LAZY MAN'S PIEROGI
Every time we have a party I'm requested to make this dish. Wonderful mixture of pasta, bacon, mushrooms, and onions.

Steps:
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Preheat oven to 350 degrees F (175 degrees C).
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Stir in onions, and cook until translucent. In a separate pan, saute the mushrooms in butter.
- In a large bowl, combine pasta, bacon, onion, mushrooms, sauerkraut and condensed soup. Season with salt and pepper. Pour into a 9x13 inch baking dish.
- Bake in preheated oven for 45 minutes.

POOR MAN'S PIEROGIES
Pierogies in a pan! This is a wonderful, rich casserole that tastes just like potato and cheese pierogies (without all the fuss!) Nice, hearty comfort food!! Can be served as a main dish with veggies or a salad, or as a side dish.

Steps:
- Saute onion in 1 stick butter until tender.
- Cook noodles as directed on box.
- Boil potatoes, then mash.
- Add cubed cheese, salt, pepper, and remaining butter to potatoes and mix until well combined.
- Put layer of noodles in 9x13-inch baking dish.
- Layer 1/3 of sauteed onions over noodles, then 1/3 of potato mixture.
- Repeat layers, ending with potatoes on top.
- Sprinkle with Parmesan cheese.
- Bake at 350°F for 30-35 minutes.

Steps:
- In a large skillet sauté mushrooms and onions in ½ stick of butter until tender.
- Add sauerkraut, sausage, white wine, salt and pepper, mix well cover and cook over medium low heat for about 1 hour.
- Add cooked spiral noodles and ½ stick butter, stir until butter has melted, season to taste and serve.

- Saute 1 1/2 sticks of margarine and the diced onions until tender. Cook lasagna noodles as directed on the package. Boil potatoes until tender as for mashed potatoes. Cube cheese. After potatoes are cooked, add cheese and remaining margarine (no milk!) and mash like making mashed potatoes. In a 9 x 13 pan, layer: 1/3 of onions on bottom, layer of noodles, 1/3 of potatoes. Repeat layers ending with mashed potatoes. Top with parmesan cheese and pepper. Bake at 350~F for 30 - 35 minutes. Cut into squares and serve.
