POMEGRANATE MOLASSES BARBECUE SAUCE
I was sent some pomegranate molasses as a sample to try and loved its sweet and sour, tangy kind of taste. I reckoned that it would work brilliantly in a barbecue sauce -- and our kids agreed. You can use as a barbecue mop in the last 30 minutes of cooking your meat on the barbecue or marinate chicken or other meat in sauce for at least 30 minutes before cooking in oven or on barbecue. Do not grill or bake for longer than 45 minutes, as the sugar syrups and tomato ketchup are likely to burn and make the food taste bitter.

- In a bowl, stir together the soy sauce, ketchup, pomegranate molasses, honey, sunflower seed oil, mustard, garlic, sea salt, black pepper, and paprika to make a smooth paste.

POMEGRANATE BBQ SAUCE
Steps:
- Purée ingredients in blender or food processor. Combine everything in a saucepan and bring to a boil. When the pomegranate mixture starts to bubble, stir and turn down the heat and simmer for 15-20 minutes until slightly thickened. Sauce will thicken more as it cools. You can pour it over anything you would eat BBQ sauce with or freeze it for later. Alternately, cover uncooked meat for kebabs with sauce, skewer them, and then grill or broil meat with sauce.

POMEGRANATE MOLASSES BARBECUE SAUCE

Mixed with ketchup, fresh thyme, onion, sugar, and vinegar, the pomegranate molasses doesn't get lost in the mix, nor does it overpower. It adds this detectable, but unplaceable, sweet bite in the background of this tangier than tangy barbecue sauce, negotiating the tight-rope balance between sweet and tart that every barbecue sauce must walk. I smothered it onto spareribs, but I also dipped rotisserie chicken in it, and I know this sauce would go perfectly with barbecued pork ribs, chicken, salmon, or Portobello mushrooms."

- Drop garlic into food processor; run processor until garlic is finely chopped. Add onion, and run processor until onion is finely chopped.
- In a medium saucepan, heat olive oil over medium heat until shimmering. Add garlic and onion mush, salt, pepper and thyme. Sweat over medium-low heat 5 minutes.
- Add remaining ingredients, stir well and simmer 25 minutes. Adjust salt and pepper to taste.

- Whisk all of the ingredients, besides the lime juice and cayenne, together in a saucepan or high sided skillet. The more surface area (the larger the pan or skillet), the faster the sauce will reduce.
- Cook the sauce over medium heat until it starts to bubble. Reduce the heat to medium low and allow it to simmer until it thickens, about 20 to 25 minutes. Stir constantly so the sauce on the bottom doesn’t burn.
- When the sauce is thick and can coat the back of a spoon, remove it from the heat and add in the juice of half a lime. If using, add in a few dashes of cayenne and stir everything to combine.
- Brush the sauce on your favorite protein, like these Fall Off the Bone BBQ Baby Back Ribs, and place sauce-side down on a BBQ grill to caramelize. Use any extra sauce for dipping or for additional recipes throughout the week.
