SOUTHWEST GREEN BEAN CASSEROLE
Not your typical green bean bake...with chipotles and corn chips, this may become a newfound favorite! Better yet, it's a great potluck option, serving 14 with five ingredients and 10 minutes to assemble.

Steps:
- Heat oven to 350°F. In ungreased 2 1/2-quart casserole, place green beans. In medium bowl, mix soup, dip and chiles; stir into beans. Bake 20 minutes.
- Remove from oven. Stir mixture; bake 15 to 25 minutes longer or until hot and bubbly. Sprinkle with corn chips; bake 5 to 10 minutes longer or until bubbly around edge.

GREEN BEAN CASSEROLE

- Bring a large pot of water to a boil; add a big pinch of salt and the green beans. Cook for about 5 minutes, the beans should still be crisp, they will be cooked more in the oven. Drain them and set aside. Butter a baking dish large enough to hold the green beans with 1 tablespoon butter and set aside.
- Heat the oven to 375 degrees F.
- Tear the bread into 2-inch pieces, put them into a bowl, and add 1 tablespoon chives, 1 tablespoon thyme, 1 tablespoon rosemary, 2 tablespoons Parmesan, and 3 tablespoons olive oil. Stir well to coat and spread onto a baking sheet. Bake just until the bread just starts to turn golden, about 10 minutes. Remove from the oven and set aside.
- Meanwhile, melt the remaining butter and olive oil in a large skillet over medium heat. Add the mushrooms and shallots, season with salt and pepper, and cook until the mushrooms have released their liquid, about 10 minutes. Pour in the heavy cream, add the remaining thyme and chives, and cook for another 5 minutes. Add the green beans and stir well. Put the green bean mixture into the prepared baking dish, top with the croutons, and sprinkle on the remaining Parmesan. Bake until everything is hot and bubbling, about 20 to 25 minutes.
GREEN BEAN CASSEROLE SALAD

- Bring a large pot of salted water to a boil. Fill a bowl with ice water and set aside.
- Add the green beans to the boiling water and cook until bright green and tender-crisp, about 4 minutes. Transfer the green beans to the ice bath to stop the cooking. Drain the beans and add them to a mixing bowl.
- Add the olive oil to a large skillet over medium-high heat. When the oil is shimmering, add the mushrooms, shallot, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring occasionally, until the vegetables are browned, 5 to 7 minutes. Add the cheese and stir to melt. Turn the heat off and add the mixture to the bowl with the green beans. Toss until everything is creamy and thoroughly combined. Season with 1/2 teaspoon salt and 1/2 teaspoon pepper. Toss to combine. Top with the fried onions. Serve at room temperature or refrigerate until ready to serve.

- Preheat oven to 350 degrees F. Butter a 9 x 9-inch baking dish.
- In a small mixing bowl, combine all ingredients for topping and set aside.
- Heat oil in a small skillet, add shallots and cook until tender, about 2 minutes. Add mushrooms and continue to cook until all moisture evaporates. Add flour and continue to cook for 1 minute. - In a 1 1/2 quart casserole, mix soup, milk, soy sauce, pepper, green beans and 2/3 cup fried onions.
- Bake for 25 minutes or until hot.

Steps:
- Whisk the egg with a fork in a small bowl. In a separate bowl, stir together the flour and pepper. Heat the oil in a heavy skillet or deep fryer to 375 degrees F (190 degrees C). Dip each onion ring into the egg and then coat with flour. Add them to the hot oil a few at a time. Fry until golden brown, turning once if needed, it should take about 3 minutes. Set them onto a paper towel-lined plate to drain and cool. Chop into 1/2 inch pieces.
- Preheat the oven to 350 degrees F (175 degrees C).
- In a medium bowl, stir together the green beans, cream of mushroom soup, and milk. Stir in about half of the onions. Transfer to a casserole dish.
- Bake in the preheated oven until heated through and bubbly, about 25 minutes. Remove from the oven and sprinkle the cheese and remaining onions on top. Bake until browned on the top, about 10 more minutes. Remove from the oven and garnish with a sprinkle of paprika and black pepper.

SHEILA'S GREEN BEAN CASSEROLE - WEST
This is the most incredible green bean casserole. The mushroom base is just fabulous tasting with the porcinis in it. When it's time to plan our Thanksgiving, everyone says "are you gonna make your green bean casserole?" with a hopeful look in their eyes.

- TOPPING:.
- Pulse bread, butter, salt, and pepper in workbowl of food processor fitted with metal blade until mixture resembles coarse crumbs, about ten 1-second pulses. Transfer to large bowl and toss with onions; set aside.
- BEANS:.
- Heat oven to 375 degrees.
- Bring 4 quarts water to boil in large pot. Add 2 tablespoons salt and beans.
- Cook until bright green and slightly crunchy, 4 to 5 minutes.
- Drain beans and plunge immediately into large bowl filled with ice water to stop cooking.
- Spread beans out onto paper towel-lined baking sheet to drain.
- Meanwhile, cover dried porcini with ½ cup hot tap water in small microwave-safe bowl; cover with plastic wrap, cut several steam vents with paring knife, and microwave on high power for 30 seconds. Let stand until mushrooms soften, about 5 minutes.
- Lift mushrooms from the liquid with fork and mince using chef's knife (you should have about 2 tablespoons).
- Pour liquid through paper towel-lined sieve and reserve.
- Melt butter in large nonstick skillet over medium-high heat until foaming subsides, about 1 minute. Add onion, garlic, button mushrooms, and cremini mushrooms and cook until mushrooms release their moisture, about 2 minutes.
- Add porcini mushrooms along with their strained soaking liquid, thyme, 1 teaspoon salt, and pepper and cook until all mushrooms are tender and liquid has reduced to 2 tablespoons, about 5 minutes.
- Add flour and cook for just over 1 minute.
- Stir in chicken broth and reduce heat to medium.
- Stir in cream and simmer gently until sauce has consistency of dense soup, about 15 minutes.
- Arrange beans in 3-quart gratin dish.
- Pour mushroom mixture over beans and mix to coat beans evenly.
- Sprinkle with bread crumb mixture and bake until top is golden brown and sauce is bubbling around edges, about 15 minutes. Serve immediately.
