POPPY SEED POUND CAKE MUFFINS



Poppy Seed Pound Cake Muffins image

These are deliciously different muffins with the texture of pound cake. You won't be able to eat just one.

Yield 12 muffins

Number Of Ingredients 9

2 cups flour
3 teaspoons poppy seeds
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup sugar
1/2 cup butter
2 eggs
1 cup plain yogurt
1 teaspoon vanilla extract

Steps:

  • In a small bowl, mix flour, poppy seeds, salt& baking soda.
  • In a large bowl, mix sugar and butter with electric mixer.
  • Beat in eggs, one at a time.
  • Beat in yogurt and vanilla until well blended.
  • Stir in flour mixture until moistened.
  • Spoon batter into greased muffins tins.
  • Bake at 400 for 15-20 minutes or until pick comes out clean.

Number Of Ingredients 9

2 cups flour
3 tsp. poppy seeds
1/2 tsp. salt
1/4 tsp. baking soda
1 cup sugar
1/2 cup butter
2 eggs
1 cup plain yogurt
1 tsp. vanilla extract

Steps:

  • 1. In small bowl, stir together flour, poppy seeds, salt and baking soda. In large bowl, cream together sugar and butter. Beat in eggs, one at a time.
  • 2. Beat in yogurt and vanilla til well blended. Stir in flour mixture til moistened thoroughly. Spoon batter into greased muffin tins and bake at 400 for 15 to 20 minutes or til a wooden pick inserted in center comes out clean. Cool muffins on wire rack for 5 minutes before serving.
