Tangy, flavor-packed chicken in a rich cream sauce. Great with farfalle (bow tie) pasta (though I like to serve it with the unlikely partner of a hearty brown rice because I'm a rice nut). Killer Artichokes (from this site) and a glass of chardonnay make outstanding partners.

2 tablespoons olive oil
12 chicken tenders, sliced into strips
3 cloves garlic, minced
½ teaspoon salt
½ teaspoon ground black pepper
1 tablespoon Italian seasoning
¼ cup sun-dried tomatoes packed in oil, drained and chopped
2 tablespoons sliced green olives
½ cup dry white wine
2 tablespoons chopped fresh parsley
½ cup sour cream
1 cup milk
½ teaspoon salt
1 ½ teaspoons cornstarch
¼ cup water

Steps:

  • Heat olive oil in a skillet over medium-high heat. Place chicken and garlic in the pan. Season with 1/2 teaspoon of salt, pepper, and Italian seasoning. Stir in the tomatoes, olives, wine, and parsley. Reduce heat to low and continue cooking until the chicken is no longer pink in the center. Remove chicken and place on a plate, leaving the sauce in the pan. Stir sour cream, milk, and 1/2 teaspoon of salt into the remaining sauce.
  • Whisk cornstarch and water together in a small bowl. Increase heat to medium and whisk in the cornstarch mixture. Continue stirring until the sauce has thickened. Serve the sauce with the chicken.

1 pound Chicken breast
1 tablespoon Olive oil
1 clove Garlic
1 cup Low sodium chicken broth
2 tablespoon Lemon Juice
1/4 teaspoon Black pepper
2 tablespoons Butter
1/2 teaspoon Poultry Seasoning
4 medium Red potatoes
20 small Grape tomatoes
1 tablespoon Sage and Rosemery
2 cups Mixed greens

Steps:

  • Preheat oven 400 degrees. Quarter potatoes place small roasting pan drizzle with olive oil or spray with nonstick cooking spray. Roast in 400 degree oven for 30 minutes. Heat chicken broth over medium heat. Rub chicken breasts with cut garlic clove and sprinkle sage and rosemary. Spray chicken with nonstick cooking spray and place on hot grill. Cook 4 minutes on each side or until browned. Place grilled chicken on plate and cover with pot lid. Heat 1 tablespoon of olive oil in large nonstick skillet over medium heat. Add warm chicken broth, lemon juice, ground pepper and butter. Place grilled chicken and roasted potatoes in sauce and heat 3-4 minutes, turning to coat with sauce. Serve with a bed of mixed greens.

  • Broil chicken on high for 5 minutes, to crisp the skin. Then bake at 350 degrees for about 30-40 minutes, or until chicken is cooked through.
