Black Beans and Rice with Adobo Pork Chops Recipe image

Black beans and rice is a classic Latin American dinner. It is popular to serve with pan seared pork chops or chuletas The pork uses adobo seasoning and the beans have a combination of sofrito and recaito for a truly authentic meal popular in Cuba and many other Latin countries including my home country of Panama.

1 cup long grain white rice
1 3/4 cup water
1/2 tsp. Kosher salt
3/4 Tbsp. olive oil
30 oz black beans (2 cans, drained and rinsed)
2 slices bacon (diced)
½ cup onion (chopped fine)
2 Tbsp recaito
2 Tbsp sofrito
1 tsp cumin
½ tsp oregano (dried)
½ tsp chili powder
1.5 cups water
8 pork chops (small and thinly sliced)
1 Tbsp adobo
1 Tbsp canola oil

Steps:

  • In a sauce pan on medium heat cooked the diced bacon until just about crispy on the edges.
  • Add the onion and cook until translucent, stirring frequently.
  • Add the recaito and sofrito then continue to sauté and stir until fragrant. About 1 minute. Stir in the black bean until well combined.
  • Add the cumin, oregano, chili powder and just enough water to cover the beans. (Approximately 1.5 cups.) Turn the heat to low and simmer for another 5 minutes stirring occasionally. Simmer until the sauce thickens and add salt to taste.
  • After 5 minutes you can turn off the heat and keep covered until ready to serve.
  • If using a rice cooker, follow rice cooker instructions. Be sure to rinse the rice.
  • Place pork chops in a rectangular Pyrex dish and sprinkle evenly on both sides with the adobo seasoning. Let them sit for about 5 minutes.
  • Cook on a hot skillet for about 2 minutes on each side, until they are brown. They should reach an internal temperature of 145° F.
  • *You can serve the dish with lime wedges, they are a nice accent to the pork.
  • Omit the bacon and onions then place the black beans, sofrito, recaito, cumin, oregano, chili powder in a microwave safe bowl.
  • Add enough water to cover the beans. Microwave on high power for 2 minutes. Set aside for 5 minutes covered. Uncover and stir when ready to serve.

1/4 teaspoon salt
1/4 teaspoon pepper
3 cups frozen cut green beans (from 1-pound bag), thawed
1 can (10 3/4 ounces) condensed cream of celery soup
1 cup shredded Swiss cheese (4 ounces)
1/3 cup milk
2 tablespoons chopped pimientos
1 can (2.8 ounces) French-fried onions

Steps:

  • Heat oven to 350°. Spray square baking dish, 8x8x2 inches, with cooking spray. Trim fat from pork if necessary. Sprinkle both sides of pork with salt and pepper.
  • Spray 10-inch nonstick skillet with cooking spray; heat over medium-high heat. Cook pork in skillet about 10 minutes, turning once, until brown. Place in baking dish.
  • Mix remaining ingredients except onions in medium bowl. Spread over pork chops.
  • Bake uncovered about 50 minutes or until mixture is bubbly. Sprinkle onions over casserole. Bake uncovered 5 minutes.

Growing up, this was a staple in my home. This is a great recipe because the pork and rice cook in the same dish. The rice is flavorful and the pork chops come out nice and tender.

2 tablespoons butter
1 onion, diced
1 pinch seasoned salt, or to taste
6 thin bone-in pork chops
1 (14 ounce) can beef consomme
10 fluid ounces water
1 ½ cups white rice

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Melt butter in a large skillet over medium heat; cook and stir onion until golden brown, 15 to 20 minutes. Transfer onion to a plate.
  • Sprinkle seasoned salt over all sides of each pork chop. Place pork chops in the same large skillet and cook until browned, 1 to 2 minutes per side.

1 tablespoon olive oil
1 (15 ounce) can black beans, with liquid

  • Season pork chops with pepper.

2 tablespoons apricot jam
4 center-cut pork loin chops, bone in (About 1 Lb.)
1 1/2 cups Minute Rice, uncooked
2 cups green beans, trimmed
1 1/2 cups chicken broth

Steps:

  • Preheat BBQ to medium high heat.
  • Mix dressing and jam with wire whisk until well blended.
  • Brush 2 tablespoons dressing mixture on chops. Let stand 10 minute.
  • Place rice in centre sheet of heavy duty aluminum foil; top with beans.
  • Bring up foil sides to form a bowl. Gradually pour chicken broth and remaining dressing mixture over beans.
  • Double fold top ends to seal packet, leaving room for heat circulation inside.
  • Place chops and foil packet on grate of bbq.
  • Grill packet for 15 min or until most of the liquid has been absorbed.
  • Let stand 5 minute.
  • Grill chops 20 min or until cooked through.

2 tsp. oil, divided
8 boneless pork chops (2 lb.), 3/4 inch thick
1/4 cup KRAFT Honey Mustard Dressing
1 small green pepper, chopped
1 small onion, chopped
2 cloves garlic, minced
1-1/2 cups long-grain white rice, uncooked
1/4 cup raisins
1/2 tsp. ground cumin
2 slices OSCAR MAYER Bacon, cooked

Steps:

  • Drain beans, reserving liquid. Pour reserved liquid into 1-qt. measuring cup. Add enough water to reserved liquid to measure 3 cups.
  • Heat 1 tsp. oil in large skillet on medium heat. Add 4 chops; cook 4 min. on each side or until done (145°F). Remove chops from skillet; cover to keep warm. Repeat with remaining oil and chops.

1 green bell pepper, diced

1 8-ounce can tomato sauce
1 cup converted (parboiled, not instant) white rice
1 15-ounce can black beans (not drained or rinsed)
8 thin boneless or bone-in pork chops (2 to 2 3/4 pounds)
1 tablespoon apple cider vinegar

Steps:

  • Preheat the broiler. Heat the olive oil in a medium pot over medium-high heat. Add the bell pepper, onion, garlic, cumin, salt and pepper and cook until slightly soft, about 3 minutes. Add the tomato sauce and 1/2 cup water and bring to a simmer.
  • Set aside about half of the tomato sauce mixture in a bowl. Add 3/4 cup more water and the rice to the pot and bring to a boil. Add the beans and their liquid, stir and reduce the heat to low.
