HERBED PORK ROAST AND CRANBERRY CHUTNEY



Herbed Pork Roast and Cranberry Chutney image

2 tablespoons herbs de Provence
1 tablespoon onion powder
1 tablespoon light brown sugar
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon crushed garlic
2 1/2 pounds pork loin roast, rinsed and patted dry
Salt and freshly ground black pepper
1 (16-ounce) can whole cranberry sauce
1 teaspoon lemon juice
1/4 teaspoon crushed garlic
1 teaspoon herbs de Provence

Steps:

  • Chutney:
  • Preheat oven to 450 degrees F.
  • Pork Roast:
  • In a small bowl, stir together herbs de Provence, onion powder, light brown sugar, olive oil, lemon juice and garlic. Place the pork roast in a shallow roasting pan or baking dish. Season with salt and pepper and then rub with the herb mixture.
  • Place roast in oven and reduce heat to 350 degrees F. Roast for 30 minutes per pound, or until internal temperature reaches 165 degrees F on an instant-read thermometer. (Roast will continue to cook up to 170 degrees F out of the oven.) Remove from oven, cover with foil and let rest for 10 minutes before slicing.
  • Chutney:
  • In a medium bowl, combine all chutney ingredients and stir thoroughly. Cover and set aside until ready to serve.
  • Serve chutney over pork roast.

1 pork tenderloin (1 pound), cut into 1-inch slices
1/8 teaspoon salt
1/8 teaspoon pepper
1/2 cup whole-berry cranberry sauce
2 tablespoons barbecue sauce
1 tablespoon water
2 garlic cloves, minced
1/2 teaspoon Chinese five-spice powder

Steps:

  • Sprinkle pork with salt and pepper. In a large nonstick skillet coated with cooking spray, cook pork in batches over medium heat for 3-5 minutes on each side or until juices run clear. Remove and keep warm., Add the cranberry sauce, barbecue sauce, water, garlic and five-spice powder to the skillet. Bring to a boil. Reduce heat; simmer, uncovered, for 1-2 minutes or until thickened. Serve with pork.

1 pork tenderloin (about 1 pound), cut into 1/2-inch slices
3 tablespoons olive oil
1 medium onion, finely chopped
1 garlic clove, minced
3 tablespoons sugar
3/4 cup apple juice
1/2 cup cranberry juice
1/2 cup fresh or frozen cranberries, thawed
2 teaspoons Dijon mustard
1/2 teaspoon minced fresh rosemary or 1/8 teaspoon dried rosemary, crushed
Additional cranberries and fresh rosemary, optional

Steps:

  • In a large nonstick skillet, brown pork in oil for 3-4 minutes on each side. Remove and set aside. , In the same skillet, saute the onion, garlic and sugar until onion is caramelized and tender. Stir in the apple juice, cranberry juice, cranberries, mustard and rosemary. Bring to a boil. Reduce heat; simmer, uncovered, for 5-6 minutes or until sauce is reduced by half., Return pork to pan; heat through. Sprinkle with additional cranberries and rosemary if desired.

1 pork tenderloin, cut into 1/2 inch slices (about 1lb)
3 tablespoons olive oil
1 medium onion, finely chopped

1/2 cup Walnut Pieces- Recipe Ready
1/2 cup apple juice or apple cider
1/4 cup dried cranberries
2 Tbsp packed brown sugar
1/4 teaspoon dried rosemary, crushed
1/4 teaspoon salt
1/8 teaspoon ground black pepper
12 oz pork tenderloin
1/4 teaspoon salt-free herb seasoning
Hot cooked brown or long grain rice

Steps:

  • For Chutney: In a small heavy saucepan, stir together cranberry sauce, Walnut Pieces, apple juice, dried cranberries, sugar, rosemary, salt and pepper. Bring to a boil. Reduce heat. Simmer, uncovered, for 5 to 8 minutes or until chutney reached desired consistency, stirring occasionally. Set aside.
  • Pork Prep: Trim any fat from pork. Cut crosswise into 12 pieces, about 1 inch thick. Flatten each piece to an even thickness using the palm of your hand. Sprinkle herb seasoning evenly over pork. Coat an unheated large nonstick skillet with nonstick cooking spray. Preheat over medium-high heat. Cook pork in hot skillet for 2 to 3 minutes or until pork is slightly pink in center and juices run clear, turning once halfway through cooking time.
  • Serve pork medallions over hot cooked rice, if desired. Spoon some of the warm chutney over pork.

3 tablespoons unsalted butter, divided
2 large shallots, thinly sliced
1/4 cup sherry vinegar
1/4 cup dark-brown sugar
1 1/2 cups blackberries
Salt and pepper
1 pork tenderloin (1 1/2 pounds), cut into 1-inch slices and flattened slightly with your palm

Steps:

  • In a small saucepan, melt 1 tablespoon butter over medium. Saute shallots until tender, 8 minutes. Add vinegar, brown sugar, and blackberries and cook until mixture is syrupy and some of the berries have collapsed, 10 minutes. Season with salt and pepper.

1 tablespoon Dijon mustard
1 (6 ounce) package seasoned stuffing mix (for Chicken)
1/3 cup dried cranberries
1 tablespoon butter or 1 tablespoon margarine
water (to prepare stuffing mix)

Steps:

  • CUT each tenderloin crosswise into 6 slices.
  • Pound meat slices, cut-sides up, with meat mallet to 1/2-inch thickness. Add to large nonstick skillet sprayed with cooking spray. Cook on medium-high heat 3 minute on each side or until browned on both sides. Reduce heat to low.
  • COMBINE dressing and mustard; pour over meat. Continue cooking 3 minute on each side or until meat is cooked through and sauce is thickened.
  • Meanwhile, prepare stuffing as directed on package, but reduce butter or margarine to 1 tablespoons and add cranberries to the water along with the stuffing mix.
