ENGLISH MUFFINS MADE WITH POTATO WATER



English Muffins Made With Potato Water image

Number Of Ingredients 6

2 3/4 cups flour, more as needed
1 package yeast
1 tablespoon sugar
1 1/4 cup warm potato water
1 tablespoon margarine
cornmeal

Steps:

  • In large mixer bowl, combine 1 1/4 cups flour, yeast, and sugar. Add warm potato water and margarine and mix, at low speed, until moistened. Beat for 3 minutes at medium speed. Gradually add enough additional flour to form a firm dough. Using dough hook, knead until smooth and elastic, about 5 minutes. Place in a greased bowl, turning to coat top. Cover and let rise in a warm place until doubled, about 45 minutes. Punch down. On a surface sprinkled with cornmeal, divide into 12 pieces. Smooth each into a ball, then flatten to about 1/2-inch thickness. Press into cornmeal on both sides. Cover and let rise for about 25 minutes. Heat nonstick griddle to 325 degrees F. Bake muffins for 10 minutes per side. Or until golden brown.. Cool on wire racks. To serve, split with a fork and toast. cook's notes Potato water is the starchy water that results from boiling peeled potatoes.

Steps:

  • In a bowl, beat egg and milk. Combine the flour, sugar, baking powder and salt; stir into egg mixture just until moistened. Fold in potatoes and parsley. Fill greased muffin cups two-thirds full., Bake at 400° for 30-35 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

1 cup flour
4 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon sugar
1/2 teaspoon nutmeg
2 tablespoons butter
1/2 cup cold mashed potatoes
1/3 cup milk (plus or minus a tiny bit)

Steps:

  • In a large bowl mix the flour, baking powder, salt, sugar, and nutmeg.
  • Cut in the butter with 2 knives or a pastry cutter until it resembles coarse meal.
  • Mash the potato until it is smooth.
  • Add it to the flour.
  • Make a well in the center of the flour and add the milk.
  • Mix it lightly with a fork, adding more milk if needed to make a soft dough.
  • Put it on a lightly floured surface and knead it until smooth.
  • Pat it (or roll it) to 1/2 inch thickness or less.
  • Using a 3 inch cookie cutter (or whatever you use to make 3 inch rounds) cut them out.
  • Dust a griddle with flour and heat until the flour browns just a bit.
  • Cook the muffins on the griddle (at medium to medium-high heat) until they are cooked through and golden brown, turning them once.
  • Serve them hot with your favorite topping.

I've used this delicious recipe for about 29 years. They are very good... much better than any store-bought English Muffins I've ever had.

1 cup milk
2 tablespoons white sugar
1 (.25 ounce) package active dry yeast
1 cup warm water (110 degrees F/45 degrees C)
¼ cup melted shortening
6 cups all-purpose flour
1 teaspoon salt

Steps:

  • Warm the milk in a small saucepan until it bubbles, then remove from heat. Mix in the sugar, stirring until dissolved. Let cool until lukewarm. In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
  • In a large bowl, combine the milk, yeast mixture, shortening and 3 cups flour. Beat until smooth. Add salt and rest of flour, or enough to make a soft dough. Knead. Place in greased bowl, cover, and let rise.
  • Punch down. Roll out to about 1/2 inch thick. Cut rounds with biscuit cutter, drinking glass, or empty tuna can. Sprinkle waxed paper with cornmeal and set the rounds on this to rise. Dust tops of muffins with cornmeal also. Cover and let rise 1/2 hour.
  • Heat greased griddle. Cook muffins on griddle about 10 minutes on each side on medium heat. Keep baked muffins in a warm oven until all have been cooked. Allow to cool and place in plastic bags for storage. To use, split and toast. Great with orange butter, or cream cheese and jam.

Here is an easy recipe that makes muffins much better than store-bought and is also a good way to use your extra sourdough. I found this recipe on a website called 'The Fresh Loaf' and tweaked a few of the details based on my experience. There is some amount of planning ahead needed as you have to start the night before, but it is definitely worth it.

1 cup milk
½ cup sourdough starter
2 cups all-purpose flour
1 tablespoon white sugar
1 teaspoon baking soda
½ teaspoon salt
½ cup unbleached all-purpose flour
1 tablespoon cornmeal, or as needed

Steps:

  • Stir milk and sourdough starter together in a large bowl until mostly smooth. Mix in flour. Cover bowl and leave to ferment at room temperature, 8 hours to overnight.
  • Add sugar, baking soda, and salt to the preferment, stirring just enough to incorporate. Turn dough out onto a lightly floured work surface. Knead for 4 to 5 minutes, adding as much of the 1/2 cup flour as needed to make the dough workable.
  • Use a rolling pin to flatten dough to an even 1/2-inch thickness. Cut into 4-inch rounds using a clean tuna can or biscuit cutter; keep edges well floured to avoid sticking.
  • Sprinkle a thin layer of cornmeal over a sheet of waxed paper. Arrange cut-outs over the cornmeal. Sprinkle a thin layer over the dough. Let rest for 45 minutes.
  • Heat a griddle or cast iron skillet over medium-low heat. Cook English muffins until lightly browned, 5 to 6 minutes. Cool on a wire rack.

  • Rest for 1.5 hours at room temperature (or let rest overnight in the fridge).
  • Roll out dough and with a cookie cutter and cut circles to form English muffins. Let circles rise for 45 minutes.
