1 tablespoon fresh lemon juice
1 tablespoon Dijon mustard
3 tablespoons olive oil
1/4 teaspoon kosher salt
1/8 teaspoon black pepper
1 1/2 lbs asparagus
1 shallot, thinly sliced

Steps:

  • In a large bowl, whisk together all ingredients except for asparagus and thinly sliced shallot. Set aside.
  • Bring a large pot of generously salted water to a boil.
  • Cook whole, trimmed asparagus spears until fork-tender, about 4 minutes; drain.
  • Add asparagus to the bowl, along with 1 thinly sliced shallot. Toss to coat.

Pork Skewers With Lemon and Saffron - 4 Ww Points image

These skewers are a tapa dish, or little dishes that are served throughout Spain. They make a great light lunch or great addition to dinner. You can substitute cubes of chicken or lamb for the pork, if you prefer. I did not include the marinating time. Enjoy!

1/2 small onion, thinly sliced
2 garlic cloves, minced
2 tablespoons fresh parsley, chopped
1 tablespoon cilantro, chopped (optional)
1 tablespoon fresh lemon juice
2 teaspoons olive oil
1 teaspoon paprika
1/2 teaspoon ground coriander
1/4 teaspoon saffron thread, crushed
1 lb pork tenderloin, trimmed and cut into 1-inch cubes
1/2 teaspoon salt

Steps:

  • To make the marinade, combine all ingredients except the pork and the salt in a ziploc plastic bag; add the pork. Squeeze out the air and seal the bag; turn to coat the pork. Refrigerate, turning the bag occasionally, at least 8 hours or up to 24 hours.
  • Spray the broiler rack with olive oil nonstick spray and preheat the broiler.
  • Thread 5 pieces of pork onto each of 5 metal skewers (if using wooden skewers, soak them in warm water for about 30 minutes); sprinkle with salt. Place the skewers on the broiler rack. Broil 5 inches from the heat until browned and cooked through, about 4 minutes on each side. You can also barbeque these if you prefer.
