POOR MAN'S COOKIES
In the 1930s, producers of a popular radio program called Jake and Lena invited listeners to write in for this recipe. My mother changed the name from Jake and Lena Cookies to Poor Man's Cookies because they contained no eggs, milk or nuts. Despite the name, the cookies are rich in taste!

Steps:
- In a large bowl, cream shortening and sugars until light and fluffy. Beat in water and vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Fold in oats., Drop dough by tablespoonfuls onto greased baking sheets. Bake at 350° for 10-12 minutes or until golden brown. Allow to stand 2 minutes before removing to a wire rack to cool.

POOR MAN'S SANDWICH
I don't know why it is called 'Poor-Man Sandwich'. But I do know it is a long time family recipe that tastes GREAT!!. It may sound strange, however you have to try it to understand what it is. Enjoy!!!!

- Preheat the oven to 375 degrees F. Line a baking sheet with parchment or a silicone mat.
- With an electric mixer, beat together the peanut butter, brown sugar and egg until well combined. Stir in the chocolate chips with a wooden spoon.
- Lightly wet your hands and form the mixture into 12 balls. Place the balls about 1 inch apart on the baking sheet. Lightly wet the tines of a fork and press a criss-cross pattern into the top of each cookie. Lightly sprinkle them with flaky sea salt.
- Bake until just starting to brown, 12 to 15 minutes. Let sit for 5 minutes on the baking sheet, then remove to a rack to cool completely before eating.

- Combine soda and water;stir into oats mixture along with shortening and vanilla.
- Roll into walnut size balls.
- Bake at 350 for about 10 minutes or until golden brown.
- Remove from the oven and allow to stand 2 minutes before removing to a wire rack to cool.

- Preheat oven to 350 degrees. Whip together the butter and sugars. Add the peanut butter and whip to combine completely. Continue beating while adding eggs and vanilla. In another bowl, combine the flour and baking powder. Use a fork to blend the flour mixture into the peanut-butter mixture. When fully combined, stir in the chips.
- Make balls about of an inch in diameter. Place on a nonstick baking sheet and with a fork press each ball down to create a crosshatch design. Bake for 10 minutes. Remove from the sheet immediately and cool on a rack.
