A simple and, in my opinion, authentic version, this recipe comes down at least 3 or 4 generations of my family. You will know it's done when the sauce has a medium thickness. Remember, the longer it cooks, the better it will taste. You can serve smothered over burritos or with warm tortillas, beans and/or fried potatoes. Also delicious with fried eggs (Huevos rancheros). Substitute 4 or 5 chopped roasted chiles for green chiles and jalapenos if you prefer.

2 tablespoons vegetable oil
1 ½ pounds cubed pork stew meat
2 tablespoons all-purpose flour
1 (4.5 ounce) can diced green chile peppers, drained
½ (3.5 ounce) can chopped jalapeno peppers
½ medium onion, chopped
5 tablespoons tomato sauce
3 ½ cups water
onion salt to taste
garlic salt to taste
salt and black pepper to taste

Steps:

  • Heat oil in a large cast iron skillet over medium-high heat. Stir in cubed pork, and cook until nicely browned and cooked through, about 15 minutes. Remove skillet from heat, and allow to cool briefly.
  • Sprinkle flour over pork. With a wooden spoon, stir pork to coat, scraping the bottom of the skillet to loosen browned bits. Add chile peppers, jalapenos, and onions. Stir in tomato sauce and water. Season to taste with onion salt, garlic salt, and salt and pepper.
  • Return skillet to medium heat. Bring to a simmer, cover, and cook 30 minutes, stirring occasionally. Remove cover, and cook 10 minutes more.

PORK GREEN CHILI (COLORADO STYLE)

A classic Colorado green chili, with green chiles, tomatoes and thickened with flour.

Number Of Ingredients 16

2 lbs pork roast
4 tbsp olive oil
8 cups chicken broth (or 4 cans)
2 cups water
2 cups chopped onion
8 cloves garlic, pressed
½ lb tomatillos (about 8 medium), chopped
1-2 serrano chiles, minced
1 14.5 oz can diced tomatoes with juice
2 cups mild diced green chiles
1 cup hot diced green chiles
1½ tbsp ground cumin
½ tsp oregano
½ tsp cayenne pepper
1 cup flour
salt & pepper to taste

Steps:

  • Cut the pork roast in half (to sear more of the surface) and smear with 2 tbsp olive oil. Generously sprinkle salt and fresh ground pepper on all sides. Sear on medium high heat.
  • Put in a crockpot, add the chicken broth and water, and cook on high for 1 hour. Reduce heat to low and cook another 2-3 hours.
  • Meanwhile, sauté onion, garlic, tomatillo, and serrano in 2 tbsp olive oil. Puree 1 cup mild green chiles with ½ cup of the liquid from the crockpot. Set aside.
  • When done (after 3 hours of cooking), fish the pork out of the crockpot and set aside to cool for 15 minutes. Take 3 cups of the broth from the crockpot and set aside to cool for 15 minutes.
  • Meanwhile, add the onion mixture, spices, tomatoes, and all the green chiles (including pureed).
  • Gradually add the broth to the flour, stirring constantly to ensure no lumps. Then pour the flour mixture into the crockpot gradually, stirring constantly to blend in.
  • Shred the pork with a fork and add to crockpot. Cook on low for another hour, stirring occasionally.
  • Serve with tortillas or use as a sauce over eggs, burritos, or whatever!

12 ounces pineapple juice
1/4 cup olive oil
3 ounces soy sauce
2 tablespoons dry jerk seasoning
2 tablespoons molasses
1 teaspoon granulated onion
2 fresh jalapenos, seeded and medium diced
1 roasted, peeled, seeded poblano, rough chopped
Four 6-ounce butterflied pork chops, pounded with the tenderizing side of a meat mallet
8 ounces mayonnaise, preferably Duke's
3 ounces Jamaican or other sweet pepper relish
4 slices fresh pineapple
8 slices Swiss cheese
4 good brioche buns, toasted
4 ounces arugula

Steps:

  • For the marinade: Mix pineapple juice, olive oil, soy sauce, jerk seasoning, molasses, granulated onion, jalapenos and poblano together in a gallon resealable plastic bag. Add tenderized pork and refrigerate for at least 6 hours or up to 24 hours.
  • For the sandwiches: Mix mayo and Jamaican relish in a bowl.
  • Preheat a flat top or griddle on medium-high heat and put on pork to get a good sear, about 2 minutes. Flip and sear the other side, 2 minutes. Don't forget to put some of the peppers from the marinade and the pineapple on to caramelize, 2 to 3 minutes. Melt Swiss cheese on pork!
  • Spread buns with Jamaican mayo on tops and bottoms, then add pork and Swiss cheese, caramelized pineapple and peppers and arugula. Close buns for green chile pork sandwiches!

GREEN CHILE STEW WITH PORK

Pueblo tradition calls for the addition of corn or potatoes to this dish. It makes a wonderful filling for enchiladas. Serve with a big green salad and a pile of wheat tortillas.

3 tablespoons peanut oil
3 stalks celery, chopped
2 tomatoes, chopped
7 green chile peppers, chopped
4 cloves crushed garlic
4 cups chicken broth
1 (10 ounce) jar prepared green chile salsa
salt to taste

Steps:

  • In a large skillet over medium high heat, brown the pork in oil, doing so in 2 to 3 batches.
  • Place the meat in 3 to 4-quart covered casserole and add celery, tomatoes, chilies, and garlic.
  • Add about 1 cup chicken broth or water to skillet pork was cooked in, stirring over high heat to scrape up browned bits on bottom and bring to boil. Add to pot with enough additional water or broth to barely cover the ingredients. Cover and simmer until stew is thick and meat very tender, about 1 1/2 hours. Add salt to taste before serving. If stew is not hot enough, add a bit of jalapeno salsa.

1 jar (20 ounces) thick-and-chunky salsa

1 can (15 ounces) garbanzo beans, rinsed and drained
1 medium onion, chopped (1/2 cup)
1 cup chicken broth
3 teaspoons chili powder
3 teaspoons dried cilantro leaves, if desired

Steps:

  • Mix all ingredients in 3 1/2- to 4-quart slow cooker.
  • Cover and cook on low heat setting at least 6 to 7 hours, or until pork is tender.

It's been shared with many of our friends, and over time, Bill (DH) has taken over the recipe and declared it to be his specialty. The recipe is very forgiving, so please feel free to increase/decrease amounts to your liking. It also freezes well.

1 lb ground pork or 1 lb ground turkey
1 small onion, chopped
2 -4 garlic cloves, chopped
2 (10 1/2 ounce) cans cream of chicken soup
1 cup chopped green chili
black pepper
tortilla chips, to serve

Steps:

  • Brown ground pork in a large skillet. Drain.
  • Saute onion, add in browned pork. Add remaining ingredients and simmer 1 hour. Add water in needed to achieve desired consistency, but the dip should be rather thick.
  • Serve hot with tortilla chips. A small crock pot works well for serving.

My favorite chili is chile verde. I just love the taste of the green chiles. This is an easier version than many for this stew and is ideal for the crockpot! Recipe is from a book of favorite crockpot recipes.

1 1/2 lbs boneless pork shoulder, cut in 1-inch cubes
2 medium baking potatoes, peeled and cut in 1-inch cubes
1 cup onion, chopped
1 (4 ounce) can green chilies, diced (or use 7-oz. can, to taste)
1 cup corn kernels, fresh or 1 cup corn kernel, frozen
2 teaspoons sugar
2 teaspoons ground cumin or 2 teaspoons chili powder
1 (18 ounce) jar salsa verde
hot cooked rice
1/4 cup fresh cilantro, chopped

Steps:

  • In a 3-1/2 quart crockpot, combine the pork, potatoes, onions, green chiles, and corn kernels.
  • In a bowl, combine the sugar, cumin or chili powder, oregano and salsa verde. Mix well to combine and pour over contents of crockpot. Mix entire contents by stirring gently.
  • Cover crockpot and cook until tender on LO heat for 6-8 hours. Or cook on HI heat for 4-5 hours.
  • Serve stew over hot cooked rice and garnish with chopped cilantro.

Steps:

  • Place pork in a 5- or 6-qt. slow cooker. In a small bowl, mix cider, green chiles, garlic, salt, pepper sauce, chili powder, pepper, cumin and oregano; pour over pork. Cook, covered, on low 6-8 hours or until meat is tender., Remove roast; cool slightly. Shred pork with two forks. Return to slow cooker; heat through.
