PORK PILEAU



Pork Pileau image

This is a variation on the Southern dish pileau (perlow, perloo, I hate when these spellings are used) that is usually made with chicken and sausage. This not a bog. Bogs are sticky and gooey, a pileau is made where the rice grains can be counted. You southerners who love pileau, will appreciate this. This can be made with any meat you wish. This is not a dish to be eaten often. I make it about every 3 months.

1 lb boston butt, shredded
1 lb pig's foot, cut into pieces
1 lb pigs tail, cut into pieces
1 lb pork neck bones
1 lb smoked sausage, sliced diagonally
1 1/2 cups long grain rice (I use Uncle Ben's)
1 teaspoon salt
1/2 teaspoon pepper
1 large onion, chopped
1 large bell pepper, chopped
2 (14 1/2 ounce) beef broth
1 teaspoon Kitchen Bouquet

Steps:

  • Brown all meats in a Dutch oven (or if you have a slow cooker that browns,use it. After browning all meats, place in slow cooker/crockpot with water to cover meat. Slow cook for 8 hours or until meat is falling off the bones. (I usually do this the day before I make the dish.) Let the meat cool. Remove all meat from the bones and chop into pieces. I remove as much fat as possible.
  • Remove juices from the pot, set aside. Slice sausage and chop vegetables. Saute sausage and peppers in pot, add rice and 1 cup of the reserved juice. Coat rice well with vegetables and juice. Add all meat back to pot, combine all ingredients well.Pour in two cans of beef broth. Add Kitchen Bouquet to your desired browness. Stir well. Cook until rice is tender about 45 minutes.
  • NOTE: This is kind of greasy.

Pelau is a stew from Trinidad made with either beef or chicken. The unique flavor comes from searing the meat in caramelized sugar then simmering with rice, coconut milk, and pigeon peas. Serve accompanied by slices of tomato, avocadoes, or cucumber.

1 pound beef for stew, cut in 1 inch pieces
1 ½ cups water
1 ½ cups uncooked brown rice
1 cup coconut milk
2 cups fresh pigeon peas
1 cup chopped carrot
3 tablespoons coarsely chopped fresh parsley

Steps:

  • Cook sugar in a large saucepan over medium heat until it begins to caramelize. Stir in the beef, and cook until well browned. Bring the water, coconut milk, rice, pigeon peas, and carrot to a simmer; cover and cook until rice is done, about 25 minutes. Stir in parsley to garnish.

I received this recipe from my mother years ago, and it's been a family favorite ever since. Pork sausage really bulks up ordinary rice pilaf for fantastic flavor.

1/2 pound bulk pork sausage
1 cup chopped celery
1/2 cup chopped onion
1/2 cup chopped green pepper
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1-1/4 cups milk
1 jar (2 ounces) diced pimientos, drained
1/2 cup uncooked long grain rice
1/2 teaspoon poultry seasoning
1/4 teaspoon salt
1 cup soft bread crumbs
2 tablespoons butter, melted

Steps:

  • In a skillet, cook sausage, celery, onion and green pepper until sausage is no longer pink and vegetables are tender; drain. stir in soup, milk, pimientos, rice, poultry seasoning and salt. , Pour into an ungreased 1-1/2-qt. baking dish. Cover and bake at 350° for 50 minutes, stirring occasionally. , Combine bread crumbs and butter; sprinkle on top. Bake, uncovered, 20 minutes more.

Steps:

  • In a large skillet, saute rice mix in butter until golden brown. Stir in water and contents of rice seasoning packet. Bring to a boil. Reduce heat; cover and simmer for 15 minutes. Stir in peas, water chestnuts, marmalade and pepper. Cover and cook for 3-4 minutes or until rice and vegetables are tender.

1 cup uncooked regular long-grain rice

Steps:

  • In 3-quart saucepan, melt butter over medium heat. Cook onion in butter about 3 minutes, stirring occasionally, until tender.
  • Stir in rice. Cook 5 minutes, stirring frequently. Stir in broth and salt.
  • Heat to boiling, stirring once or twice; reduce heat to low. Cover and simmer 16 minutes (do not lift cover or stir); remove from heat. Let stand covered 5 minutes.

Keep the washing-up down to an absolute minimum with this one-pot supper - you can even eat it out of the cooking dish!

1 tsp sunflower oil
1 small onion, chopped
1 large or 2 small boneless, skinless chicken thigh fillets, cut into chunks
2 tsp curry paste (choose your favourite)
a third of a mug basmati rice
two-thirds of a mug chicken stock
1 mug frozen mixed vegetables
half a mug frozen leaf spinach

Steps:

  • Heat the oil in a frying pan, then fry the onion for 5-6 mins until softened. Add the chicken pieces, fry for a further couple of mins just to colour the outside, then stir in curry paste and rice. Cook for another min.
  • Pour in the chicken stock and throw in any larger bits of frozen veg. Bring to the boil, lower the heat, then cover the pan with a lid. Cook for 10 mins, then stir in the remaining veg. Scatter over the spinach, cover, then cook for 10 mins more until all the stock is absorbed and the rice is tender. Give everything a good stir, season to taste, then tuck in.

¼ cup vegetable oil, or palm oil, divided, plus 1 tablespoon
1 lb boneless chicken breast, or thighs, pork, beef or tofu, cut into 1 in cubes
1 medium yellow onion, diced
2 cloves garlic, minced
1 cup creamy peanut butter
1 tablespoon kosher salt
1 tablespoon paprika
1 tablespoon adobo seasoning
1 teaspoon black pepper
½ teaspoon cayenne pepper
2 cups tomato sauce
2 cups water
2 cups pumpkin, or butternut squash, cut into 1 in (2.5 cm) pieces
1 baking potato, cut into 1 in (2.5 cm) pieces
1 large carrot, sliced into 1/4 in (6 mm) rounds
1 habanero pepper
jasmine rice, for serving

Steps:

  • Heat 1 tablespoon vegetable oil in a large Dutch oven over medium-high heat until shimmering. Add the chicken and brown on all sides, 8-10 minutes. Remove from the pot and set aside.
  • Add the onion and garlic to the pot and cook for 4-6 minutes, until softened and the onion is translucent and the garlic is beginning to brown.
  • Stir in the peanut butter until melted, about 1 minute.
  • Add the salt, paprika, adobo seasoning, black pepper, cayenne pepper, remaining ¼ cup vegetable oil and tomato sauce. Mix well to combine with the peanut butter.
  • Add the water, pumpkin, potato, carrot, the browned chicken, and the habanero and stir to combine. Cover the pot, reduce the heat to medium, and cook for 10 minutes. Stir, then reduce the heat to low and cook for 35 minutes more, until the vegetables are tender and the stew is thickened.
  • Remove the pot from the heat and remove the habanero pepper.
  • Serve the stew hot over jasmine rice.
  • Enjoy!
