Consomme Pork Chops and Rice image

This is a very easy and good pork chop recipe that I have been making for 30 years. This recipe could be cut in half and baked in an 8X8 pan instead.

2 cups long grain rice
1/2 cup butter (1 stick)
1 1/2 cups chopped onions (one large onion)
2 (10 1/2 ounce) cans campbells beef consomme soup, gelatin added
10 1/2 ounces water (1 soup can)
1/2 teaspoon fresh ground black pepper
2 lbs pork chops (5 medium size)

Steps:

  • Preheat oven to 350 degrees.
  • Over medium high heat in dutch oven on the stove, combine rice, butter and onion. Cook until rice is lightly browned, butter melted and onion soft.
  • Add 2 cans Consomme Beef soup
  • Add 1 can water.
  • Add 1/2 teaspoon fresh ground black pepper.
  • Bring to a boil.
  • lightly spray a 9X13 pan and pour mixture into sprayed pan; distributing mixture evenly.
  • lay pork chops in a single layer over the top.
  • Bake for 1 hour uncovered.

4 -6 pork chops
2 (10 1/2 ounce) cans beef consomme
4 cups water
2 cups brown rice
1/2 cup flour
2 tablespoons butter
salt
pepper
garlic powder

Steps:

  • Sprinkle chops with a little salt, pepper and garlic powder.
  • dredge chops in flour and set aside.
  • pour oil into large skillet and cook the chops in hot oil until golden brown on both sides.
  • set chops aside.
  • spray baking dish with non stick spray.
  • combine beef consomme,4 cups of water and rice into baking dish.
  • sprinkle salt and pepper and stir with a fork.
  • add chops to rice mix.
  • cover with foil and bake at 350 for 40 minutes.
  • take out of oven and remove foil.
  • stir in 2 tablespoon of butter.
  • bake an additional 30 minutes or until rice is done. additional water may need to be added.

2 tablespoons olive oil
2 tablespoons all-purpose flour
6 pork chops
salt and pepper to taste
1 cup uncooked long grain white rice
1 cup beef consomme
½ cup water
1 onion, thinly sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat the oil in a skillet over medium heat. Place the flour in a shallow dish. Season pork chops with salt and pepper, and press in the flour to lightly coat. Place chops in the skillet, and lightly brown on both sides. Drain on paper towels.
  • In a large baking dish, mix the rice, consomme, and water. Arrange onion slices over the rice. Top with pork chops.
  • Bake in the preheated oven 1 1/2 hours, or until rice is tender and pork is done.

6 pork loin chops, not too thick
2 cups brown Minute Rice
2-3 cups water
cans 1 or 2 beef consomme soup
1 1/2 Tablespoons beef bouillon

Steps:

  • After washing pork chops, place them in large fry pan and lightly brown on both sides.
  • When browned, add rice and enough water to cover pork chops and rice. Bring to a boil and then lower temperature to medium heat. After 15 minutes, check tenderness of pork chops with a fork. If not as tender as desired, add more water again covering the pork chops.
  • When tender, add one can of beef consomme and the beef bouillon. If rice has absorbed most of the liquid, more consomme or water should be added. Simmer 10 minutes to allow consomme and bouillon to cook in before serving. Serve with a green vegetable or a green salad.
