PAKORA RECIPE | VEGETABLE PAKORA



Pakora Recipe | Vegetable Pakora image

Mixed Vegetable pakora are veggie fritters made in South Indian style. They are addictive, aromatic, crunchy and a delicious snack. Serve them with cup of tea or mint chutney.

Number Of Ingredients 15

½ cup besan ((gram flour, more if needed))
¼ cup rice flour ((or 2 tablespoons corn starch, use more if needed proportionally with besan))
½ teaspoon salt
3 green chili peppers (chopped or ½ to 1 teaspoon red chilli flakes (adjust to taste))
2 tablespoons mint leaves (or coriander leaves or dill leaves chopped)
1 teaspoon ginger garlic paste ( or crushed ginger)
¼ to ½ teaspoon garam masala powder ((optional))
½ teaspoons carom seeds ((ajwain, optional))
oil for deep frying as needed
1 medium carrot ( (¾ cup julienned))
¼ cup capsicum ((bell peppers))
1 cup cabbage ((shredded))
1 medium onion ((thinly sliced))
6 french beans ((julienned))
1 cup spinach (chopped (optional))

Steps:

  • Wash the veggies and cut to thin 2 inch long strips. Check the pictures in the post.
  • Add them to a bowl along with ginger garlic, green chilies (or chilli flakes), salt, garam masala, mint or other herbs. Mix well & squeeze them gently to release moisture. Keep aside for 10 mins.
  • Add the gram flour, rice flour (or corn starch) along with ajwain (optional). Mix well to a slightly sticky dough. If the dough is too dry, sprinkle a few tablespoons of water and mix. It must be of a sticky dough consistency and not batter consistency.
  • Taste test and add more salt, garam masala or green chilies.
  • Heat oil in a deep pan on a medium heat. Test by dropping a small portion of dough, it must sizzle and come up but not brown. This is the right temperature.
  • Take small portions of dough and flatten with your fingers to 1½ inch size portions and gently slide to the hot oil. You won't shape it or drop it in lumps.
  • Regulate the flame to medium. Do not disturb for a minute or 2 until they firm up a bit. Then stir them and fry until golden, crisp and aromatic.
  • Remove the vegetable pakoras to a cooling rack or steel colander. To make the next batch, ensure the oil is hot enough but not smoking hot. Fry in batches until you finish all of the prepared dough.
  • Serve vegetable pakora hot with a cup of masala tea or green chutney.
  • To keep them crispy for longer, place them on a wired rack in a low oven setting. You can also reheat them in air fryer.

2 tablespoons olive oil
4 ounces pancetta, diced
1 small red onion, halved
1 carrot, halved
2 cloves garlic, smashed
1/4 teaspoon red pepper flakes
3/4 teaspoon kosher salt
Two 14-ounce cans finely chopped or crushed tomatoes, such as Mutti
2 cups low-sodium chicken broth or vegetable broth, plus up to 1 cup more
4 cups stale bread cubes (1-inch cubes)
2 sprigs basil
One 2-inch piece Parmesan rind
1 cup freshly grated Parmesan
1/4 cup freshly grated Parmesan
3 tablespoons extra-virgin olive oil
2 tablespoons chopped fresh basil

Steps:

  • Heat a medium Dutch oven over medium-high heat. Add the olive oil and pancetta, and cook until the pancetta is brown and crispy, about 4 minutes. Remove to a paper-towel-lined plate to drain.
  • Add the red onion, carrot, garlic and red pepper flakes to the pot. Reduce the heat to medium and cook, stirring often, until fragrant, 1 minute. Add the salt, canned tomatoes, chicken broth and bread cubes; stir to combine. Nestle in the basil sprigs and Parmesan rind. Bring to a simmer, then reduce the heat to maintain a gentle bubble. Stir in the pancetta.
  • Cook for 25 minutes, stirring often to break apart the bread and prevent the Parmesan rind from sticking to the bottom of the pan. If the soup gets too thick, add extra broth as needed; the finished soup should be silky and thickened. Stir in the grated Parmesan.
  • To serve, ladle the soup into bowls and top with a sprinkling of Parmesan, a drizzle of olive oil, and chopped basil.

3 tablespoons extra-virgin olive oil, 3 turns of the pan, plus some for drizzling
4 to 6 cloves garlic, chopped
1 medium to large onion, finely chopped
1 (15-ounce) can diced tomatoes
1 (28-ounce) can crushed tomatoes
Salt and pepper
1 quart chicken stock
4 cups, about 1/2 pound, chopped or torn stale bread
2 (15-ounce) cans small white beans, such as Goya brand (smaller than cannellini beans)
1/2 cup grated Parmigiano-Reggiano to pass at table
10 fresh basil leaves, torn, optional

Steps:

  • Heat a medium soup pot over medium heat. Add 3 tablespoons extra-virgin olive oil, garlic and 3/4 of the onion. Cook 7 to 8 minutes, then add tomatoes and crushed tomatoes and season with salt and pepper. Add stock and raise heat to make the soup bubble. Reduce heat to simmer and add bread and beans. Stir soup as it simmers until it thickens to a stew-like consistency. Turn off heat, adjust seasonings and ladle into shallow bowls. Top with grated cheese, an additional drizzle of extra-virgin olive oil and a spoonful of reserved finely chopped raw onions. Torn basil is an optional garnish.

4 pounds whole pork shoulder
1/2 cup calamansi juice
1/4 cup soy sauce
1 onion, peeled and sliced thinly
4 cloves garlic, peeled and minced
1/4 teaspoon peppercorns, cracked
1/4 cup canola oil
2 large potatoes, peeled and sliced into 1/4-inch thick rounds
1 cup tomato sauce
1 1/2 cups water
1 bay leaf
1 can (3 ounces) liver spread
1 salt and pepper to taste

Steps:

  • In a large bowl, combine calamansi juice, soy sauce, onions, garlic, and peppercorns. Whisk until distributed.
  • Add pork and massage marinade on the meat. Marinate in the refrigerator for about 2 to 4 hours. Drain meat, reserving liquid, onions, and garlic.
  • In a wide, thick-bottomed pan over medium heat, heat oil. Add potatoes and cook until tender and lightly browned. Remove from pan and drain on paper towels.
  • Add pork and sear on all sides until lightly browned. Remove from the pan and drain on paper towels.
  • Remove excess oil except for about 2 tablespoons. Add the reserved onions and garlic (from the marinade) and cook until softened.
  • Add the reserved marinade, scraping sides and bottom of the pan to deglaze.
  • Add tomato sauce, water, and bay leaf. Stir to combine.
  • Add pork. Bring to a boil, skimming any scum that floats on top.
  • Lower heat, cover, and simmer until meat is fork-tender With a slotted spoon, remove and set aside.
  • Add liver spread to the sauce and stir to distribute.
  • Continue to cook until thickened. Season with salt and pepper to taste.
  • Slice pork into serving slices and arrange on a platter. Garnish with fried potatoes and pour sauce on top. Serve hot.

1/2 pound loaf stale Tuscan or other peasant bread
3 pounds very ripe tomatoes
6 tablespoons extra-virgin olive oil
1 large garlic clove, sliced
12 large basil leaves
Freshly ground black pepper to taste
Freshly grated Parmigiano Reggiano to taste (optional)

Steps:

  • Cut bread into large chunks. If any of the center is soft, discard it.
  • Cut tomatoes in half. Squeeze out the seeds and discard. Cut tomatoes into large chunks.
  • Heat oil in a large pot and saute garlic until it begins to brown.
  • Stir in the tomatoes and cook for about 5 minutes, until they soften.
  • Add bread and continue cooking, stirring occasionally, until bread has absorbed most of the liquid.
  • Shred basil and stir in along with the pepper. Allow mixture to stand for about 15 minutes or longer. Serve lukewarm or at room temperature. If desired, serve with grated Parmigiano, about one tablespoon a serving.

2 teaspoons whole cumin seeds
1 cup chickpea flour
1 teaspoon black pepper
1 teaspoon cayenne pepper
1 teaspoon ground coriander
1 teaspoon baking powder
1 teaspoon salt, plus more to taste
2 tablespoons full-fat yogurt
1 cup water
⅓ cup fresh cilantro, finely chopped
2 small onions, thinly sliced
2 jalapeñoes, seeded and thinly sliced
4 jalapeñoes, whole
3 yukon gold potatoes, peeled and sliced
1 eggplant, peeled and sliced
oil, for frying
mint chutney, for serving
tamarind sauce, for serving

Steps:

  • In a mortar and pestle or a spice grinder, crush the pomegranate and cumin seeds, then transfer to a medium bowl.
  • Add the chickpea flour, black pepper, cayenne, coriander, baking powder, and salt, and stir to combine.
  • Mix in the yogurt, water, and cilantro, and stir until evenly incorporated. A few lumps are okay. Rest for 15 minutes to let the flour hydrate.
  • Heat the oil in a large pot until it reaches 350°F (180°C).
  • Mix the onions and sliced jalapeños into the batter.
  • Dip the slices of potato, eggplant, and the whole jalapenos into the batter. Try to get the onions and other bits in the batter stuck to the dipped veggies to create more texture.
  • Fry the dipped vegetables, making sure not to overcrowd the pot, until deep golden brown, about 3-4 minutes.
  • Drain on a wire rack or paper towels, then salt the pakoras while they are still hot.
  • Dip in mint chutney, tamarind sauce, and/or ketchup.

Steps:
