6 bone-in pork loin chops (7 ounces each)
1 tablespoon canola oil
3/4 teaspoon salt
1/2 teaspoon pepper
2 medium sweet onions, sliced and separated into rings
1 cup reduced-sodium beef broth
1 tablespoon cornstarch
2 tablespoons cold water

Steps:

  • In a large nonstick skillet, brown pork chops in oil over medium heat. Sprinkle with salt and pepper. Transfer to an ungreased 13-in. x 9-in. baking dish. , In the drippings, saute onions until tender. Spoon over chops; add broth. Cover and bake at 325° for 10-15 minutes or until a thermometer reads 145°. Remove pork chops and onions; keep warm. Let meat stand for 5 minutes before serving., In a small saucepan, combine cornstarch and water until smooth; stir in pan juices. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Serve with pork and onions.

1 onion, chopped
2 tablespoons of brown sugar
4 garlic cloves
¼ teaspoon pepper
1 teaspoon fish sauce
1 tablespoon olive oil
1 tablespoon soy sauce
1 tablespoon white wine vinegar
2 pork chops
4 lettuces leaves
4 mint leaves
4 basil leaves
parsley
1 red chili, slices
4 dried apricots, slices
2 spring onions, strips
broccoli sprouts

Steps:

  • Put the onion, brown sugar, garlic, pepper, fish sauce, olive oil, soy sauce, and white wine vinegar in a tall mixing cup.
  • Blend everything with your hand blender until you make a thick sauce.
  • Place the pork chops in a zip-lock plastic bag, then pour the onion sauce over them.
  • Zip up the plastic bag and let the meat marinate for 1 hour.
  • When the time's up, heat the vegetable oil in a skillet.
  • Cook the pork chops for 2 to 3 minutes on one side, then flip them and pour the marinade into the skillet.
  • Cook until the chops are golden brown on the other side. Make sure no pink juices remain.
  • Make a salad with lettuce, fresh mint, fresh basil, parsley, chili, dried apricots, spring onion, broccoli sprouts. Drizzle some olive oil on it, then mix.
  • Serve the pork chops with fresh salad.

Very tasty sauce to place on your pork chops. The original recipe (from Cooking Pleasures magazine) calls for shallots and whole-grain Dijon mustard for the first mustard, and smooth Dijon for the second use. I'm not that fancy, and just used smooth. I'm also not that smart; the original recipe called for 2 T plus 2 tsp. mustard, but I misread, and used 2 T both times, and it came out very tasty. You may want to adjust according to your tastes.

4 thick-cut boneless pork chops
3/4 teaspoon salt, divided
1/4 teaspoon pepper, divided
4 tablespoons canola oil, divided, more as needed
3/4 cup onion, thinly sliced
7 tablespoons cider vinegar, divided
4 tablespoons Dijon mustard, divided
2 tablespoons water

Steps:

  • Sprinkle pork with 1/4 t. salt and 1/8 t. pepper. Heat large skillet over medium heat until hot. Add 1 T oil, heat until hot.
  • Add pork, cook 10-12 minutes or until slightly pink in center, turning once. Place on platter, cover loosely with foil.
  • Add onions to same skillet, adding additional oil if skillet is dry. Cook over medium heat 2-3 minutes, stirring frequently.
  • Reduce heat to low, stir in 5 T of vinegar, 2 T mustard, 1/2 t. salt, and 1/8 t. pepper. Simmer 30-60 seconds, or until vinegar evaporates.
  • Remove from heat, cool slightly. Whisk in 3 T oil, water, 2 T mustard (less if preferred), and 2 T vinegar. Serve sauce over pork.

2 tablespoons all-purpose flour
Kosher salt and freshly ground pepper
3 tablespoons extra-virgin olive oil
2 bell peppers (1 green, 1 red), thinly sliced
1 large onion, thinly sliced
4 cloves garlic (2 chopped, 2 grated)
2 pepperoncini, chopped, plus 2 tablespoons of the brine
1 cup low-sodium chicken broth
4 tablespoons unsalted butter, at room temperature
1 loaf Italian bread, split lengthwise
2 tablespoons roughly chopped fresh parsley

Steps:

  • Dust the pork chops on both sides with the flour; season with salt and pepper. Heat 2 tablespoons olive oil in a large skillet over high heat. Add the pork chops and cook until golden brown, 4 minutes. Flip; cook until lightly golden on the other side, 2 more minutes. Remove to a plate.
  • Reduce the heat to medium high; heat the remaining 1 tablespoon olive oil in the skillet. Add the bell peppers, onion, chopped garlic, pepperoncini, 1/2 teaspoon salt and a few grinds of pepper. Steps:

  • Saute the onion and garlic in olive oil until onions are tender. Add onions to barbeque sauce and stir well.

1/2 cup dry white wine
1/4 cup whipping cream
2 tablespoons honey mustard

Steps:

3 tablespoons butter
1 onion, sliced thin
1 cup white wine
4 cups applesauce

Steps:

  • Season pork chops with salt and pepper.
  • Place a large skillet over medium-high heat. Lay seasoned pork chops into the hot skillet. In the spaces between the chops, add the butter and onions. Cook and stir the onions while the first side of the chops cook until browned, 5 to 7 minutes. Turn the chops and continue cooking until the no longer pink in the center, 5 to 7 minutes more. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
  • Pour white wine into the skillet; bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Stir applesauce through the onion and wine mixture; simmer until the liquid thickens somewhat, about 5 minutes.
