Beer and caraway seeds flavor this rye casserole bread. Good with ham or roasted meats, it's great for making sandwiches!

2 cups bread flour
3/4 cup dark rye flour
1 tablespoon active dry yeast (1 package)
1 tablespoon caraway seed
1 teaspoon salt
1 (12 ounce) can beer or 1 1/2 cups water
2 tablespoons vegetable oil
2 tablespoons molasses

Steps:

  • Measure 1 cup of the bread flour, all the rye flour, and the yeast, caraway seeds, and salt into large bowl of electric mixer.
  • In saucepan, heat beer, oil, and molasses to 120°F - 130°F Pour liquids over dry ingredients in bowl and beat on high speed until smooth, about 3 minutes, clean down bowl with rubber spatula. Add remaining bread flour and stir until flour is evenly blended into mixture.
  • Turn batter into greased 1 1/2 quart casserole dish. Let rise in warm place until almost doubled, about 45 minutes.
  • Heat oven to 350°F Bake until wooden skewer inserted in the center comes out clean, about 30 minutes. Cool 10 minutes, then remove bread from baking dish and cool on wire rack.

2 cups rye flour
1 ½ cups room temperature beer
2 (.25 ounce) packages active dry yeast
2 tablespoons white sugar
1 tablespoon salt
2 tablespoons shortening
1 egg
3 cups bread flour
1 tablespoon caraway seed
1 tablespoon cornmeal

Steps:

  • Combine rye flour, beer, and yeast in a large bowl. Cover bowl with plastic wrap. Set out overnight. Do not refrigerate.
  • The next day, add sugar, salt, shortening, and egg; beat with mixer until smooth. Stir in caraway seeds, if wanted. Add enough white bread flour to make a soft dough.
  • Knead on a lightly floured surface until smooth, approximately 10 minutes. Place in a greased bowl, and turn to oil the surface of the dough. Let rise in warm place about 1 hour, or until doubled.
  • Punch down dough, and divide in half. Shape into round or oblong loaves, and place on greased baking sheets sprinkled with corn meal. Let rise for 30 minutes.
  • Bake at 400 degrees F (205 degrees C) for 30 minutes. Cool on racks.

3 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon sugar
1 teaspoon salt
12 ounces beer, room temperature
2 tablespoons caraway seeds
2 tablespoons butter, melted

Steps:

  • Heat oven to 350°F.
  • Coat 9" x 5" x 3" loaf pan with cooking spray.
  • Mix flour, baking powder, sugar, and salt in a large bowl.
  • Make a well in the center.
  • Add beer and caraway seeds to well; stir in liquid into flour mixture just until flour is moistened.
  • Scrape into pan.
  • Bake in 350°F oven for 50 minutes.
  • Brush top with half of melted butter.
  • Bake 10 more minutes or until lightly browned.
  • Remove loaf to rack.
  • Brush on remaining butter.
  • Serve warm or at room temperature.

12 ounces beer
1/4 cup French onion dip
1 tablespoon caraway seed
1 tablespoon butter

Steps:

  • Preheat oven to 350°. Mix Flour, Beer, Brown Sugar, French Onion Dip & Caraway seeds to make batter. Spray large loaf pan with non-stick spray (i.e. Pam) then pour batter into pan. Bake at 350° for 45 minutes Brush loaf with melted butter and bake for an additional 10-15 minutes.

1/2 cup lukewarm water
1 teaspoon sugar
1/2 cup flour
1 tablespoon salt
1 cup sour milk (or buttermilk)
1 (12 ounce) bottle beer
1 1/2 cups white flour
5 cups rye flour
3 tablespoons caraway seeds (optional)

Steps:

  • Sprinkle yeast over sugar & water. Allow to soften 10 minutes.
  • Stir.
  • Stir in half cup flour and allow to stand til bubbles form.
  • Add salt, milk, beer, white and rye flour and caraway seeds.
  • Mix dough til it is thick.
  • Knead on a lightly floured surface til smooth an elastic.
  • Return to bowl, cover, and let rise til doubled in bulk about 1 1/2 hours.
  • Punch down and form into 2 loaves.
  • Place loaves in buttered pans.
  • Cover.
  • Let rise til double.
  • Bake 400F 15 minutes.
  • Reduce heat to 350 and bake until loaves are done. (golden brown).

2 packages (1/4 ounce each) active dry yeast
2 cups warm water (110° to 115°), divided
1/4 cup packed brown sugar
1 tablespoon caraway seeds
1 tablespoon canola oil
2 teaspoons salt
2-1/2 cups rye flour
2-3/4 to 3-1/4 cups all-purpose flour, divided

Steps:

  • In a large bowl, dissolve yeast in 1/2 cup warm water. Add brown sugar, caraway, oil, salt and remaining water; mix well. Stir in rye flour and 1 cup all-purpose flour; beat until smooth. Add enough remaining all-purpose flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down; divide in half. Shape each half into a ball; place in 2 greased 8-in. round baking pans or ovenproof skillets. 2 cups light rye flour (such as Bob's Red Mill®)
2 cups bread flour
¼ cup buttermilk
2 tablespoons caraway seeds
1 ½ tablespoons vital wheat gluten
2 teaspoons flaked kosher salt, crushed
1 ¾ cups warm water
2 teaspoons white sugar
⅜ teaspoon active dry yeast

Steps:

  • Mix rye flour, bread flour, buttermilk, caraway seeds, vital wheat gluten, and kosher salt together in a very large bowl.
  • Combine water, sugar, and yeast in a bowl until yeast softens and begins to form a creamy foam, about 5 minutes. Stir yeast mixture into flour mixture until well mixed and caraway seeds are evenly distributed. Cover bowl with plastic wrap and let sit for 18 hours.
  • Transfer dough to a heavily floured work surface. It will be somewhat elongated, so take the right and left sides and fold them into the middle. Turn dough over and gently use a spatula to tuck corners under; cover with plastic wrap for 15 minutes. Remove plastic wrap, dust dough with flour, and make shallow cuts in the top for full bloom.
  • Place a Dutch oven in the oven and preheat oven to 500 degrees F (260 degrees C).

I recently got myself a bread machine and made my first loaf with it today. I think it will take some practice to get used to using the machine, but half the fun is learning how. I tweaked the recipe to suit my tastes and didn't use any dairy. This recipe came from the site the-recipes.com. If you do make this be careful to keep the yeast away from the liquids. Best to add the liquids first and the yeast last. I added the caraway seeds right into the mix, but if your bread machine has a timer the machine will beep and let you know when you can add extra things. I'm going to serve with with a nice cold bowl of Vichyssoise.
