-roast the red peppers, place them over a high flame on a stove-top burner and roast, turning occasionally, until the skins turn black on all sides. Place the peppers in a medium bowl, cover with plastic wrap and allow to steam for 10 minutes. Peel away the blackened skins from the peppers. Cut away the stems and then seed, core and coarsely chop the peppers. Place them in a food processor and puree until smooth; reserve to the side.
- In a heavy-bottom medium pot, bring 8 cups water, thesalt and the roasted red pepper puree to a boil. Add the stone-ground cornmeal in a gentle stream, whisking or stirring vigorously in the same direction as you pour it in. Reduce the heat to medium-low and simmer, stirring continuously for 2 to 3 minutes. Cook the polenta for 35 to 40 minutes, stirring every few minutes and scraping the bottom of the pan to prevent it from sticking. When the polenta is thick, glossy and pulling away from the side of the pan, add the Pecorino Romano and butter, stirring quickly to incorporate. Pour the polenta into a medium serving dish and serve immediately.

ROASTED RED PEPPER KETCHUP

- Combine tomatoes with juices and all remaining ingredients in heavy large saucepan over high heat. Bring to boil. Reduce heat to medium and simmer until reduced to about 3 cups, about 30 minutes. Discard bay leaf. Working in batches, purée ketchup in blender until smooth. Season with salt and pepper. Cool slightly, then chill until cold. (Ketchup can be prepared 1 week ahead. Cover and keep refrigerated.)
BAKED POLENTA FRIES
These delicious baked polenta fries can be made using tubes of prepared polenta found in the refrigerated section of local supermarkets.

- Preheat oven to 450 degrees. Unwrap and cut each tube of polenta in half crosswise. Then cut each half lengthwise into 8 wedges.
- Drizzle olive oil on a large rimmed baking sheet. Place polenta wedges on baking sheet; season with salt and pepper, and turn gently to coat with oil. Arrange wedges in a single layer.
- Bake, turning once with a thin metal spatula, until golden and crisp, 45 to 50 minutes. Drain on a paper-towel-lined plate. Transfer to a shallow dish, and toss with Italian seasoning before serving.

- Grease a baking sheet with nonstick spray.
- In a medium pot over high heat, add the milk and vegetable broth and bring to a boil.
- Whisk in the polenta and reduce the heat to low, whisking continuously for about 5 minutes, or until all the liquid has been absorbed and the polenta is creamy.
- Add the butter, salt, pepper, oregano, thyme, and rosemary and stir until well-combined.
- Transfer the polenta to the prepared baking sheet and spread out evenly with a spatula. Chill for at least 2 hours or up to 3 days to set.
- If baking, preheat the oven to 425ºF (220ºC).
- Make the aioli: Combine the mayonnaise, garlic, parsley, and lemon juice, salt, and pepper in a small bowl and mix until well-combined. Chill until ready to use.
- Carefully flip the baking sheet onto a cutting board to release the polenta. Slice in half lengthwise, and then cut into 22 equal-sized fries, each about 4 inches (10 cm) long and 1 inch (2 ½ cm) wide.
- If baking, use a spatula to transfer the fries onto wire racks set over 2 baking sheets. Brush each fry generously with olive oil. Bake for 30 minutes, flipping halfway through and brushing with more oil, until golden brown.
- If frying, heat the canola oil in a large pot until it reaches 375ºF (190ºC). Using a large spider, submerge 2 fries at a time into the oil and fry for 2-4 minutes, until golden brown and crispy. Remove from the oil and transfer to a plate lined with paper towels to cool for at least 5 minutes.
- Serve the fries with aioli.

POLENTA AND GRILLED VEGETABLES WITH ROASTED RED PEPPER SAUCE
This dish is perfect in the spring or summer when vegetables are plenty. It reminds me of a rustic dish you could get at a little Italian eatery. Don't be daunted by the long list of ingredients, the meal comes together quickly. I have a gluten allergy and the polenta satisfies any bread cravings I might have. The dish is also a great vegetarian option, but I swear it will make any carnivore happy :) The vegetables can also be done in the broiler.

- Bring 3 cups water to a boil in a medium-sized heavy saucepan. Add polenta, whisking quickly to combine. Reduce heat to a medium-low and simmer, stirring frequently, until thick- about 3-5 minutes. Whisk in 1/3 cup Parmesan and season with the cayenne pepper and salt. Coat a 9" pie plate with cooking spray and pour the polenta into the prepared pie plate and smooth out the surface and let sit for 15 minutes.
- Meanwhile, heat grill (or broiler). Whisk together garlic, thyme, lemon juice, and oil in a bowl. Season with salt and pepper. Toss vegetables with the dressing. Coat a grill basket (or cooking tray) with cooking spray and arrange vegetables. Grill vegetables until tender and slightly charred- about 3-5 minutes on each side. Transfer to a platter.
- Combine all sauce ingredients in a blender or food processor and blend until smooth.
- Heat broiler, sprinkle polenta with remaining Parmesan cheese. Broil polenta until golden brown- about 2-3 minutes, then slice into 8 pieces. Divide polenta among 4 plates. Top with vegetable, drizzle with sauce and sprinkle with fresh basil.
