These golden baked croquettes are a fun and different way to serve chicken to a crowd. My husband and I are hosts at a mission house where we cook for groups of 30 or more each week. this recipe is a favorite with guests. -Fran Wolfley St. Mary, Jamaica

Yield 40-45 servings (2 pom-poms each).

Number Of Ingredients 16

4 celery ribs, chopped
1 large onion, finely chopped
1 cup butter, cubed
2 cups all-purpose flour
3 teaspoons poultry seasoning
1 teaspoon salt
1 teaspoon pepper
2 cartons (32 ounces each) chicken broth
2 cups nonfat dry milk powder
1/4 cup chicken bouillon granules
16 cups cooked long grain rice
12 cups chopped cooked chicken
8 cups shredded cheddar cheese
10 cups soft bread crumbs
3 tablespoons paprika
10 jars (12 ounces each) chicken gravy

Steps:

  • In a large Dutch oven, saute celery and onion in butter until tender. Combine the flour, poultry seasoning, salt and pepper; stir into vegetable mixture until blended. Gradually stir in broth until blended. Add the milk powder and bouillon. Bring to a boil; cook and stir 1-2 minutes or until very thick. Cool. Cover and refrigerate for at least 3 hours., Stir the rice, chicken and cheese into the sauce mixture. Combine breadcrumbs and paprika in a shallow baking pan. Shape 1/4 cupfuls of chicken mixture into 2-in. balls; roll in crumb mixture. , Place 3 in. apart on lightly greased baking sheets. Bake 400° for 25-30 minutes or until heated through and golden brown. Heat the gravy; serve with pom-poms.

This came from an old magazine i found. I know it by heart now, everyone who tries it, loves it! It can easily be doubled to feed more.In Australia Pom Poms are little balls of mashed potato, which have a crispy outer when cooked. They are normally found with the frozen french fries etc

1 tablespoon vegetable oil
1 onion
1 garlic clove, crushed
600 g chicken thigh fillets, diced
420 g condensed cream of chicken soup
1 head broccoli, cut in to small florets
1/2 cup chopped fresh parsley
500 g frozen potatoes (pom poms or pommes)

Steps:

  • Heat oil in a large frying pan. Add onion and garlic and cook, stirring over a medium heat for 5 minutes or until onion is soft.
  • Add chicken pieces and cook for 3 - 5 minutes, or until lightly browned.
  • Add soup, broccoli, and parsley to pan, stir well to combine.
  • Pour into lasagne or pie dish. Top with enough pom poms to cover the top of the pie. Bake in a moderatley (200c) oven for 25 - 30 minutes or until golden brown.
  • Enjoy, always good with hot chips or wedges!

0.5 cups soy sauce
0.5 cups vinegar
1 units garlic powder
3 units bay leaves
3 pounds chicken
1 boxes minute rice

Steps:

  • Add all ingredients (not the rice) to medium size pot. Cook 30 to 45 minutes on low (until chicken is fully cooked) with lid halfway on pan (open slightly to let out steam).
  • When chicken is done, remove bay leaves. Serve over Minute Rice.

Easy yet elegant, this roasted chicken is glazed with pomegranate and orange juice and seasoned with fresh herbs.

¼ cup juice from large POM Wonderful® Pomegranates,* or POM Wonderful 100% Pomegranate Juice
2 tablespoons orange juice concentrate
1 tablespoon balsamic vinegar
½ cup chopped parsley
⅓ cup whole grain mustard
10 sprigs fresh thyme leaves
1 (4 pound) chicken
1 pinch salt and pepper to taste
¼ medium onion
½ fresh orange, cut in two pieces
2 tablespoons melted butter

Steps:

  • Prepare fresh pomegranate juice.*
  • Make glaze by combining pomegranate juice, orange juice, vinegar, parsley and mustard and half of the fresh thyme, leaves only.
  • Rinse chicken; pat dry. Place on a roasting rack in a shallow pan; sprinkle with salt and pepper. Use half of the glaze mixture to coat the chicken. Place remaining thyme leaves in the chicken cavity with onion and orange.
  • Cover the chicken loosely with foil and roast for 30 minutes at 350 degrees F.
  • Remove foil and coat chicken with the remaining glaze. Increase oven temperature to 375 degrees F and continue to bake. Bake for 30 to 40 minutes or until a meat thermometer in the thigh of the chicken reads 165 degrees F and juices run clear.

300 g ground chicken (extra lean)
1 egg (beaten)
1 (6 ounce) box prepared stuffing (Stove-top chicken flavoured)
1 1/2 cups wild mushrooms (chopped)
1 cup chicken broth (e.g. Campbell's)
1/2 cup onion (chopped)
3/4 cup low-fat cream of mushroom soup (or Campbell's cream of mushroom cooking sauce)
1 tablespoon garlic powder (optional)
1 teaspoon cumin (optional)
1 teaspoon turmeric (optional)
1 pinch black pepper (optional)

Steps:

  • Preheat oven to 350°F.
  • Microwave chicken broth on high for 1 minute.
  • Combine all ingredients EXCEPT cream of mushroom soup/sauce in a large mixing bowl. Mix well.
  • Place mixture into baking dish and bake at 350F for 25 minutes.
  • Remove from oven, spread mushroom soup on top of loaf and bake at 350 for another 10 minutes or until a golden "soup crust" forms.
  • Note: If you prefer to use dried mushrooms, soak the dried mushrooms in the warmed broth before chopping and adding to mixture. Be sure to remove any grit that is released into the broth from the dried mushrooms.
