MARTHA'S PERFECT PANCAKES

Martha's Perfect Pancakes image

Make and share this Martha's Perfect Pancakes recipe from Food.com.

Provided by Loves-2-Cook

Categories     Breakfast

Time 25m

Yield 12 pancakes

Number Of Ingredients 5

2 eggs
1 cup milk
3 tablespoons melted butter (I just use canola oil, easier than measuring & melting butter)
1 1/2 cups self rising flour
2 -3 tablespoons sugar (I usually add double)

Steps:

  • Heat griddle or large skillet to medium-high heat (375 degrees F.). Grease lightly with oil.
  • In medium bowl, beat eggs. Add milk and melted butter; mix well. Add all remaining ingredients; stir just until large lumps disappear.
  • For each pancake, pour about 1/4 cup batter onto hot griddle. Cook 1 to 2 minutes or until bubbles begin to break on surface. Turn; cook 1 to 2 minutes or until golden brown.
  • My tips: I use a skillet and heat between med-low to medium. I think it makes no difference in which order the ingredients are added and mixed. I double the recipe in order to have enough to feed my bunch. If you don't have self rising flour you can make it by adding 1 teaspoon baking powder & 1/4 teaspoons salt to every cup of all purpose flour used in your recipe. This was the first homemade mix I ever tried. I had always made from a box. I have yet to find a homemade recipe for pancakes that measure up to this one. Hope you enjoy them!

PERFECT PANCAKES (AND TOPPINGS!)

Perfect Pancakes (and Toppings!) image

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 30m

Yield 6 servings

Number Of Ingredients 8

3 cups plus 2 tablespoons cake flour
3 tablespoons baking powder
2 tablespoons sugar
1/2 teaspoon salt
3 cups milk, plus more if needed for thinning
3 teaspoons vanilla
2 large eggs
4 tablespoons unsalted butter, plus more for buttering the griddle

Steps:

  • Pancake bar toppings: mini chocolate chips, fresh blueberries, flavored yogurt, sliced bananas and extra pats of butter
  • Mix together the cake flour, baking powder, sugar and salt in a large bowl. Mix together the milk, vanilla and eggs in a separate bowl. Add the wet ingredients to the dry ingredients, stirring very gently until just combined. Melt the butter and add it to the batter, stirring gently to combine. Stir in more milk if needed for thinning; the batter should not be overly thick.
  • Set a griddle over medium-low heat and butter the surface when it's hot. Use a 1/4-cup measure to drop the batter onto the griddle in batches. Fry the pancakes on both sides until golden, about 2 minutes per side.
  • Serve with an assortment of your favorite pancake toppings, such as mini chocolate chips, fresh blueberries, flavored yogurt, sliced bananas and extra pats of butter.

GOOD, BAD, AND YUMMY PANCAKES

Good, Bad, and Yummy Pancakes image

I found a recipe here that I ended up changing so much it hardly resembled what I started out with, and my family LOVED them. I thought it would be a nice addition. These pancakes are a blend of good and not-so-good-for-you ingredients, hence the name.

Provided by LeJoy Nichols

Categories     Bread     Quick Bread Recipes

Time 25m

Yield 8

Number Of Ingredients 10

1 ½ cups all-purpose flour
1 cup whole wheat flour
⅓ cup white sugar
2 teaspoons baking powder
1 ½ teaspoons salt
½ teaspoon ground cinnamon
2 cups milk
1 tablespoon vanilla extract
2 eggs, beaten
1 tablespoon vegetable oil, or as needed

Steps:

  • Whisk all-purpose flour, whole wheat flour, white sugar, baking powder, salt, and cinnamon together in a large bowl. Make a well in the center of the dry ingredients.
  • Pour milk and vanilla extract into the well; add beaten eggs. Mix wet and dry ingredients together until smooth.
  • Grease a skillet with oil and heat over medium heat.
  • Pour 1/4 cup of batter per pancake into the hot skillet; cook until bottom is golden brown and there are many small pinholes in the top of the pancake, about 2 minutes. Flip pancake and continue cooking until golden brown and the middle of the pancake is set, 2 to 3 minutes. Repeat with remaining batter, greasing skillet with oil between pancakes as needed.

PERFECT POTATO PANCAKES

Perfect Potato Pancakes image

I like to serve these potato pancakes with barbecued sausage. They're also nice with baked ham and applesauce or with breakfast sausages. And, with these and other types of meals, they're a good alternative to french fries. My children are married, and I'm a widow. So I don't do as much cooking as I once did. Guests always ask for the recipe when I serve this dish, though. And when my son and his family visited me from Winnipeg not long ago, one of the first things he asked for were Perfect Potato Pancakes!

Provided by Taste of Home

Categories     Side Dishes

Time 30m

Yield about 16 pancakes.

Number Of Ingredients 8

4 large potatoes (about 3 pounds)
2 large eggs, lightly beaten
1/2 cup all-purpose flour
1/2 cup finely diced onion
1 teaspoon salt
1/8 teaspoon pepper
Oil for frying
Optional: Maple syrup or applesauce

Steps:

  • Peel and shred potatoes; place in a bowl of cold water. Line a colander with cheesecloth or paper towels. Drain potatoes into cloth and squeeze out as much moisture as possible. In a large bowl, combine the potatoes, eggs, flour, onion, salt and pepper., In an electric skillet, heat 1/4 in. oil over medium heat. Drop batter by 1/4 cupfuls into oil, about 3 in. apart. Press lightly to flatten. Fry until golden brown, about 4 minutes on each side. Drain on paper towels. Repeat with remaining batter. If desired, top with maple syrup or applesauce.

ED LEVINE'S GOLDEN RULES OF THE PERFECT PANCAKE - SERIOUS EATS
2019-03-22 If a pancake is made really well it doesn't need butter. Part of that is because it should be cooked with butter on the griddle, or at least a butter-oil combination. Though I'll admit that butter has the power to make decent pancakes truly memorable if it's properly softened or, even better, molten.
