6 bone-in pork loin chops (8 ounces each)
1 tablespoon canola oil
1 large onion, sliced
1 large sweet red pepper, sliced
1 jar (4-1/2 ounces) sliced mushrooms, drained
1 can (28 ounces) diced tomatoes, undrained
1 tablespoon brown sugar
1 tablespoon balsamic vinegar
2 teaspoons Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon pepper
Hot cooked egg noodles, optional

Steps:

  • In a large skillet, brown pork chops in oil. Transfer to a 5-qt. slow cooker. Layer onion, red pepper and mushrooms over pork chops. , In a large bowl, combine the tomatoes, brown sugar, vinegar, Worcestershire sauce, salt and pepper; pour over pork and vegetables., Cover and cook on low for 8-9 hours or until pork is tender. Serve with noodles if desired.

4 pork chops (each about an inch thick)
salt & freshly ground black pepper
2 -3 garlic cloves, finely chopped
1 bunch scallion, cut into one-inch pieces
2 tablespoons red wine vinegar or 2 tablespoons white wine vinegar
2 tablespoons brown sugar
28 ounces can diced fire-roasted tomatoes

Steps:

  • Place a large skillet over medium-high heat with 2 turns of the pan of EVOO, about 2 tablespoons. Season the pork chops with salt and freshly ground black pepper, and sear them in the hot pan until golden brown, about 3 minutes per side. Remove the chops to a plate and cover them with foil.
  • To the same pan the chops were cooked in, add the garlic and scallions. Cook until the scallions begin to get tender, 3-4 minutes.
  • To the pan with the scallions, add the vinegar, brown sugar and tomatoes. Bring the sauce up to a bubble and add the pork chops back inches Finish cooking the pork chops in the sauce, 3-4 minutes. (If your chops are really thick, cover the pan with a lid or a piece of aluminum foil.).

4 bone-in pork loin chops
1/8 teaspoon pepper
2 medium onions, chopped
2 celery ribs, chopped
1 large green pepper, sliced
1 can (14-1/2 ounces) no-salt-added stewed tomatoes
1/2 cup ketchup
2 tablespoons cider vinegar
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon lemon juice
1 teaspoon beef bouillon granules
3 tablespoons cornstarch
2 tablespoons cold water
Hot cooked rice or mashed potatoes, optional

Steps:

  • Place chops in a 3-qt. slow cooker; sprinkle with pepper. Add the onions, celery, green pepper and tomatoes. Combine the ketchup, vinegar, brown sugar, Worcestershire sauce, lemon juice and bouillon; pour over vegetables. This is a variation of the 'Tangy Chicken' recipe here on Allrecipes.com. It's fast and easy. It makes the chops very juicy and tender. You may be put off by the lemon, but you really don't taste it that strong, it's overpowered by the Worcestershire Sauce. It seems the acid in the lemon helps make the more meat tender and helps the flavor soak in. The garlic is just a hint also, not too strong at all! Garlic powder could also be used.

1 pound roma tomatoes, quartered
1 pound sliced button mushrooms
5 cloves garlic, chopped
2 tablespoons extra virgin olive oil
salt and pepper to taste
1 teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon ground cumin
¼ teaspoon ground coriander
¼ teaspoon dried oregano leaves
¼ teaspoon dried marjoram leaves
¼ teaspoon dried thyme leaves
¼ teaspoon dried rosemary, crushed
¼ teaspoon dried sage leaves, crushed
¼ teaspoon dried basil leaves
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon ground paprika
¼ teaspoon white sugar
¼ teaspoon crushed red pepper
2 ¼ pounds pork chops

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • In a 9x13 inch baking dish, toss tomatoes, mushrooms, garlic, and olive oil with salt and pepper to taste. Mix lightly with hands to coat all ingredients with oil, and spread the tomato-mushroom mixture to the edges of the dish, leaving the center free for the pork chops.
  • Combine 1 teaspoon salt, 1/2 teaspoon black pepper, cumin, ground coriander, oregano, marjoram, thyme, rosemary, sage, basil, garlic powder, onion powder, ground paprika, sugar, and crushed red pepper in a bowl to make a spice rub.
  • Sprinkle the pork chops with the spice rub, working the rub well into both sides of the meat. Place pork chops in the center of the baking dish, surrounded by the tomato and mushroom mixture.
  • Roast in preheated oven until the pork is no longer pink in the center and mushrooms are tender, about 45 to 50 minutes. An instant-read thermometer inserted into the center of a chop should read 145 degrees F (63 degrees C). Transfer pork chops to a serving dish and top with roasted tomato-mushroom mixture and all pan juices to serve.
