1 medium onion, chopped
1 green bell pepper, chopped
1/2 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper

Reserved potatoes, from Mixed Roasted Potatoes, chopped
Reserved pork, from Roast Bone-in Pork Loin, chopped
Reserved herb butter, from Mixed Roasted Potatoes
4 eggs, poached, for serving

Steps:

  • Heat a cast iron skillet over medium-high heat with the oil. Add the onions and peppers and cook until the vegetables are softened, 6 to 8 minutes. Next, add the pepper flakes, salt and pepper, to taste, and the garlic and cook for 30 seconds. Add the potatoes and pork and cook for 5 minutes to heat them through. Add the reserved herb butter and cook until the hash is hot and crispy, about another 5 minutes. Serve with poached eggs.

1 large unpeeled red cooking apple, sliced (1 1/2 cups)

Steps:

  • Heat apple juice to boiling in 2-quart saucepan. Stir in barley and 1 tablespoon of the rosemary; reduce heat to low. Cover and simmer 10 to 12 minutes until liquid is absorbed and barley is tender.
  • While barley is cooking, cut pork into 1/4-inch slices.
  • Heat oil in 10-inch nonstick skillet over medium-high heat. Cook pork, onion, garlic and remaining 1 tablespoon rosemary in hot oil about 5 minutes, stirring frequently, until pork is no longer pink in center. Stir in apple jelly and apple slices; cook until hot. Serve over barley.

1 cup medium pearl barley
1/2 cup chopped onion
1/2 cup chopped celery
4 tablespoons butter, divided
1 garlic clove, minced
2 cups chicken broth
1 cup orange juice
1 teaspoon grated orange zest
1/2 teaspoon dried rosemary, crushed
1/2 cup chopped pecans, toasted
6 bone-in pork loin chops (1 inch thick and 7 ounces each)
Salt and pepper to taste
GLAZE:
1 cup orange marmalade
2 tablespoons orange juice
1 tablespoon prepared mustard
1/2 teaspoon ground ginger
Orange slices and fresh rosemary, optional

Steps:

  • In a large saucepan, saute the barley, onion and celery in 3 tablespoons butter until barley is golden brown and vegetables are tender. Add garlic; cook 1 minuet longer. Stir in the broth, orange juice, zest and rosemary; bring to a boil. Reduce heat; cover and simmer for 35 minutes or until barley is partially cooked. Add pecans. , Transfer to a greased 13x9-in. baking dish. In a large skillet, brown pork chops on both sides in remaining butter. Sprinkle with salt and pepper. Arrange over barley mixture. , Combine glaze ingredients; brush half over chops. Cover and bake at 350° for 45 minutes. Uncover; brush with remaining glaze. Bake 15 minutes longer or until a thermometer reads 160°. Garnish with orange and rosemary if desired.

Submitted in response to a request. This is a nice simple supper dish made with roast pork shoulder. (Picnic roast.) Pork shoulder roast is often on sale at a very reasonable price, but, because it tends to be a large cut and very fatty, it is best slowly roasted with a cup or so of water and a couple tablespoons soy sauce, cooled enough to handle, then de-boned, de-fatted, and divided up for use in other dishes.

2 medium potatoes
1 cup water
1 tablespoon pork fat or 1 tablespoon vegetable oil
1 large onion
3 stalks celery
2 cups cooked barley
1 -1 1/2 cup diced slow roasted pork shoulder
1/2 cup pork broth, from cooking the roast
1 cup frozen peas
1/2 teaspoon savory
1/2 teaspoon sage
salt and pepper

Steps:

  • Use pork shoulder that has been roasted in a covered casserole with some water and a little soy sauce or salt.
  • You will need to cook about 1/2 to 2/3 cup of barley to get 2 cups cooked barley.
  • Wash and trim the potatoes, and cut them into 1 cm (1/2") dice.
  • Put them in a large heavy skillet with the water, and boil for about ten minutes, until the water is gone.
  • Stir frequently, especially when the water is almost gone, to prevent sticking.
  • Just as the water is gone, add the fat and stir it in well.
  • Meanwhile, peel and dice the onion, and wash and dice the celery.
  • Add them as soon as the fat is melted, and saute until they are soft and the potatoes are slightly browned.
  • Add the barley, meat, broth and peas.
  • Season the hash and continue to cook, stirring frequently, until well amalgamated, and hot through.

2 1/2 pounds pork butt, cut into 1 1/2-inch cubes (do not trim fat)
Kosher salt and freshly ground black pepper
12 cloves garlic
1 large yellow onion, diced
10 sprigs fresh thyme
3 bay leaves
3 sprigs fresh rosemary
5 ounces your favorite beer
1 1/4 cups vegetable oil
3 tablespoons capers, rinsed and chopped
2 tablespoons finely chopped fresh parsley
1 tablespoon finely chopped fresh rosemary
3 tablespoons finely chopped red onion
3 tablespoons finely chopped scallions
2 teaspoons grated lemon zest
2 teaspoons lemon juice
1 medium butternut squash (3 pounds), cut into 1/2-inch cubes
2 tablespoons good-quality olive oil
2 tablespoons unsalted butter
Serving suggestions: roasted almonds, golden raisins, crema, diced red onion, chopped parsley

Steps:

  • Place the pork in a bowl and sprinkle generously with salt and pepper. Add the garlic, yellow onion, thyme, bay leaves and rosemary and toss. Add the beer and oil and toss the mixture again. Cover and refrigerate for a minimum of 24 hours, tossing every 8 hours.
  • Preheat the oven to 350 degrees F. Transfer pork mixture to an ovenproof casserole dish or roasting pan. Bake, uncovered, for 3 hours, stirring every 30 minutes to prevent the top from browning. The pork is done when you can squeeze a piece between your fingers and it falls apart.
  • Strain the meat, reserving the fat. Remove and discard the herb stems; save the garlic and onion. Gently shred the pork, discarding any gristle.
  • Mix into the shredded pork the reserved garlic and onion and 3 tablespoons of the reserved pork fat. Then mix in the capers, parsley, rosemary, red onion, scallions, lemon zest, and lemon juice. Season with salt and pepper.
  • Chill pork hash in refrigerator for at least 1 hour.
  • Preheat the oven to 400 degrees F. Place the butternut squash in a small mixing bowl, sprinkle with salt and pepper, and toss with olive oil. Spread the squash in a single layer on a baking sheet and roast until the edges are brown and crispy, 8 to 10 minutes.
  • Divide the pork hash into 4 to 6 portions. Heat a griddle or frying pan over medium-high heat. Add the butter, followed by the hash portions, flattening each into a patty about 2/3 inch thick. Press 2 tablespoons of the roasted squash onto the top of each patty. Brown the patties on one side, approximately 5 minutes. Flip and brown on the other side, another 3 minutes.
  • Transfer each patty to a dinner plate. Top with cool, crunchy, chewy and colorful garnishes, such as golden raisins, diced red onion, roasted almonds, crema and chopped parsley. (You can also top the pork hash with a fried egg.) Enjoy!

CREAMY PORK HASH



Creamy Pork Hash image

Yield serves 4. serving size: 2 heaping tablespoons.

1 medium onion, diced
2 tablespoons vegetable oil
One 10 3/4-ounce can cream of mushroom soup
1/2 cup frozen peas
1/2 cup frozen sliced carrots
1 cup diced cooked potatoes
2 cups cooked pork roast (page 5) cut into medium dice
1 cup water
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Sauté the onion in the vegetable oil in a skillet.
  • Add the cream of mushroom soup, peas, carrots, and potatoes.
  • Add the pork and thin the mixture with the water.
  • Add the salt and pepper.
  • Cover the skillet and simmer for 15 minutes.
  • Serve 2 heaping tablespoons on a dinner plate. Refrigerate the remainder.

GRILLED PORK WITH LEMON & THYME BARLEY

2 tbsp red wine vinegar
2 garlic cloves , crushed
1 tbsp sunflower oil
1 small onion , finely chopped
1 tsp coriander seeds
200g pearl barley
600ml hot chicken stock
4 lemon thyme sprigs, leaves only
100g bag baby spinach
juice and zest 1 lemon

Steps:

  • Place the pork in a shallow dish and add the vinegar and garlic, turning to make sure they're evenly covered. Leave at room temperature for 10 mins. Meanwhile, heat the oil in a pan and cook the onion and coriander seeds for 3-4 mins until softened.
  • Add the barley and cook for 1 min in the oil, then add the stock and thyme. Bring to the boil, cover then simmer for 30-35 mins until the barley is tender and the liquid absorbed.
  • Transfer the pork to a grill pan and cook under a hot grill for 5 mins on each side until nicely browned and cooked through. Stir the spinach, zest and juice into the barley and spoon onto plates. Serve with the grilled pork.

1 teaspoon fresh thyme
1 teaspoon fresh sage
salt and pepper
1 -2 tablespoon olive oil

2 garlic cloves, chopped
1 granny smith apple, peeled, cored, and chopped
1 granny smith apple, peeled, cored, sliced
1 cup barley
2 1/2 cups chicken stock

1 teaspoon cinnamon

Steps:

  • Preheat oven to 375f.
  • Heat 1 tbsp oil in skillet.
  • Season pork with salt, pepper, sage and thyme, brown on both sides 4 mins per side, remove.
  • Add extra olive oil if needed.
  • Sauté onion, garlic, peppers until softened.
  • Add barley and coat, stir in stock and bring to a boil.
  • Lower heat and simmer, covered for 15 minutes.
  • Stir in chopped apple.
  • Put barley mixture into a casserole pan.
  • Top with pork chops and bake, covered for 40 minutes.
  • Mix butter, maple syrup, cinnamon and brown sugar in a small dish.
  • Uncover casserole, add pork and apple slices, and brush with maple sugar mixture.
  • Cook an additional 10-15 minutes.
  • Let it stand a few minutes, and serve.

1 3/4 pounds all-purpose potatoes, peeled, cut into 1/4-inch slices and washed in cold water
1 1/2 cups water
3/4 pound onions (about 2 medium-size onions), peeled and cut into 1/2-inch dice
A few tablespoons of juice left over from the pork roast, if any remains (see recipe)
3 to 4 cloves garlic, peeled, crushed and chopped (about 1 tablespoon)
1/3 cup minced scallion (3 to 4 scallions)
3 tablespoons olive oil
1/4 teaspoon Tabasco sauce
3/4 teaspoon salt
2 teaspoons Worcestershire sauce
10 to 12 ounces leftover pork roast (see recipe), cut into 1/2-inch dice (about 2 1/2 cups)
1 fried egg, for garnish (optional)

Steps:

  • In a 12-inch nonstick skillet (or 2 smaller nonstick skillets), place the sliced potatoes with the water, onion and juice from the pork roast. Bring to a boil, cover and boil over medium heat for 10 minutes. Then add the garlic, scallion, olive oil, Tabasco, salt, Worcestershire sauce and the leftover pork roast. Mix well and cook, uncovered, stirring over high heat for about 5 minutes.
  • Most of the moisture will have evaporated by now and the mixture should start to sizzle. Since the hash will begin to stick at this point, use a flat wooden spatula to scrape up the crusty bits sticking in the bottom of the pan and stir them into the uncooked mixture. Continue to cook over medium heat for about 20 minutes, stirring every 3 or 4 minutes. The mixture will brown faster in the last 10 minutes of cooking and should then be stirred every 2 or 3 minutes.
  • At the end of the cooking time, the mixture will stop sticking to the pan. Press on the mixture to make it hold together and fold the solid mass into an oval omelet shape. Invert onto a large platter. Serve immediately as is or with one fried egg on top.
