This is by far one of the best recipes I've ever found! Succulent pork chops with a phenomenal spice rub cooked in a sweet sauce with onions and apples. A perfect autumn dish, but tasty all year-round!

1 tablespoon all-purpose flour
1 ½ teaspoons rubbed sage
1 teaspoon dried minced garlic
1 teaspoon dried thyme leaves
1 teaspoon salt
½ teaspoon ground allspice
½ teaspoon ground paprika
2 tablespoons olive oil
4 (5 ounce) boneless pork chops, about 1 inch thick
1 medium sweet onion, thinly sliced
2 medium Red Delicious apples, cored and thinly sliced
½ cup apple juice
1 ½ tablespoons brown sugar

Steps:

  • Mix flour, sage, garlic, thyme, salt, allspice, and paprika together in a small bowl. Set aside 2/3 of the spice mixture for later use. Sprinkle remaining spice mixture onto the pork chops, coating all sides.
  • Heat olive oil in a large skillet over medium-high heat. Add pork chops and cook in the hot oil until browned, 3 to 5 minutes per side. Remove pork from the skillet.
  • Add onion to the skillet and cook until tender, about 3 minutes. Add apples; cook and stir for 2 more minutes. Stir in apple juice, brown sugar, and reserved spice mixture; bring to a boil.
  • Reduce heat to low, cover, and simmer until pork is longer pink in the center, and reaches desired level of doneness, about 5 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

4 bone-in pork loin chops, 1- inch thick
Kosher salt
Extra-virgin olive oil
2 onions, thinly sliced
1 pinch crushed red pepper
2 Granny Smith apples, peeled, cored, and sliced
Pinch cinnamon
2 sprigs fresh rosemary, leaves finely chopped
2 cups apple cider

Steps:

  • Preheat the oven to 375 degrees F.
  • Season the pork chops generously with salt. Coat a large saute pan with olive oil and bring it to a high heat. Sear the pork on both sides and on the fat edge, working in batches if the chops don't all fit in the pan at the same time. Be sure not to crowd the pan. Remove the pork from the pan and place on a cookie sheet. Finish the pork in the oven for about 10 to 12 minutes. Remove from the oven and let rest for 10 minutes before serving.
  • Ditch the excess fat from the saute pan. Give a drizzle of fresh olive oil and add the onions and crushed red pepper and season with salt. Cook until the onions become soft and aromatic. Add the apples, cinnamon and rosemary and toss to coat with the oil. Add the cider and cook until the cider has reduced by two-thirds and the onion-apple mixture is very soft and saucy. Serve over the pork chops.

2 tablespoons vegetable oil
1/2 teaspoon salt

2 tablespoons Dijon mustard

Steps:

  • In a large skillet, brown pork chops in oil on each side. Season with salt and pepper; remove and keep warm. In the same skillet, saute onions and apple wedges until crisp-tender. , Combine mustard and brown sugar; brush over chops. Return to the skillet; cook for 4 minutes or until meat juices run clear.

6 bone-in pork chops (loin or shoulder), cut 3/4 inch thick
Coarse salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil or vegetable oil
2 tablespoons unsalted butter
1 large white onion, sliced
2 to 3 apples, cored and sliced (about 3 cups)
1 cup beer, white wine, cider, or chicken broth

Steps:

  • Trim the chops of excess fat. Sprinkle generously with salt and pepper on both sides. Heat a 14-inch cast-iron skillet (if you have a smaller one, you'll need to work in batches) over high heat, and then swirl in the olive oil. Lay in the pork chops and don't move them for a few minutes, to assure a good golden sear forms. Turn and brown well on the second side for a total of about 10 minutes. Transfer the chops to a warm plate.
  • Swirl the butter into the pan. Add the onion and apples. Saute until the onion slices are lightly caramelized and the apples have begun to soften, about 8 minutes. Stir in the beer or other liquid. Return chops to the pan.
  • Cook until the pork is tender, about 15 more minutes (depending on the size of the chops), turning halfway through and covering the chops with the apple mixture. If the apple mixture needs a little thickening, transfer the chops to the warm plate again and simmer the mixture on high for a few minutes to reduce. Serve the chops over rice or mashed potatoes with a large spoonful of the apple-onion mixture over the top.

olive oil (for browning chops)
salt and pepper
4 tablespoons butter
1 onion, diced
1 large apple, diced and cored
1 1/2 cups unsweetened applesauce
1 cup apple juice
1 cup beef broth
1 clove garlic, minced
2 tablespoons ground curry powder, to taste
more salt and pepper

Steps:

  • Season chops with salt and pepper; brown both sides in a skillet with a little olive oil; remove to a 9x13 inch baking dish.
  • In the same skillet, melt butter over medium heat.
  • Cook and stir onions and apples in butter until caramelized, being sure to stir up browned bits.
  • Stir in applesauce, apple juice, beef broth, garlic and curry powder.
  • Season to taste with salt and pepper; simmer on low heat until slightly thickened, continuing to stir up browned bits from pork chops.
  • Pour apple-onion mixture over chops in baking dish and cover dish with foil.
  • Bake in a preheated 400 degree oven for 45 minutes.

4 pork chops, 1 1/2-inch thick
4 large cortland apples, cored, peeled and cut into wedges
2 teaspoons crushed dried thyme
1 1/2 teaspoons ground black pepper
1/2 teaspoon salt
6 tablespoons butter
3/4 cup sugar

Steps:

  • Pat chops dry. In small bowl mix together thyme, pepper and salt; season both sides of chops; set aside.
  • In large heavy skillet melt the butter with the sugar over moderately high heat; add the apples and sauté for 30-40 minutes, until apples begin to brown.
  • Turn apples, cook for 5 minutes more, until they are golden brown and the sauce is thickened. Remove from heat and keep warm.
  • Heat another heavy skillet over medium-high heat, brush with a little vegetable oil.
  • Add chops and brown on onside, about 4 minutes; turn and brown other side, 4 minutes more.
  • Keep turning chops every couple of minutes until just done (internal temperature will reach 155 degrees F).
  • Total cooking time for chops will be around 14-18 minutes. Serve chops with apples.

Turn heat to low and continue to saute for about 10 more minutes until apples are softened and onions are translucent. During the last 2 minutes add in the brown sugar and stir through. Remove from pan and set aside.
  • Use the remaining olive oil to rub over your pork chops. Season both sides with a little salt and pepper. Remember that pork needs salt so don't skimp.
  • Heat the pan used to cook the apples and onions until it is smoking hot (a drop of water would instantly sizzle like crazy and evaporate). Put the pork chops in and sear them for about 2 minutes on each side. They'll get a nice brown crust on them so you'll know they are perfect.
  • Add in the apple juice and turn the heat down to medium low. The apple juice will sizzle and reduce fairly quickly as the pork chops finish cooking. This apple juice reduction will serve as a bit of a sauce. The remaining cooking time on your pork chops will depend on how thick they are cut.
