Baked boneless Pork Chops with Stuffing and apples is an easy dinner recipe that's ready for the oven in just 15 minutes!

1 medium apple, chopped
1 medium onion, chopped
4 thick-cut boneless pork chops ((about 2 lbs. total))
2 teaspoons seasoned salt ((I used Lawry's brand seasoned salt))
2 teaspoons minced fresh rosemary ((or ½ teaspoon dried rosemary))
1 teaspoon minced fresh thyme ((or ¼ teaspoon dried thyme))
6 ounce box Stove Top stuffing mix, plus water and butter called for on package

Steps:

  • Preheat oven to 400 degrees F. Spray a large baking dish with cooking spray. Place apples and onions in the prepared dish; set aside.
  • Season pork chops on all sides with seasoned salt, rosemary and thyme.
  • Place seasoned pork chops on top of the apples and onions.
  • Prepare stuffing according to package instructions. Spoon stuffing onto each pork chop.
  • Spray a sheet of aluminum foil with cooking spray, and then place sprayed-side down to cover the dish.
  • Bake, covered, for 25 minutes. Remove cover and return to the oven for 5-10 more minutes, or until pork is cooked through and reaches an internal temperature of 145 degrees F. Garnish with additional fresh herbs, if desired, and serve!

2 sour oranges, juiced
4 cloves garlic, chopped
6 bay leaves
2 tablespoons salt
2 tablespoons pepper
1/2 pound ham, thinly sliced
8 slices bacon
1 cup prunes
1 cup guava shells
2 cups brown sugar
1 bottle Malta, divided
Fried Green Plantains, recipe follows
White Rice, recipe follows
Black Beans, recipe follows
Oil, for frying
4 ripe plantains, peeled
Salt
1 recipe Garlic Mojo, recipe follows
8 garlic cloves
1 teaspoon salt
1/2 cup sour orange juice or 1/4 cup sweet orange juice plus 1/8 cup fresh lime or lemon juice
9 tablespoons oil
6 cloves garlic, chopped
9 cups water
3 tablespoons salt
3 pounds rice, washed
2 pounds black beans
20 cups water
1 cup plus 4 tablespoons olive oil, divided
1 large onion, chopped
8 garlic cloves, mashed or chopped
1 green bell pepper, chopped
8 teaspoons salt
1 teaspoon pepper, optional
1 teaspoon dried oregano
2 bay leaves
4 tablespoons sugar
1 cup dry red wine
4 tablespoons vinegar

Steps:

  • Remove bone and flatten meat so that it may be rolled. If the pork shoulder is very fatty, a small amount may be removed. Score fat well and marinate for a minimum of 12 hours in the sour orange juice, garlic, bay leaves, salt and pepper. Preheat oven to 325 degrees F.
  • Line meat with ham slices, bacon slices, prunes and guava shells. Roll meat carefully to keep the filling inside the roll. Tie firmly with a butcher twine. Cover with brown sugar and 1/2 bottle of Malta and cook for 1 hour in the preheated oven. At this point, turn the meat, cover with the remaining Malta and cook for an extra hour, or until the pork reaches a temperature of 180 degrees F on an instant-read thermometer. Allow to cool and cut into fine slices. Pour the drippings over the meat after slicing the meat. Serve with the Fried Green Plantains, White Rice, and Black Beans.
  • Preheat oil in a fryer or Dutch oven to 365 degrees F. Peel the plantains and cut into 1-inch pieces. Place into preheated oil and fry for 5 minutes or until they begin to brown. Drain them on a paper-towel lines plate. Flatten them using a Tostonera or the bottom of a metal can and fry again at 385 degrees F for approximately 3 minutes. Drain again and sprinkle with salt and garlic mojo. For softer fried plantains, soak for a few minutes in salted water after the first fry, drain and fry again.
  • Yield: 8 servings

  • Inactive Prep Time: 30 minutes
  • Chop up the garlic very thinly or crush using a mortar and pestle or food processor with the salt to form a thick paste. In a mixing bowl, combine the garlic paste and juice, and let the mixture sit at room temperature for 30 minutes or longer.
  • Heat oil in a shallow casserole and brown garlic. Take it off the heat and remove garlic from the oil. Add water and salt to the oil and bring to a rolling boil. Add the washed rice and stir. Bring to a rolling boil again, cover and cook over low heat for approximately 30 minutes.
  • Yield: 20 servings
  • Prep Time: 5 minutes
  • Cook Time: 35 minutes
  • Wash the beans and soak overnight in the water. When the beans swell, cook in the same water until soft, about 45 minutes. Heat 1 cup oil in a frying pan, add onions, garlic and green peppers. Add 1 cup of the beans to the pan and mash. Add this to the beans together with the salt, pepper, if using, oregano, bay leaves and sugar. Allow to boil for a 1 hour then add the wine and vinegar allowing to cook uncovered for a while. Add the 4 remaining tablespoons olive oil just before serving.

Steps:

  • Preheat an outdoor grill for medium heat.

  • Lay the chop flat on cutting board, and with a sharp knife held parallel to the board, cut a pocket into the pork, going all the way to the bone, but leaving the sides intact. 1 box stove top pork stuffing mix
1 can cream of mushroom soup
3/4 cup water, mixed with

  • Brown chops.
  • Remove and add water to the frying pan.

  • Preheat oven to 350°F (175°C).

6 teaspoons salt
2 teaspoons cumin seeds

Guava-Mango and White Cheese Stuffing, recipe follows
Guava Rum Glaze, recipe follows
2 tablespoons rum
3 ounces preserved guava shells without syrup
3 ounces artisanal Puerto Rican white cow milk cheese, chopped into small pieces
1 whole mango, skinned pitted, and chopped into small pieces
3 ounces processed guava shells with syrup
3 tablespoons rum

Steps:

  • Make adobo seasoning by combining the peppercorns, garlic, oregano, salt, cumin, olive oil, and vinegar in a mortar and pestle or in a blender.
  • Remove skin and excess fat from meat, if necessary. Season the meat with the adobo seasoning the night before serving. Place in refrigerator overnight.
  • With a sharp slicing knife, make 1/2-inch wide incisions down the middle of the meat until open straight through the center of loin. Stuff the incisions with the Guava-Mango and White Cheese Stuffing.
  • Place meat in large heavy Dutch oven or ovensafe pot with lid and pour the glaze over. Bring to a rapid boil over high heat. Reduce the heat to medium, cover and cook for about 1 hour.
  • Preheat oven to 350 degrees F.
  • Remove pot from stove and place in oven to braise for 1 more hour, turning the meat to rotate every 20 minutes. Remove meat from pot and allow to cool slightly.
  • Add 2 tablespoons rum to deglaze the pot. Pour the remaining sauce from the pot into a glass skimmer to eliminate fat.
  • To serve, slice the meat to showcase the colorful stuffing. Fan out the slices of meat over a pool of the sauce on a serving platter. Serve with stewed rice or mashed garlic-seasoned potatoes or plantains.
  • Combine all ingredients together in a bowl with a wooden spoon or your hands.
  • In a blender, puree the guava shells in their syrup and the rum. Use as a glaze for the meat.

4 tablespoons butter
3/4 cup coarsely chopped mushroom
1/4 cup diced green bell peppers or 1/4 cup red bell pepper
1/4 cup finely chopped onion
1/4 cup flour
2 1/2 cups milk
1/4-1/2 cup shredded cheddar cheese
4 cups toasted bread, cut into cubes
1/4 cup finely chopped onion
1/4 cup finely chopped celery
1/4 cup diced mushroom (optional)
1/4 cup finely diced green bell peppers or 1/4 cup red bell pepper
3 garlic cloves
1/4 cup chopped fresh parsley
1 teaspoon ground thyme
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4 cup beef stock (or a combination) or 1/4 cup red wine (or a combination)
1/2 cup plain breadcrumbs (optional)
2 tablespoons melted butter (optional)

Steps:

  • Prepare the stuffing: In a medium saucepan, melt the butter and sauté the onions, garlic, celery, bell pepper, and mushrooms over medium heat until the vegetables have softened (about 10 minutes).
  • Stir in parsley, thyme, salt, and pepper, mixing until well combined.
  • Toss with bread cubes gently.
  • Add liquid until bread cubes are just barely mushy on the outside (you may not need the whole 1/4 cup liquid, or you may need a little more).
  • Stuff the pork chops: Slice pockets into the pork chops toward, but not quite reaching, the bone.
  • Stuff each pork chop and seal with toothpicks (I jam pack the stuffing in there, feel free to do the same).
  • Sauté the pork chops in 2 tablespoons butter for about 5 minutes per side, until browned.
  • Remove toothpicks and set pork chops in a casserole or other baking dish that will hold them.
  • If there is any stuffing left over, you may mound it on top of the pork chops.
  • Preheat oven to 350 degrees F.
  • Prepare the sauce: In a medium saucepan, melt the butter and add all the vegetables.
  • Cook over medium-high heat, stirring often, until all the vegetables are tender and the onions are translucent.
  • Lower heat to medium and sprinkle with flour.
  • Cook, stirring constantly, for about a minute.
  • Whisk in the milk, scraping the pan as you go to get up all the flour.
  • Cook, whisking often, until mixture begins to boil and thickens to a slightly thicker consistency than heavy cream.
  • Immediately remove pan from heat and stir in cheddar cheese, stirring until the cheese is melted.
  • Add salt and pepper to taste.
  • Pour sauce over the pork chops.
  • Prepare the topping: Stir the breadcrumbs into the butter until well combined.
  • Sprinkle topping over the pork chops.
  • If you're daring, lightly sprinkle the top with some very very finely grated cheddar cheese.
  • Bake at 350 degrees for about 25 to 30 minutes, until the top is browned and the sauce is bubbly.
  • Let stand for about 10 minutes unless you like third degree burns in your mouth.
  • Enjoy!
